Sweet and spicy cucumber salad

It’s been a great day over here. I got coverage at work since I had an appointment this morning and afternoon, so I got some extra time to spend with my favorite people.

(update: not loving the gel nails. They only looked really nice for about 5 days and since then have been chipped and peeling. I’m definitely ready to get them removed)

Cucumber salad  1 of 1 3

We ordered 3 cucumbers in this week’s farm box, and I originally intended them to be for juicing purposes. When we actually received them, they were so beautiful that it felt wrong to throw them in the juicer! Farm fresh cucumbers deserve to be the star of the show.

I instantly thought of my favorite sushi house cucumber salads, and decided to make a similar version here at home.

Sweet and Spicy Cucumber Salad

Serves ?

Ingredients:

-2 large cucumbers or 1 English cucumber, thinly sliced (and peeled if you prefer)

-1 teaspoon flax oil or olive oil

-1 ย teaspoon rice vinegar

-1 tablespoon sriracha

-1/4 teaspoon sea salt

-1 teaspoon sugar

1. Add the sliced cucumber to a bowl, then prepare the dressing by whisking the remaining ingredients in a separate bowl.

2. Top the cucumber with the dressing, toss to coat, and enjoy!

I can tell this is going to be the type of thing that tastes even better with a little time to marinateโ€ฆif it lasts that long ๐Ÿ˜‰ It’s a great option for a BBQ or outdoor party, too.

    So glad you are enjoying your day off, Liv looks hilarious!
    I knew you had day off because you weren’t teaching this morning. I took Buff Booty with Shelly and CardioCombat with Sara today. Hope to make it to Zumba and Tabata (if I don’t chicken out) Thursday. So maybe will see you tomorrow. LOVE CR, having lots of fun.

        I leave Sunday morning. Maybe you will be teaching Saturday morning? I did Zumba and Tabata with Shelly, fantastic class. I wish my real life is like CR! The massages are such a treat for me.

    I just had my (first ever) gel nails removed today and the whole time I cringed and swore NEVER AGAIN! A lady next to me was saying the name. My nail beds now look and feel all torn up:( I opted for no polish to let them “breath” for awhile and bought a vitamin creme at target to apply to them daily to try to re-strengthen them. I’ll be sticking to regular polish from here on out!

        I just ripped my gel mani off two days ago… I hope it’s better when you get it done in the salon because I definitely ripped the top layer off my nails ๐Ÿ™ I’m definitely taking a break from the nail salon, it’ll be good for my bank account too!

I wanted something that wasn’t a polish because I read that it was good to let the nail bed breath while it repairs itself.

        Amber – I actually peeled one off on my own the day before, and it messed up my nail so bad that I decided to go in and have the rest done. Funny enough, they all look JUST as bad as the one I took off myself! It reminds me of that time I got acrylics for prom in high school haha.

    The gel nails are only good if you get them regularly and don’t have to remove them. Otherwise they are just annoying. You can remove them yourself with cotton balls soaked in remover and then wrap foul around that and your nails to let it soak in.

    We have a TON of cukes in our garden and they are going bad because I don’t know how to use them all up. I’ll definitely try this!

    I usually go for the sweet cucumber salad at most Asian restaurants but I am a huge sriracha fan so this is now on my list of recipes to make!

    I love any kind of cucumber salad…especially in the summer! I have had good luck with my gel nails (always look great for at least two weeks) but the removal process is a pain. I def recommend having them remove it because peeling it will tear up your nails. However, mine returned to normal pretty quickly. I stick to the gel for big events and usually just do my nails myself in between.

    I felt the same way when I tried the gels – I think because they started to crack and peel really quickly like you said, and I couldn’t take the polish off myself! It was giving me anxiety haha! Mine were not in horrible condition when I had it removed. Not as strong as before, but it only took a short time for them to get back to normal. I think they left some gel on there when they removed it so make sure they get all of that off!

    You can take the gels off yourself. You
    Just buy straight acetone, pour it on a piece of cotton ball, place on your finger, wrap foil around it and leave it for about 10 minutes. It sounds more complicated than it is haha. My nails are fine when I take it off that way. You can’t even tell I had gels on. Hope this helps If You want to take them off yourself at home ๐Ÿ™‚

    That’s really odd about the gels… I kept gels on mine while I was on my surgery rotation since all the hand sanitizer and scrubbing tore up my nails. The gels didn’t chip or anything for at least two weeks. I would try to get my money back!
