Gluten-free high protein pancakes

Hi friends Smile It’s almost Friday! For those of you who are celebrating, how’s the Christmas shopping going? I haven’t done ANYTHING. At all. After a mild freak out morning, I remembered that I work best under pressure Winking smile

Then I made pancakes.

pancakes

Gluten-free, high protein pancakes using:

-1/4-ish C Bob’s Red Mill Gluten Free hot cereal mix (oats would be lovely, too)

-a flax egg (1.5 T flax mixed with 3 T almond milk)

-1/2 scoop vanilla Sun Warrior

-Stevia, cinnamon, vanilla, pinch of sea salt

-almond milk, to thin it out

Topped with peanut flour fluff (1/4 C peanut flour, water, sea salt and Stevia) and chocolate chips.

on a new bird plate:

bird

(Word, bird)

I don’t like birds because they’re relatives of dinosaurs, but I liked the plate Winking smile

Breakfast dreams are made of:

pancakes (2)

Current tea obsession:

tea

Minty, greeny, glorious.

I’m off to seize the day Smile

See ya later this afternoon!! <3

xoxo,

Gina

I tend to work best under pressure too. Although I am surprised to be done with shopping. That never happens. It feels kind of good.

  2. Jackie (ananda prana) on December 16, 2010 at 10:54 am

I work so much better under pressure, and not just with shopping! 🙂

  3. Brittany (Eating Bird Food) on December 16, 2010 at 10:54 am

Your pancakes looks delish and so does the TJ’s Candy Cane tea. I’ll have to look for that next time I’m at Trader Joe’s.

Oh no… hopefully your bird hating doesn’t keep you away from my blog. haha 😉

That counter looks so cool! And the pancakes looks amazing. I think right now I’m going to go indulge myself with your crepe recipe, though. It’s been a while. With banana “ice cream” and peanut butter inside!

  25. Chinye on December 16, 2010 at 12:22 pm

Ha thanks for reminding me I should get my but moving and do a little shopping. I haven’t done a thing either. Quick question: I’m following you on Open Sky but can’t see the promo or anything. Should I expect an email sorta like Groupon does?

    • Fitnessista on December 16, 2010 at 8:49 pm

yup, you should have received an email

  26. Allison on December 16, 2010 at 12:24 pm

Yum pancakes:):):) And i love candy cane tea, its so holiday tasting!

My open sky account is being super finky aka not recognizing my password, even though i have logged in before and its still the same:(:(:( Once i get that figured out, is there anyway i can get a big chocolate instead of vanilla?? I like chocolate so much better!

    • Fitnessista on December 16, 2010 at 8:49 pm

i think it’s chocolate and vanilla. try adding cacao powder to the vanilla- it tastes just like the chocolate that way

  27. Katie on December 16, 2010 at 12:26 pm

    Gina! Love the pancakes!

I ordered my sunwarrior!! Thank you so much for the baller Promo!!!!!!!

  28. Chelsea @ One Healthy Munchkin on December 16, 2010 at 12:31 pm

  29. Heather on December 16, 2010 at 12:35 pm

hey gina, i am trying to order some sunwarrior but i am confused…is the deal buy one get one free for two full size proteins or is it a vanilla then a smaller chocolate? thanks!

    • Fitnessista on December 16, 2010 at 8:49 pm

two full sized- one vanilla one chocolate!

  30. Little Bookworm on December 16, 2010 at 12:37 pm

  31. Angela @ Eat Spin Run Repeat on December 16, 2010 at 12:52 pm

My Christmas shopping is done – I think. I spent 4 hours at the mall on the weekend and it was brutal, but now it’s out of the way. Just have to wrap everything now! Good luck with yours. The pancakes look fantastic!! 🙂

  32. Christine (The Raw Project) on December 16, 2010 at 1:06 pm

Thankfully my shopping is mostly done. The pancakes look great! I got that tea from TJ’s last year and loved it! Especially for the price! But apparently everyone else did too because I haven’t seen it since. 😛

  33. Ilana on December 16, 2010 at 1:12 pm

I’m echoing Averie, but I love that picture of you. You’ve definitely inspired me to get my butt back into the yoga studio.

  34. Felicia (A taste of Health with Balance) on December 16, 2010 at 1:16 pm

my current tea obsession is the cinnamon vanilla black tea from TJs. and i totally stocked up on the sun warrior 😉

  35. Namaste Gurl on December 16, 2010 at 1:58 pm

Your bird plate has my name written all over it. One thing you forgot to mention is where you got the amazing gem? 🙂 Can’t wait to get my Sun Warrior, despite it’s steep price, I bet it’s worth it!

    Enjoy your day, sweet Gina!

    • Fitnessista on December 16, 2010 at 8:48 pm

      pier 1 🙂

  36. Laura on December 16, 2010 at 2:01 pm

I love your bird plate! Super pretty. I’m not much of bird person myself, they are kinda scary. I think I remember hearing that the Crocodile Hunter was scared of chickens. Crazy right? Can’t say I would blame him though!

So I know you love yourself some good vino but I was wondering if you have any recommendations, I am not a wine drinker and came from a family of non wine drinkers and don’t know where to start!

    • Katie on December 16, 2010 at 3:17 pm

Laura you will LOVE wine! I say riesling or some good white zinfandel!

    • Christina on December 16, 2010 at 3:44 pm

You should visit eatdrinkandbehopeful.com. Lauren offers GREAT wine recommendations on a monthly, and sometimes, weekly basis. She has really good taste in wines. May I also suggest going to a tasting at a local wine bar first? You can get a really good idea of what you like/don’t like in terms of varietals without having to purchase an entire glass. 🙂

      • Lauren @ Eat, Drink, and Be Hopeful on December 16, 2010 at 4:14 pm

        Christina-

I don’t know you, but thanks so much for mentioning my blog. I’m glad people actually enjoy my wine recommendations because I put a lot of time and thought into which ones I want to write about it. I didn’t know people even read them! Thanks so much for reading!

As for Laura-I would try whites first and reds with very little tannins. Those are usually good ones to start off on.

Gina-great looking pancakes..makes me want chocolate and peanut butter!

    • Laura on December 16, 2010 at 4:12 pm

      Thanks ladies!!

    • Fitnessista on December 16, 2010 at 8:48 pm

try riesling- it’s sweet and slightly bubbly. there’s a brand called “relax” (blue bottle) that i LOVE. for try an organic shiraz 🙂

That plate is super cute! Where’d you find it?

  42. Laura (On the Threshold of Greatness) on December 16, 2010 at 4:45 pm

I am going to order Sun Warrior soon! I just can’t justify adding another protein powder to my stash… yet. 😉 Hopefully I can jump on the next promo you offer!

The plate is adorable! I’m cool with birds as long as they don’t get too close, then they scare me.

I love your bangs, too! I’m a little behind on the commenting.

  43. Kim on December 16, 2010 at 5:15 pm
