The Original Breakfast Cookie

The original protein breakfast cookie. This is a delicious and healthy make-ahead breakfast recipe that tastes just like dessert! The oats absorb the milk and soften overnight, so the next morning, you can grab a spoon and enjoy. Add your favorite protein powder and customize with mix-ins of choice!

Here is the breakfast cookie how-to I’ve been promising:

In a small bowl, add 1/3 cup oats, 1 tbs nut butter of choice (I used raw almond) and 1/2 scoop protein powder (you can use chocolate or vanilla!)

Stir to combine and use the spoon to break up the nut butter until you have a nice crumbly mixture.

Add 1/8-1/4 cup milk of your choice (For me, unsweetened vanilla almond milk) and mix until fully moistened

Next, add in 1/2 mashed banana and stir well

Now the fun part- pick the mix-ins! You can get creative with this one– I’ve tried banana, raisins, pumpkin, chocolate chips, ground espresso beans… add anything you like 😀

Stir in your mix-ins of choice and season with a little cinnamon and/or vanilla

Plop the mixture onto an appetizer-sized plate and with the back of your spoon, flatten it into a round shape with equal thickness throughout

Put the cookie in the fridge overnight. It will harden slightly from the nut butter and the oats will soften from the milk.

I was the pilot’s Media Specialist while he and his sister attended Tolleson Elementary School in Jacksonville, AR. I also work with his mother now.     I am in love with your blog! I was reading Self magazine and saw it in there! I am excited to make the breakfast cookie!
    I am 26 and had two bad car accidents in 2006 and put on 20 pounds. I had always been small and very active with a metabolism to eat what I wanted, healthy or not. Then I was unable to work out or be active at all. Now I feel completly clueless to nutrition or how to eat healthly to lose weight. Fitnessista to the rescue!!!

    Thanks! I am clueless about where to start! I need to be in shape because my husband and I own a clothing store in downtown Anchorage Alaska (yes there is style here beyond parkas and bunny boots :D). I dont feel that I represent the store as well as I should, plus i want to be healthy. I have a Planet Fitness membership (just signed up two weeks ago) and have a cheap elliptical at home. How often should I be on it? It is really hard to lose weight in the winter here, everyone eats comfort food, and you dont really feel like being active. I just dont feel like my self with this extra weight on. I made it a goal to post all my meals and workouts on my facebook so my friends can cheer me on. Also, my husband is really supportive, he runs on the elliptical next to me even though his feet barley fit (he wears a size 17) and he probably feels silly!

      i use a LOT of cinnamon and 5 drops of liquid stevia (about half a pack)

    I had one this morning! I used a mashed banana, oats, dark chocolate dreams peanut butter, some cocoa powder, almond milk and a few almonds on top. It was delicious! It was definately awesome to look forward to it during my workout. Thanks!

    Hey thanks for sharing this! I just made my first one! It’s green lol cause I used greens protein powder but Im sure itll still be good! I put oats, protein powder, kraft all natural PB and half a mashed banana. I wanted to keep it simple for the first one so I can get a taste of what Id like to add in next time.     Thanks for posting this I have been seeing the breakfast cookie on several blogs and have been wanting to try one so bad. I am so glad I came across the recipe on you website. I will be checking out your other recipes too.
    I can’t wait to make this – I have all the ingredients already. However, I use Truvia or Sugar in The Raw. Will either one of these work? I plan to buy Stevia the next time (as soon as the Truvia is gone). Maybe I will make my own sunflower or almond butter for this too. That would be awesome.

    I made the cookie and am OBSESSSSEDDDD. I am a teacher so I am up very early and dont have time to sit and eat. How might I make this cookie portable? Let it sit on wax paper and just fold it up and take it along or make just let it sit in the bottom of a small tuppaware and tote it along? I think I just answered my own question, typical me.

    Hello. I just found your blog and let me just say “Thank you!”. My biggest problem with having Celiacs Disease and being healthy is that I run out of creative ideas, get frustrated, and make poor choices. I am very interested in your breakfast cookie, but Quaker Oats are not actually gluten free. For majority of people they should be fine, but with the severity of my disease, I cannot risk it. Have you ever tried making it with something like Bob’s Red Mill Quick Cooking gluten free oats? Will it come out the same?

    (I cannot wait to make chilis rellenos for breakfast!!!)

    You can also do a quickie kind of version, same ingredients, just put it in the microwave for 30 seconds unsteady of the trudge. If its not hard enough let it sit for a couple of minutes.

    This actually reminds me of a similar recipe for homemade protein bars. We were tired of odd tasting bars, so we made our own. Similar recipe..they were just so hard to stir and then pat out in a pan.

    Hey, I just want to say I LOVE your site! I’m a college student and tend to lose weight when stressed, which has lead to being underweight most of the time. All your recipes are so good and are so packed with protein etc, I’m now up to a healthy BMI with a good percent of fat. I’ve also gained weight from more muscle doing the work outs.
