Hey everyone!!! Hope you had a great weekend and/or Easter/Passover ;)

I had such a nice day relaxing with the pilot. We’ve been gone so much over the weekends that we haven’t had a lot of chill time around the casa, so it was pretty amazing to just hang out for a day.

We slept in (again) and I made some brunch :D

We each had something sweet.

Cinnamon rolls for the pilot:

(They’re the Pilsbury orange cinnamon ones—they’re his favorite. He said not to judge him, haha)

Oat branmeal (1/4 cup oats and 1/4 cup bran) for myself:

And something savory for us both:

GREEN CHILE EGG CASSEROLE

This recipe was SO EASY and delicious!!! My nana (on my dad’s side of the family, who is a caterer) makes something similar to this every year on Easter and I knew I’d be craving it.

Here’s the recipe:

-6 eggs

-1/2 small container of sour cream (we used the Light kind)

-1 small can of diced green chiles

-1 cup shredded cheese of your choice (I had raw organic cheddar on hand so I threw that in there)

-garlic powder, salt and pepper

1. Spray a small casserole dish with nonstick spray and preheat the oven 350*.

2. Beat eggs in a bowl and mix in the sour cream mixture

3. Evenly spread out the green chiles on the dish and then top with the cheese. Pour egg and cheese mixture on top.

4. Bake for 30 minutes until cooked through and lightly browned.

I had two small slices topped with Texas Pete:

The pilot got a new Wii game in his Easter basket, so while he played that, I played Betty Crocker ;)

I made some dehydrated flat bread from Ani’s Raw Food Kitchen:

I’m excited to make a sandwich with it today!!!
I also made some of the cookies Jenna is famous for: Super Charge Me! Cookies from Eat, Drink and Be Vegan:

So. Insanely. Delicious.

I love cookies that I can feel good about eating, too. These little guys have no white flour or white sugar in them- they’re sweetened with maple syrup and have oat, flax and spelt flour- and I used goji berries as my dried fruit of choice and will definitely be making these again!

The pilot and I cleaned the casa for most of the day, had a small lunch –I made a smoothie and some fruit- and then it was dinnertime.

I sautéed some zucchini with olive oil, onion and garlic, then added WFs eggplant marinara and shrimp. Seasoned with salt, pepper, and red pepper flakes and topped with tomato and basil:

The pilot had shrimp and prosciutto penne pasta (the recipe is in the “Delicious Disney” cookbook) and it was a lovely little meal.

After dinner, we went over to Megan and her pilot’s house and colored Easter eggs for the rest of the evening. It was a blasty ;)

I slept through the gym this morning, and made a coconut breakfast cake. The recipe is in Ani’s Raw Food Kitchen and contains flax, coconut oil, sea salt and water—I added a smashed banana, cinnamon and vanilla to mine and topped it with a little AB and a maple syrup drizzle:

I’m glad I gave most of them away to friends— they’re a little addicting :D

Something to talk about: The 40 days of intuitive eating and meditation are over –unofficially, but I’m going to keep working on it!!! I want to write a post about it (hopefully later tonight) because even though I didn’t write that much about it throughout the course of Lent (sorry about that!) they both posed quite a challenge for me. Since I’m so frantic during the day, it was super difficult for me to silence my mind without falling asleep and as far as the intuitive eating went, I feel like I’ve trained my body to eat at certain times, whether I’m hungry or not. Did you join me in trying to eat more intuitively and take more time for yourself?? How’d it go?

    oh gina – everything looks so delicious!
    i see that you have a dehydrator.. do you mind if i ask you which one you have? i’d like to get one, too, so that i can make more heart-healthy and delicious recipes for my father (i think he feels a little left out after having to cut out most desserts after his surgery) and i’d like one that i know is of good quality and would last quite a while! do you have any recommendations?

    I’m loving the Easter baskets! Did your hubby play soccer? I think soccer players are so cute! Their uniforms are far more flattering than say… basketball!

    I’ve always wanted to try a dehydrator. I’m intrigued!

    hey pearl- i use the excalibur dehydrator (the 9 tray model). they’re a little pricey but worth the investment- they’ll last forever!

    Whoa – not only does my mom make nearly an identical chile-cheese dish like that one, but it’s an Easter tradition for us too! Is it not absolutely HEAVENLY?! At least you got to have it this year… My parents are living in Tokyo these days. :(

    I’d gladly take some cookies off your hands ;) Haha, but really, you have to be the sweetest little wifey to make all those separate meals for you and the hubs! And you’re so productive on the weekends as far as baking/creating dishes goes! I can’t wait to see how the flatbread turned out. Have a great start to the week :)

    What a great Easter! Don’t you just love those chill weekends at home! They are so special :) The food looks fantastic, and I’m super jealous of your dehydrator masterpieces! The cookies look yum of course….I’m purposely not making them because I know I’d gobble them all up :)

    I love to mix oatmeal and oat bran together. The texture is fabulous!

    I really need to get a dehydrator…the bread looks amazing.

    Hi love!

    I hear ya about those cookies being addicting….they are SO delicious! My dad is always sneaking them whenever I make them…hehe.

    I would LOVE to see you this weekend but will have to let you know later in the week. The boy might be in a fishing tournament all day so that might work out very well but I will keep you posted!!

    You MUST make Ani’s coconut lemon bars. TOO DIE FOR.

    THOSE ORANGE CINNAMON ROLLS ARE THE BEST THINGS EVER!!!!!!! Yum. I used to have them on my birthday as a kid so I guess I have fond memories attached to them. All of your food looks incredible Gina, and I’m glad that you got to spend a relaxing day with your pilot.

    I need to work on intuitive eating… I usually eat at the same times every day and sometimes I think I just eat because I’m used to it and not because I’m hungry. It’s usually all pretty healthy, but still.

    I definitely did try to eat more intuitively as opposed to sticking to certain times and I feel like its helped me to maintain more energy! I also have been doing a lot of yoga/meditation in the mornings and it always makes me feel so great when starting my day! Thanks for the great inspiration! :)

    I can’t wait to hear how your 40 day challenge went. I think I said when you started that I was going to try to do it with you. However, I must say that I kind of fell of the bandwagon. Even though the challenge is over I think I’ll hop back on.
