What’s cookin’?

2 hour kitchen blitz:

making chicken dough

Greek-style quinoa salad (lentils instead of chickpeas)

quinoa salad

stuffed chicken

stuffed chicken

(the same I made for the last baby meal)

and my favorite chocolate chip cookies, which ended up looking like pancakes. Still taste good, though 😉 I’ve had a few kitchen fails lately, including the brownies … I guess it’s bound to happen the more I cook.

I love making meals for friends who just had babies. We’ll have the same thing for dinner and the food is ready and waiting for the Pilot when he gets home from work. I saved him some cookie dough for a pizookie when he gets home, too.

and finally tried my first of the Uber Larabars!

The verdict:

Not too sweet, pleasantly salty and a crunchy texture. As much as I like the original Larabars, I have to be in the mood for a mushy bar. These will be amazing when I want a little crunch- would be excellent on top of yogurt or oats. The nutritional stats are similar to the originals, but the Ubers have a bit more sugar since many have added brown rice syrup and honey.

I’ve spent some time today day working on new stuff for the month of June –I know we’re still in May but there’s a lot to look forward to!- and am starting to put together the Summer Shape Up. I’m off to test out the first workout and then home to get my stuff ready for work tomorrow. Wednesday is a “wind down to the weekend” time for many people, but for me, Wednesday = Monday. It’s nice to have a relaxing Monday and Tuesday with my favorite girl, though 🙂

This is totally random but: did anyone else used to play Oregon Trail when they were younger? The Pilot and I were talking about it last night. Fond memories of computer class, haha. I would always go at a “strenuous pace,” ford the river even if it was too deep, and not stop to rest when Jonathan Taylor Thomas had dysentery. Obviously, I didn’t take it too seriously.

    it looks like you made all sorts of yummy eats today!! those stuffed chicken breasts look delicious. i really like the new uber larabars too… i might have to say that i like them better than the originals. i think the crunch is what i love so much. oh, and i LOVED the oregon trail when i was younger! so fun! i was never good at though… ha!

    I used to love playing Oregon Trail!! Remember how you got to name everyone who went with you on the wagon? And how by the end, everyone would start dying from random diseases? Btw, that quinoa salad looks delicious!

      you bake a cookie in a pizza pan, don’t cook it all the way (so it’s still gooey) and top with ice cream and cho chips 🙂

    I think the Uber bars are 100x better than the traditional Larabar and also WAY better than KIND bars. 🙂 You look gorgeous!

    I totally played the Oregon trail in elementary school and would get in trouble for setting the pace at strenuous and not stopping when my people got sick. I went to a small Catholic school and strenuous pace was considered a no-no!

    Um, I ALWAYS played Oregon Trail growing up…I loved the hunting part. Also, Where In The World Is Carmen San Diego was popular too…ahh, to be young again!

    Meal looks delish! I loved Oregon Trail…I played it on our blocky Apple computers with the green screens (no color) and I always died of scurvy! Get some vitamin C in ya folks! Haha 🙂

    I remember always naming one of the characters after whoever happened to be my current crush. Then I would work like hell to save him when he developed cholera or was bitten by a snake. So silly 🙂

    Can’t wait for the summer shape up! Sounds like you have a lot on your plate for next month. What exactly is a pizookie? I’ve heard of it a couple times from other blogs, but realized I have NO clue what it is hah

      it’s a cookie that is cooked in a pizza pan, not cooked all the way (so it’s still gooey on the inside) topped with ice cream and chocolate chips 🙂

    It’s funny you said you made food for someone who just had a baby, you’re already paying it forward. And 2 hrs is a long time in the kitchen for anyone but for you who just had a baby, it may as well have been 2 days, right! 🙂

    I love hearing people talk about the Oregon Trail game!! I’m in Oregon so for some reason when I was growing up playing it, I thought it was only here! Haha!! Now I feel so cool when people mention it 😉

    Those Uber Lara Bars… I don’t know. I’ll reserve judgement till they show up in the Liberty Market (cool organic store that gets imports.. I know I should buy local, but sometimes….you gotta be American for an hour or so). I’m thinking, what’s it stuck together with? Maybe honey? sugar? Gakky agave?

    Oh Oregon Trail. It was the only computer game on my elementary school computers (it was a pretty small school) and it was a BIG deal when the teachers would let us play. Kids even used to stay after school to play!

    I LOVED Oregon Trail!! I usually comprised the wagon team of my siblings (2 brothers, 2 sisters) and then tacked on JTT and Devon Sawa. I don’t think I ever made it through a game without at least 2 people dying of dysentery. There was one time I made it all the way to Oregon without anyone dying, and then RIGHT before we got to the end of the trail, I got bit by a snake and died — game over. I was so pissed. Haha! Now I really want to play again… Thanks a lot, Gina! 😉

    I totally use to play that game in like the 3rd grade! We’d always fight over the computers that had that game on in in like “Free Time” or whatever it was called. We also use to play this Veggie/Fruit game where you had to get 5-10 servings or something haha! It was super cute.

    I’m super excited for the summer shape up! I’ve only recently found your blog and I have to say I’m a bit obsessed with the content lol!

    Last night on Gulianna & Bill, they opened their resteraunt. Bill wanted a signature dessert. One of his ideas was a deep dish chocolate chip cookie with icecream. I immediately thought of you and the pizookie!!

    JTT- he was basically the wallpaper for my room back in the day!

    My husband I and have done the same thing–spent way too much time one night talking about Oregon Trail, Where in the World is Carmen San Diego and Nikelodeon’s Guts and Legends of the Hidden Temple. We then took it a step further by youtubing old episodes of all those tv shows, minus Oregon Trail, of course.

    Time well spent, obviously!

    Oregon trail and math munchers were my fav games. I got JTT autograph when he came to our mall, I was so in love lol. I got the banana über bar and found it to be too sweet for my liking.

    Okay so I just laughed out loud at work when you mentioned JTT! You just got awesome points! 🙂 And yes, I played Oregon Trail, but my attention span back then was much like it is now and I never had the patience for it. I’m pretty sure all my people died…just like my Tamagotchi Pets and my Sims people…
