Slow cooker detox chicken

Hi friends! How’s the day going? It’s been a great one over here, most of it is attributed to the fact that it’s warm and glorious.

Our little detox is going well for the most part – I’ve already cheated and had half-caf coffee twice because of the bedtime battles we’ve been experiencing – and this salad was almost pure leftovers from dinners. One of my favorite things about having lots of roasted veggies, protein, and homemade dressing on hand is that it’s so easy to put together a delicious and satisfying salad. Greens on the bottom, roasted veg on top, chicken, balsamic dressing, and lunch is served. When we have a ton of options to choose from, it’s so much easier for me to get quality produce and protein (aka eat like a PRO).

Slow Cooker Detox Chicken

Here’s what I did for the chicken last night! It was so quick to put together and turned out awesome. The family loved it!

Also don’t let the name of this post fool ya. There’s nothing particularly detoxifying about this chicken. I made it in the slow cooker (an Instant Pot would probably work, too), and we ate it during out detox, haha.

At the bottom of the slow cooker, I added one large sweet onion (rough chopped), 4 carrots (peeled and rough chopped), and one bag of peeled and cubed butternut squash from Trader Joe’s. The veggies got a quick salt and pepper shower.

I cleaned out the chicken (organic whole chicken, also from TJ’s), and patted it dry before placing it on the top of the veg. Inside the chicken, I added one halved meyer lemon, one head of garlic (cut in half lengthwise), and a palmful of fresh thyme. You could throw in a bay leaf, too. To season the outside of the chicken, I used salt, pepper, smoked paprika (LOTS), garlic powder, and a bit of onion powder. Two little cuts of butter went on top, and it cooked for 4 1/2 hours on high (and was falling off the bone). The veggies were so beautifully seasoned from cooking in the chicken broth; served with roasted garlic broccoli, it was an awesome dinner.

If you have leftover chicken, you can shred the chicken and make a “detox soup” with nourishing bone broth, veggies, and herbs. I have a feeling you’ll absolutely love this recipe – let me know what you think!

    So funny… I have a simple crockpot chicken cookin away as we speak! I prepped it last night (like 5min–WOOOO!), and threw it on low this morning before heading off to work. GENIUS!

    I never cook whole chicken for fear of under/over cooking in the oven (several failed attempts in the past). Enter crockpot. Life.Changer.

    I’m never thrilled with how skin-on chicken comes out in the slow cooker. It always looks gray. Do you just discard the skin? I guess I should stop expecting it to come out like a roasted chicken.

    No matter how hard I try, I cannot get into sweet potatoes. Except the candied yam sort – I can do that all. day. long. And why is eating healthy so darn expensive?! I know why, of course but geeza. Frustrating as heck. Processed food should be heavily taxed and expensive, as a penalty and deterrent for eating crap. Can I get an amen? 😉

    I’m now reading Big Little Lies because we read The Husband’s Secret for my book club last month and I enjoy her writing. Yep, I’m in a book club. Sounds super nerdy but it’s full of awesome women and we all enjoy wine and talk about life and books.

    Have you read Still Alice? It’s a movie coming out soon but the book is supposed to be great.
