Salted Baileys Chocolate Truffles

Hereโ€™s a fun dessert option for your St. Patrickโ€™s Day festivities this weekโ€“salted Baileys chocolate truffles!

In a nutshell, I took my favorite vegan cashew truffle recipe and de-raw-ified it by using Baileys instead of almond milk.

It was a wise decision, indeed.

Salted Baileys chocolate truffles

I LOVE St. Patrickโ€™s Day. Itโ€™s always been one of my favorite holidays, even though I suffer from flashbacks from dancing during the parade. I did Irish step dance for a while, and weโ€™d light jig down the parade route for a couple of hours in our soft shoes. Pain doesnโ€™t even begin to describe it. The festival and soda bread at the end always made it worthwhile ๐Ÿ˜‰ I still love traditional Irish music, the wonderful food, and Ireland is a country weโ€™d love to visit one day. The Pilotโ€™s family has a bar in Dublin, so I think we definitely need to go check it out. 

Salted Baileys Chocolate Truffles

These little truffles are stored in the freezer, so theyโ€™re almost like a cold cocktail (and would go beautifully with this!). A party in your mouth, really ๐Ÿ™‚ If youโ€™d like, you can also skip the Baileys and use regular almond milk.

A sweet little dessert with a creamy kick!

Ingredients

Scale
  • 2 cups raw cashews, soaked overnight and rinsed
  • 1/2 cup pure maple syrup
  • 1/2 cup Baileys (or can use plain almond milk)
  • 1/4 cup cocoa powder (or raw cacao powder for a richer flavor)
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla

Instructions

  1. 1. In a high-speed blender, blend the cashews, Baileys (or almond milk) and maple syrup until smooth and creamy.
  2. 2. Next, add your vanilla and cocoa powder. Blend well.
  3. 3. Finally, add your coconut oil and blend on high.
  4. 4. Transfer the mixture into a bowl and store, covered in the fridge for at least 30 minutes.
  5. 5. Shape the mixture into truffle-sized balls using a melon ball scooper or tablespoon. Roll with your hands and place in the freezer to harden.
  6. 6. Sprinkle with sea salt before serving.

Notes

  • Because these soften fairly quickly, store in the freezer.

    I used to Irish Step Dance too ๐Ÿ™‚ I had to wear painful curlers to bed to be ready for competitions the next morning!

    Oh man! I wish I could have one of these right now! I tried Irish step dancing in a master class in college. I was so terrible at it. Luckily every one in the class was new to it so we all looked silly together!

    Those truffles look delicious! Mmm. We never seem to do much for St Pattyโ€™s Day and I am not sure why. It seems like the more fun things you can plan during the cold winter months โ€“ the better. Maybe I need to start planning an annual St P party or something. ๐Ÿ™‚

    I love St. Pattys! It was my dadโ€™s birthday and also one of the first big holidays I experienced after I turned 21. Iโ€™ll always have fond memories of finally being able to attend festivities with my older friends ๐Ÿ™‚

    I love St Patrickโ€™s Day, too!! We have a lot of Irish blood and we even named our twins Bridget & Patrick. The nurses kept calling them โ€œmy little leprechauns!โ€

    I also have such fond memories of the Irish soda bread my grandma made every year. I crave it in March!! Yum!

      itโ€™s a variation i did in the plank. alternate bringing knees into your chest (maybe 2-4 each side), then drop your hips towards the floor in plank (i should have called them โ€œhip dropsโ€)

      you donโ€™t need to, but iโ€™d soften it if itโ€™s totally solidified. mine was fairly soft at room temperature.

    What a great, easy recipe that can be dressed up so many different ways! (Always vegan for me!) And all of those ingredients really only need 1 tablespoon of coconut oil to hold together? Amazing. They look just like a pile of chocolate fluffiness ๐Ÿ™‚
