No Carb Left Behind

Hi friends 🙂 It’s Indian Food Wednesday! It’s been a while since I’ve celebrated –a sour dosa will traumatize you, let me tell ya- but I have a fun dinner in store.

Before I get into the usual shenanigans, the winner of the Live Well Core Bag is Kayla, whom I’ve already emailed to share the great news 🙂 Congrats, Kayla!

Last night, I had dinner with a friend at BJs. Instead of my usual blackened salmon salad, I decided to give the gluten-free pizza a whirl.

You know in Eat, Pray, Love, when she slowly and passionately devours an entire pizza? That was me last night 😉

I definitely had a relationship with my pizza. It was short-lived, but glorious.

This morning, I met up with work friends for a spin class. It was mediocre, but the instructor was hilarious. He was so cute and little, but I didn’t appreciate the fact that he sang the entire time. He even used song lyrics to instruct the class:

-Song says: There’s nooooooo holding back

-Instructor says: No holding back now! You can do it

-Song says: Just reeeeeeach in your heart

-Instructor says: Reach in your heart and go for it!

I die. A thousand times.

The star of the show was THIS:

smoked salmon

Wild smoked salmon, which will always remind me of the Bahamas- I had smoked salmon every single day we were there 🙂

I took two pieces of brown rice toast and spread goat cheese on each slice, topped with 2 egg whites, a serving of smoked salmon, arugula, sea salt and Garlic Gold

After using organic butter to butter the outside of the toast, I pan-seared each side — the toast got crispy and the cheese melted

Well I’m going to go back to sleep for an hour or so- I’m exhausted this morning! Bella is already in bed waiting for me 🙂

    I seriously love smoked salmon with goat cheese and chives. I could eat it every day and not get sick of it! Since I now happily down and devour garlic gold, it’ll have to become part of the mix, along with egg whites..ahh this looks so good 🙂

    I often have a relationship with my pizza but I have to agree that that scene is classic and perfect! Good food should be savored! ha. Too funny about your instructor! I probably would have laughed pretty hard OR left the class as singing along to songs is a bit of my pet peeve (unless I am singing of course!)

    That always drives me crazy when instructors do that!

    And NYE plans are just to chill with a group of friends at their house. Although I would rather spend it in the hospital…bec that would mean I had finally given birth!

    I had pizza last night too. There was definitely a little fling going on, but I’ve had better. I don’t settle when it comes to my pizza 🙂 LOVE that Eat Pray Love clip. I didn’t like the book and never saw the movie as a result, but I’m kind of obsessed with her philosophy. Might be worth seeing the movie, just for that!!

    That sandwich is my dream sandwich too! It looks so delicious! I made something similar last week with the Trader Joe’s goat cheese with cranberries!

    I can’t do any spin classes at my gym because the instructors are way too cheesy or not motivating- the guy instructor sings along too! It’s a bit annoying.
    Yesterday morning my boyfriend told me to plan on going out of town tomorrow night, but didn’t tell me where we’re going. I think he’s planned out a weekend in San Francisco for us!

    I love salmon so much. It’s crazy, if i weren’t worried about mercury i would eat it for every meal.

    Last night on cupcake wars i almost died because one baker made a salmon inspired one! Sounds kinda gross, but i was fascinated with it!

    I need spin in my life again! 🙁

    Carbs if I’m not careful can be my downfall, lol! Oh spin classes can be so hit or miss. I did take one yesterday with one my favs who I hadn’t taken a class with in a while…you know those one that really do inspire you to push harder. Boy do I feel it today…its glorious!

    New Years Eve is a good friend of mines birthday…so we will be doubly celebrating…maybe I should doubly workout that day! 😛

    That breakfast totally looks yummy– without the salmon for me, that is. My favorite combo with eggs recently is a bowl of warm oat bran topped with a runny egg, hummus, goat cheese and basil. Yum 🙂

    I feel like I’m on that tour EVERY day. but I’ve stopped worrying about it. Diets went through the no-carb Atkins phase. We know now how great fats are and I am unashamed to eat a ton of avocado or hummus: why shouldn’t I feel the same way to eat a ton of carbs?

    ahh pizza is a huge love of mine. Ever since coming home from college (where the pizza is yucky) i have been eating my weight in veggie pizza. no complaints though. carbs = fuel for our lovely hardworking bodies! haha

    Smoked salmon…Scott would be in heaven. That boy loves his lox!

    Was it a Les Mills RPM spin class? I used to take those and the instructors ALWAYS said cheesy stuff to the lyrics… it was awful! Your salmon sammy looks amazing!!!
