Sushi Salad

Hi friends! How is your August going so far? 🙂 Hope you’ve had a happy Monday!

I started my day off with a beastly cardio workout –testing out the Schweaty August cardio workout!- and a breakfast cookie before heading to a checkup appt.

(Awesome thing about bfast cookies: I can keep them in my car or the gym locker to devour post-workout)

After the doc’s, I stopped at TJs to get our groceries for the week.

Our pantry is no longer bare, and the fridge looks like people live here now 😉

I’ve been having a crazy hankering for sushi lately, which I’m pretty sure is mostly due to the fact that I can’t have any. Technically I can have California rolls, but to be real, I want a piece of raw salmon sashimi covered in wasabi. In the sushi spirit, I decided to make my favorite deconstructed sushi salad for lunch:

The star of the show:

Cauliflower “rice”!

The only ingredient: cauliflower florets pulsed in the food processor to resemble rice. Just make sure to season it, or it will taste like death and sadness.

I flavored the rice with 2 grated carrots, lime juice, Nama Shoyu, cayenne and garlic. Then I topped it with 1/2 avocado and seaweed snacks, which I used to pinch up bits of cauliflower and ‘cado. It was pretty mind-blowing 🙂 [You can also add tuna, cucumber, salmon, wasabi, or any of your favorite sushi fillings)

Some more recent eats:

Protein ice cream (Sun Warrior, cacao powder, frozen organic berries, 1/2 frozen banana, almond milk, stevia)

and a new-to-me trail mix, which I busted into on the car ride home 🙂

Just almonds, cashews and chocolate. A trifecta of glory.

The Pilot just got home so we’re gonna hang out and take Bell for a walk before dinner 🙂

Something to talk about: One (or two) ingredient wonders! Cauliflower rice and banana soft serve come to mind, but are there any other ones I’m missing out on?

Something else to talk about: I’m so stoked ya’ll liked the “10 Ways to Make August Awesome” post! I was trying to think of some examples of spring fitness events that would be fun ideas to register and start training for- any other ideas besides the Disney Princess Half?

    I have that trail mix! My cousin sent it to me allll the way from Princeton NJ, so clearly it is good. I love those seaweed snacks like nothin else. That looks so good! <3

    very cool to make sushi!!! gonna have to try that. cauliflower is one of my least fave veggies and i LOVE all veggies…so i will def try to not make it taste like “death”..hahah!

    I have been interested in pulsing up some cauliflower to make it “rice” but to tell you the truth, the cauliflower up here in Vancouver, BC is $6 -7 a head! WTF?! I better make that “rice” dang good for 7 SMACKERS! LOL!

    I must make a trip down to TJ’s to stock up on nuts, etc…

    For the record, the 26.2 with Donna is great. I did the half last year and it was amazing. The support from the crowds is incredible and there are so many breast cancer survivors and women currently fighting breast cancer cheering you along. It’s hard to not get emotional! Plus it’s beautiful – a couple miles on the beach (no worries, they time it so the tide is furthest out and there is the most amount of packed sand available to run on!). And ya know, Jax is awesome. So awesome you should probably come around to cheer on the runners with your new bebe in tow! 😉

    I love a sushi salad. Jason and I are on a juice fast right now, and broke it for an outing with a friend staying with us over the weekend, and I ordered my usual sashimi salmon. Jason joked that I’m still eating raw 😀

    Napa Valley is March 4th, and the Big Sur Marathon is April 29th! I know training for that wouldn’t start until late this year, but since I signed up for it (EEEEK!!!), I’m already trying to prepare my mind. It’s not so much the race itself; rather, it’s the 16 weeks of training in the miserable SUCK that is Nebraska in the winter and “spring”. We were supposed to move to Monterey in February, but yaaaaaay military, the class got canceled. 🙁

    I’m definitely going to have to try that deconstructed sushi! I’m not talented enough to roll my own, but I think I could handle that 🙂

    And the inaugural Bryan/College Station Marathon and Half Marathon are December 11th!

    The Little Rock Half is awesome as well! It’s a little hilly, but you get to see some really cool parts of downtown. The crowd support is great, and LR is just a cool little city.
    Did you know that Annie Chungs makes a wasabi-flavored seaweed snack?

    Question – I bought some Sun Warrior and I can’t get around the texture. Is that because I’m not used to protein powder in smoothies yet or should I switch to something like Designer Whey?

    Cauliflower RICE!? I’ve made cauliflower mashed “potatoes”, but I never thought about rice! Do you steam it a little first, or just raw?

    The Rock ‘n’ Roll Mardi Gras Half Marathon in New Orleans is a freakin’ blast. The absolute BEST weekend of my life — hard to believe it involved a half marathon and no drunken debauchery!

    The Kentucky Derby festival has a full and mini(half) marathon the weekend before the Kentucky Derby. Derby is first Saturday in May so the race is last weekend in April. Race is held in Louisville, KY.

    There is nothing I love more than sushi! This bowl looks phenom. Since it was not so very long ago you were eating fish, do you have any tips on how to find good sushi-quality salmon or tuna in the grocery store?

    I am considering doing the PF Chang Rock N Roll Marathon (1/2 marathon distance for me) in Phoenix in January or The Arizona Marathon (1/2 distance) in Avondale in February. I hear the Phoenix course is great for a newbie but the cost of AZ Marathon is significantly less…
    I have seen cauliflower “rice” a few times now, enough to tell me I should make it.

    Love the idea for this salad! I haven’t been able to get on the cauliflower train yet, too many leftover bad memories from childhood, haha. I still like the idea of the salad though, just with regular rice 🙂

    The New Orleans Mardi Gras Marathon and Half Marathon is on March 4! It’s part of the Rock N’ Roll Marathon series, so you know going into it that it will be well-organized and well-attended. I ran the half last year and loved every second. The course is also flat as a pancake, so it’s great for beginners or people going after a PR. Plus, New Orleans is about the greatest city ever, so you could make a fun vacation out of it!

    I sound like a travel agent. But really…I *highly* recommend this race. 🙂

    I just had a friend talk me into the surf city half marathon in Huntington Beach, CA (Feb 5) — I was wishy washy about it b/c it’s one month before my wedding,…. your post this AM was like an intervention from above telling me to get my booty in gear!! Still nervous though b/c I’ve never run more than 8 mi.

    hey gina, can i keep the bfast cookie unrefridgerated? i’m a college student and would like to keep a bfast cookie in my bag as a late snack, like 5 hours after taking it out of the fridge in the morning?

      what kind of milk do you use? if you use dairy, i wouldn’t, i think almond milk would be fine

        generally the rule is that you shouldn’t eat anything if it’s been out of the fridge for 4 hours, so try to eat it before then if you can

    Hello!

    Here is a great half marathon or marathon for 2012. It was my first half marathon, and it was awesome!

    The Surf City Half Marathon or Marathon, is February 5, 2012. It is in beautiful Huntington Beach, California. I live in Denver and I trained through the winter for this race. Let me tell you how amazing it was to run at zero elevation, on a balmy 65 degree day. Amaaaazing! I highly recommend it. The race was well organized, lots of community support, make a girls weekend of it!

    Um….I think you have just saved my life, both with the sushi salad and protein ice cream. Sushi and ice cream are my all time favourite foods, but not really appropriate when training for a figure competition! Thank you sooooo much!

    Cauliflower “mashed potatoes” are also delish! Steamed cauliflower, blended with a splash of milk or a nondairy substitute, and salt and pepper. So good!

    Cauli rice, banana softserve, and I forget what you call them but dates + nut butter (maybe with a few choc chips in there)…all come to mind as yes, one or two hit wonders!

    The races…before you enter anything, you may want to see how The Girls are feeling while you’re in the earlier stages of nursing. That would be anything under 6 mos. Things may feel wayyyyy too bouncey to be contemplating long runs…then again, maybe not 🙂 But just don’t pay any money on any entrance fees til you know! I couldnt run til I was in the 12-18 mo phase of nursing. Too painful otherwise!

    Hmmm, I actually like cauli rice straight up…but maybe that’s cuz I love raw cauliflower, too.

    I read (either baby center or some other Main stream baby/pregnancy site) that as long as you’re eating sushi from a reputable establishment (like one that passes it’s health inspections vs a street vendor) then there’s not a problem with eating sushi during pregnancy. I had it at least once a week for all 41 weeks 🙂

    Julie Morris has a sushi salad in her new Superfood Cuisine cookbook—just had my eye on it yesterday. She uses brown rice, but I do love cauliflower rice!

    My fave thing to do with cauli rice is make it into pizza crust (I use goat cheese and a chia egg w/ it—tried cashew cheese but it didn’t work). It’s the best thing ever!

    I’m also running the Disney Princess 1/2 Marathon – it will be my first 1/2 marathon ever! Yesterday, it was announced that the Rock ‘n’ Roll series bought out the National Half Marathon & Marathon in Washington DC (where I live) so I think I’m going to run the 1/2. It’s on St. Patrick’s Day and I think it’ll be a lot of fun!

    What about the Vegas Rock n’ Roll? It’s Dec 4th but its the first time they are closing the strip and running it at night. Can’t wait to cross the finish line at the Mandala Bay with all the lights!
