Un-beetable Lunch + a Giveaway

Heyyyyy 😀 How are ya? Hope your day is going well <3 I loved reading about which workouts get ya excited. It’s always a good idea to take the “work” out of working out 😀

This morning, I got some work done and snacked on my beloved smoothie whilst typing away:

After a while, I went up to the yoga room to TURBOFIRE it up!

Oh. My. Stars.

What a workout. Today was Fire 45 + Stretch 10 and I loved every schweaty, booty-shaking, jumping second. ‘Twas amazeballs.

For lunch, I really wanted a salad beast but our greens stash is dwindling, so something even better happened.

I peeled a giant beet, chopped it up and seasoned with olive oil, sea salt and pepper.

After roasting for 20 minutes at 400*, I added the chopped beet to an oat bran pita with arugula, goat gouda, Fig vinegar and Garlic Gold.

Mind was blown. I LOVE beet + goat cheese + arugula and in pita form, it was incredible.

Dessert was the last raw cacao-cayenne truffle:

Guess I’ll have to make some more 😉

As you guys have probably figured out, I haven’t been eating as raw as usual lately. Our organic produce has been scant here in Valdizzy, but I’ve enjoyed quite a few raw desserts (like this raw strawberry tart and multiple macaroons!).

    oh-emmm-gee i love beets! if i could choose an entree it would def be the raw lasagna. what a feat! i’ve had rebecca’s stuff before and it is seriously out of this world delish!

    Wow! All the food looks amazing! Especially the desserts. But I think if I had to pick one thing I would pick the entree Baked Macaroni & Cheese. I can’t/don’t eat dairy, but I crave Mac ‘n Cheese often. I’m so excited to find out about this website. Also I made my first Sun Warrior smoothie today(The chocolate cherry bomb) and it was out-of-control! So glad I found your website, you are awesome Gina! 🙂

    uhhmazing! I want the bliss balls or key lime pie cheesekcake which is my all time FAVORITE dessert on this eartth!

    I am so so so excited for turbo fire! I do have a question…are you JUST doing the program, or are you doing weight training on opposite days??

    Oh goodness, the pumpkin pie hands down!

    Good to know your pup is a Shiba..mine looks very similar but she is a rescue so we don’t what her mix is!

    Beets and goat cheese = bliss!

    I would choose entree because I’ve never eaten raw before. I think a entree is best b/c we all know the dessert is gonna taste like a little piece of heaven =:O)

    wowsa, that banana cream pie that popped up immediately caught my eye, but i might go for something i can’t make at home (no dehydrator) so maybe macaroons or the hummus and carrotini crackers. or maybe the taco salad or stir fry less or… 🙂

    How do you choose!??!? I’ve never really played around with raw food, but after taking a look at this site, I may be a new raw food recruit!

    Of course when I looked on the food, dessert was the first to pop up 🙂 My mouth is watering as I type!!! I would love to try the banana cream pie. It looks amazing!

    I think if I won I’d try an etree. It would be my first real taste of raw cooking, I’ve always been intimidated to make them myself. The corn chowder looks yummy!
