Un-beetable Lunch + a Giveaway

This morning, I got some work done and snacked on my beloved smoothie whilst typing away:

After a while, I went up to the yoga room to TURBOFIRE it up!

Oh. My. Stars.

What a workout. Today was Fire 45 + Stretch 10 and I loved every schweaty, booty-shaking, jumping second. ‘Twas amazeballs.

For lunch, I really wanted a salad beast but our greens stash is dwindling, so something even better happened.

I peeled a giant beet, chopped it up and seasoned with olive oil, sea salt and pepper.

After roasting for 20 minutes at 400*, I added the chopped beet to an oat bran pita with arugula, goat gouda, Fig vinegar and Garlic Gold.

Mind was blown. I LOVE beet + goat cheese + arugula and in pita form, it was incredible.

Dessert was the last raw cacao-cayenne truffle:

Guess I’ll have to make some more 😉

As you guys have probably figured out, I haven’t been eating as raw as usual lately. Our organic produce has been scant here in Valdizzy, but I’ve enjoyed quite a few raw desserts (like this raw strawberry tart and multiple macaroons!).

    Just wondering…how do you make those fabulous looking raw cacao cayenne truffles? I’m flirting with idea of eating raw and plan on making my way with desserts first. Could you point me to the recipe?

    oh my gosh. just this description (“truffle atop a nutty crust”) FORCES me to choose the “Chocolate Cheesecake”! I have never really attempted to eat raw, and I think that chocolate and cheesecake, two of my favorite things, would be an AMAZING place to start!

    Hi! The jalapeno bacon poppers allure me the most; they sound and look luscious. My fiance and I strive to have one entirely raw day weekly. Plus, he’s a huge fan of the fried dairy cheese variety of poppers.

    Oh man! I can’t have grains or many starches (autoimmune shtuff), and the one thing I miss most is CINNAMON ROLLS. I have tried to make them and so far: epic fails. For the love of all this is good and tasty and rolled, pick me! : D

    Hardcore beet lover you are! Such an under appreciated little veggie.

    Dude this giveaway is off the hook! All the food from Pure Market Express looks so darn delish. So hard to pick just one thing, but I’d go with the pepperoni pizza. I don’t miss too many pre-vegan foods like burgers or cheesy lasagna, or hot wings, but pizza was always a favorite! I might indulge in a vegan pizza once in a blue moon, but I’m gluten/wheat sensitive and avoid soy, so it’s either too much of a hassle or a stomach upsetting indulgence. So thank you Chef Rebecca!
