Mediterranean Appetizer Trio
Yellow Almond-Flax Crackers
-2 C. soaked almonds
– ¾ C. water
-1/2 t. sea salt
-1 T. nutritional yeast
-1/2 t. turmeric
-1 t. chopped fresh oregano
-1 T. ground flax seeds
-2 T. lemon juice
-1 T. cumin seed
-salt and pepper to taste
Blend all ingredients on high in the Vita-Mix until smooth. Spread onto Teflex sheets and dehydrate at 118* for 4-6 hours, flip and dehydrate until completely dry.
Smoked Paprika Zucchini Hummus
-2 C. peeled zucchini
-1 C. soaked macadamia nuts
-juice of 1 lemon
-2 cloves garlic, chopped
-1 t. cumin
-pinch cayenne
-1 T. fresh parsley, chopped
-1/4 t. smoked paprika
-1/2 t. sea salt
-2 T. raw tahini
Blend all ingredients in the Vita-Mix until smooth and fluffy.
Coriander and Lemon Marinated Olives
-1 C. green olives
-2 pinches of coriander
-1 T. fresh mint, chopped
-1 T. fresh parsley, chopped
-zest of 1 lemon
-Fresh pepper
-Drizzle of extra virgin olive oil
Mix all ingredients in a bowl and toss olives to coat. Dehydrate 2-3 hours, until warm.
