Here is the breakfast cookie how-to I’ve been promising:
In a small bowl, add 1/3 cup oats, 1 tbs nut butter of choice (I used raw almond) and 1/2 scoop protein powder (tonight was chocolate Designer Whey)
Stir to combine and use the spoon to break up the nut butter until you have a nice crumbly mixture:
Add 1/8 cup milk of your choice (For me, unsweetened vanilla almond milk) and mix until fully moistened
Now the fun part- pick the mix-ins! You can get creative with this one– I’ve tried banana, raisins, pumpkin, chocolate chips, ground espresso beans… add anything you like
Tonight, I decided on 1/2 mashed banana that was looking a little ripe
Stir in your mix-ins of choice and season (I used a little Stevia and cinnamon)
Plop the mixture onto an appetizer-sized plate and with the back of your spoon, flatten it into a round shape with equal thickness throughout
Put the cookie in the fridge overnight. It will harden slightly from the nut butter and the oats will soften from the milk.
Next morning, grab a spoon and enjoy
To rewind to this afternoon, I made some grape leaves for lunch and a hummus salad
In this batch of grape leaves I used, California brown rice, golden raisins, kalamata olives, garam masala, lemon juice, salt and pepper. I thought the combination might be a little strange, but it was actually really good!
Still a little snacky, I grabbed 1/2 serving of raw goat cheese
Went to Jeni’s (I haven’t seen her in a week and a half because she was out of town, and I missed her!!!), then off to step and school.
I grabbed a Clif bar to munch in between teaching and class
Came home and decided to try another Oikos flavor, since the vanilla one didn’t work out so well the other day.
I grabbed the honey flavored one:
In the words of Miss VeggieGirl: HOLY YUM. It had a layer of honey at the bottom and the flavor was not overboard on the sweetness and the texture was glorious. Maybe the vanilla one I had was a fluke??? Or maybe the honey flavor is just way better?? I still have a blueberry one in the fridge to try so we’ll see what the final verdict is.. but I know I’ll buy this honey flavor again, for sure.
Still hungry, I grabbed half a pita and dipped it in some marinara:
Now I’m perfectly satisfied, ready to put on some jammies and comment it up on your lovely blogs.
On a side note: How does Grey’s Anatomy always manage to make me cry lately?!? And how did Denny come back?? I’m so glad he did, but a little confused over here :/ Guess I’ll have to wait til next week to find out…

I am in love with your blog! I was reading Self magazine and saw it in there! I am excited to make the breakfast cookie!
I am 26 and had two bad car accidents in 2006 and put on 20 pounds. I had always been small and very active with a metabolism to eat what I wanted, healthy or not. Then I was unable to work out or be active at all. Now I feel completly clueless to nutrition or how to eat healthly to lose weight. Fitnessista to the rescue!!!

Thanks! I am clueless about where to start! I need to be in shape because my husband and I own a clothing store in downtown Anchorage Alaska (yes there is style here beyond parkas and bunny boots
). I dont feel that I represent the store as well as I should, plus i want to be healthy. I have a Planet Fitness membership (just signed up two weeks ago) and have a cheap elliptical at home. How often should I be on it? It is really hard to lose weight in the winter here, everyone eats comfort food, and you dont really feel like being active. I just dont feel like my self with this extra weight on. I made it a goal to post all my meals and workouts on my facebook so my friends can cheer me on. Also, my husband is really supportive, he runs on the elliptical next to me even though his feet barley fit (he wears a size 17) and he probably feels silly!

i use a LOT of cinnamon and 5 drops of liquid stevia (about half a pack)

I had one this morning! I used a mashed banana, oats, dark chocolate dreams peanut butter, some cocoa powder, almond milk and a few almonds on top. It was delicious! It was definately awesome to look forward to it during my workout. Thanks!
