Grain-Free Apricot tartlets

The night before last was officially pizza night. We still hadnโ€™t made our weekly Trader Joeโ€™s and Costco runs, and when I stared in the fridge trying to mentally assemble components into a decent dinner option, the dessert radar kept going off.

Ingredients

So, I took the apricots that weโ€™ve had for a few days (with only the dehydrator in sight as a future destination), and they quickly became the star ofย these awesome grain-free tartlets.

Grain-Free Apricot Tartlets

A fluffly layer of crust with almond meal, applesauce, coconut oil and chopped dates,

+ a row of sliced apricots, soaked in lemon juice and drizzled with honey

baked to perfection in 30 minutes.

Assembling

We may have made a Pizza Port run for our entrees, but at least dessert was homemade. ๐Ÿ˜‰ (And letโ€™s be real, Pizza Port is always a wise choice.)

These little tartlets are whimsical and pretty to look at, but also perfectly sweet with the slightest tartness from the apricots.

Ready to bake

We each had a few, and I froze the rest to enjoy throughout the week. Theyโ€™d be wonderful out of the oven with a scoop of coconut milk ice cream, too.

Bite-sized grain-free treats, which are also vegan! Make a batch and enjoy with your favorite ice cream, or freeze and enjoy as a quick sweet treat

Ingredients

Scale

For the crust

  • 1 cup almond meal
  • 2 tablespoons cinnamon applesauce
  • 1 teaspoon vanilla
  • pinch of sea salt
  • 1/4 cup almond milk
  • 1 tablespoon flax
  • 1/4 cup chopped dates
  • 1 tablespoon coconut oil (melted)

For the apricots

  • 46 small apricots, thinly sliced
  • Juice of half a lemon
  • 1 heaping tablespoon honey

Instructions

  1. 1. Preheat the oven to 350 degrees and spray a mini muffin pan with nonstick spray or coconut oil.
  2. 2. Combine the crust ingredients in a large bowl.
  3. 3. In a separate bowl, add the apricots, lemon and honey, and toss to coat well.
  4. 4. Divide the crust batter equally among the batter cups, and top with 3 thin slices of apricot.
  5. 5. Bake for 30 minutes, until golden and set, and allow to cool completely before removing from the muffin pan.
  6. 6. Enjoy!

Notes

  • *Toddler friendly! Perfect for little hands.
  • No almond meal? Oat flour would work well too!

    Dates are awesome additions to baked goods and smoothies. I have been on a big kick and love that you use them as a sweetener in these tartlets. They look delicious!

    I love all fruits at anytime of the year! I have childhood memories of sitting on our porch eating slices of watermelon and seeing who can spit the seeds the furthest!

    These look amazing! I’ve recently started using coconut oil when I bake and I love how light it tastes. Definitely need to try these – I could probably customize with whatever fruit I can find locally, right?

    Yesterday and today I ate the peaches we bought at the OB farmers market last week. Some of the best I’ve ever had!! ๐Ÿ™‚ I usually try to buy local fruit but I figure since they were local to California and the plane used to transport them was transporting me anyway, it’s all good. lol.

    We did a Pizza Port run this week too and for similar reasons. Sometimes you just have to, am I right? And I can’t pick a favorite summer fruitโ€ฆit would be like picking my favorite child or dog or squash (I can’t.stop.eating.squash.).

    I tried a muffin recipe from a magazine a couple days ago. The flavor was a bit bland, which is easy enough to fix. However, the muffins were pretty dense, not light and fluffy. The base was oat flour and whole wheat flour. Do you think swapping some of the oat flour for almond flour would help? I’m also planning on adding either banana or applesauce for moisture, as they were a bit dry.

    Those look amazing. A dessert that has essentially NO UNHEALTHY INGREDIENTS. Unfortunately no one I know shares my love for apricots and wouldn’t understand why I am so excited about these. Whatever. More for me when I make these!

    I love stone fruit during the summer! I actually don’t eat it any other time of the year. Just so good during this time of year it’s not comparable when it’s out of season. These sound great!
