Breakfast Salad

This can be a thing, right? ๐Ÿ™‚ For breakfast, I recreated one of these little gems I had in PB at Crown Point Coffee after teaching 3 barre classes in a row (<โ€” not recently haha.): breakfast salad!

Iโ€™ve been thinking about it ever since I had it, and thought it would be a fun way to switch up the breakfast routine. I tend to get into bfast habits, and will have the same things over and over until I burn out and switch it up. (I seriously went through a time period where I had egg burritos at least once a day, for years. I still donโ€™t believe the day has officially started until Iโ€™ve had eggs.)

Although the breakfast I enjoyed at Crown Point Coffee was called a “bowl,” it was definitely more like a salad than anything, thanks to all the veggies.  That one had vegan sausage, egg whites, tons of chopped veggies, and a spicy sriracha sauce. I dove into the savory goodness, and it was a filling and protein-packed breakfast.

I LOVE salad for breakfast as itโ€™s a great way to get some extra veggies/fiber, and a savory way to switch things up from the classic egg and omelet combos. I decided to make my own similar version, with a few changes for my preferences.

Here’s my homemade breakfast salad that I might just like even more than the restaurant version! I hope you enjoy it as well.

Ingredients

Scale
  • Sausage patties (I used Applegate farms turkey sausages)
  • 12 whole eggs, cooked to your preference (I did overeasy)
  • 1/2 tomato, chopped
  • 1/2 cucumber, chopped
  • 3 romaine leaves, torn
  • 1/4 onion, finely chopped
  • avocado, sliced
  • 2 tbsp plain yogurt
  • 1 tbsp sriracha (or to taste)
  • salt
  • pepper
  • garlic powder

Instructions

  1. Placed cooked sausage patties in the bottom of a bowl.
  2. Top with cooked eggs.
  3. Next, add your veggies.
  4. Season with salt, pepper and garlic powder.
  5. Top with avocado slices.
  6. Mix yogurt and sriracha.
  7. Drizzle on top.

Salad for breakfast: yay or nay? Whatโ€™s the weirdest thing youโ€™ve ever made yourself for breakfast? For me, itโ€™s cold lasagna (especially this one). Itโ€™s strange, but I love cold lasagna leftovers in the am. ๐Ÿ˜‰

Today is a visit to the chiropractor and some outdoor adventure with Liv. Iโ€™m thinking some zoo + zoo kettle corn (why is it so good?) is going to happen. Iโ€™ll see ya later today on the Family page.

    That salad looks really good!! I’ve never had a salad for breakfast but I’d definitely try it. The weirdest thing I’ve eaten for breakfast is cold pizza. I used to love doing that in college! Haha.

    I can honestly say I’ve never had salad for breakfast before but this looks great. Might I suggest some home fries as croutons? Haha.

    I think cheese is kind of a weird thing to have for breakfast but I’ve totally cut slices to eat before.

    I make salad for breakfast or brunch fairly regularly. My Eggs Benedict Salad is one of my most popular posts. I’ll have to try the sausage sometime that’s a nice fall flavor.

    I do the same thing with breakfast! I eat the same thing until I get tried of it and switch it up. Right now oatmeal is amazing in the morning. It’s getting cold here in the great white north so it’s so nice to have something warm and filling in my belly before heading out for the day

      haha definitely not! sprouts didn’t have any good vegan options when i went shopping, so i grabbed turkey instead

    This sounds amazing! I used to love veggie sausage and kind of forgot about it! I think the weirdest thing I’ve had for breakfast is protein cheesecake! It’s so creamy and delicious and full of nutrients with high protein and fats!

    I love salad for breakfast! I always look for salad on the menu when we are out to breakfast and the breakfast menu is lacking in healthy non-sugar filled options.

    My daughter always eats dinner leftovers for breakfast! Tacos, pasta, pizza, mac n cheese!

    I once made a breakfast pasta salad with a honey sweetened greek yogurt dressing and chopped fruit! It was yummy!

    GURL I eat salads for breakfast like all the time. My co-workers tease me but whatever, I like getting a head start on eating my veggies lol. That dressing sounds really good!

    OMG, love cold lasagna for breakfast! And this might sound super weird, but add a fried egg on top – the warm, runny yolk on the cold lasagna is crazy good ๐Ÿ˜‰

    My preggo self was really picky with breakfast off and on during my first trimester. I would buy a thin crust veggies pizza and divide it up between two or three days for breakfast! I just hit 13 weeks and oatmeal is finally back in my life again! YAY!!!!

    I have had all kinds of things for breakfast over the years – usually I’m a breakfast-food kind of person for when it comes to breakfast, but occasionally I’ll have something un-breakfasty like salad. Gotta go with what your body wants & needs in the moment!

    This sounds great to me, except I tend to crave sweet over savory for breakfast. A weird thing I do is make kind of a cereal out of a muffin. I crumble a muffin in a bowl and then add almond milk and eat it with a spoon! haha

    So this isn’t totally on topic, but do you have any tips for reintroducing foods after doing a cleanse type diet? I know you and the Pilot did one awhile ago, so I figured I’d ask. I’m about to finish my first Whole30, and I can’t live a life without wine and cheese and pasta, but I don’t want to undo all the hard work (in addition to the Whole 30, I’ve been doing Barre 3 and “running” on a regular basis with hikes and yoga smattered in for fun) so pants that were previously not buttoning are now easily buttoning. If you’ve already answered this, if you could point me in the direction of a post that would be fantastic!
