Salted Baileys Chocolate Truffles
Here’s a fun dessert option for your St. Patrick’s Day festivities this week–salted Baileys chocolate truffles!
In a nutshell, I took my favorite vegan cashew truffle recipe and de-raw-ified it by using Baileys instead of almond milk.
It was a wise decision, indeed.
I LOVE St. Patrick’s Day. It’s always been one of my favorite holidays, even though I suffer from flashbacks from dancing during the parade. I did Irish step dance for a while, and we’d light jig down the parade route for a couple of hours in our soft shoes. Pain doesn’t even begin to describe it. The festival and soda bread at the end always made it worthwhile ๐ I still love traditional Irish music, the wonderful food, and Ireland is a country we’d love to visit one day. The Pilot’s family has a bar in Dublin, so I think we definitely need to go check it out.
Salted Baileys Chocolate Truffles
These little truffles are stored in the freezer, so they’re almost like a cold cocktail (and would go beautifully with this!). A party in your mouth, really ๐ If you’d like, you can also skip the Baileys and use regular almond milk.
Salted Baileys Chocolate Truffles
A sweet little dessert with a creamy kick!
- Total Time: 30
- Yield: 14 1x
Ingredients
- 2 cups raw cashews, soaked overnight and rinsed
- 1/2 cup pure maple syrup
- 1/2 cup Baileys (or can use plain almond milk)
- 1/4 cup cocoa powder (or raw cacao powder for a richer flavor)
- 1 tablespoon coconut oil
- 1 teaspoon vanilla
Instructions
- 1. In a high-speed blender, blend the cashews, Baileys (or almond milk) and maple syrup until smooth and creamy.
- 2. Next, add your vanilla and cocoa powder. Blend well.
- 3. Finally, add your coconut oil and blend on high.
- 4. Transfer the mixture into a bowl and store, covered in the fridge for at least 30 minutes.
- 5. Shape the mixture into truffle-sized balls using a melon ball scooper or tablespoon. Roll with your hands and place in the freezer to harden.
- 6. Sprinkle with sea salt before serving.
Notes
- Because these soften fairly quickly, store in the freezer.
Hope you enjoy!
xoxo

I used to Irish Step Dance too ๐ I had to wear painful curlers to bed to be ready for competitions the next morning!
Oh man! I wish I could have one of these right now! I tried Irish step dancing in a master class in college. I was so terrible at it. Luckily every one in the class was new to it so we all looked silly together!
Um…YUM! These look delicious!
Those truffles look delicious! Mmm. We never seem to do much for St Patty’s Day and I am not sure why. It seems like the more fun things you can plan during the cold winter months – the better. Maybe I need to start planning an annual St P party or something. ๐
Good luck with all the packing!
I love St. Pattys! It was my dad’s birthday and also one of the first big holidays I experienced after I turned 21. I’ll always have fond memories of finally being able to attend festivities with my older friends ๐
Oh my word, this looks amazing!!!!!
Oh my!! Yum these are a must try ๐
I love St Patrick’s Day, too!! We have a lot of Irish blood and we even named our twins Bridget & Patrick. The nurses kept calling them “my little leprechauns!”
I also have such fond memories of the Irish soda bread my grandma made every year. I crave it in March!! Yum!
Ahhh I love Bailey’s. This sounds perfect for this weekend!
Yummy!
Is there a substitute for the cashew? I’m allergic ๐
But they look delicious!
what about thai coconut meat?
My goodness, these sound delightful!
I’ll be visiting Ireland, and Dublin!, in July – what’s the name of the pub?!
Making these for SURE this year! Looks amazing! PS: I used to Irish dance as well! Seeing key foam curlers give me feis flashbacks like whoa.
Oh yum! These look awesome and so easy! We’re having a party for SPD this weekend. I need to make these, for sure! ๐
These sound so good! Definitely planning to make them this weekend ๐
Thanks so much for the fun recipe. I will make these for my St. Patty’s Day Beer Tasting party this weekend, they will be a great addition to the desserts table!
You definitely need to come to Dublin at some point ! You even have fans on the emerald isle!! I’m very excited to try these for patricks day!!
Ohhhh myyyy. These look DELICIOUS. I will have to try them out! I may have to try the almond milk ones.
do you recommend any more natural/less “junk-a-tied” protein powder?
my jaw dropped when I saw the title to this post…and then I got to the recipe. thanks for nothing haha. ๐
My sweet tooth just went crazy! These look delicious.
Goo. I need to make these ASAP. Thank you for bringing them into our lives ๐
Oh dear– it’s getting pinned like nobody’s business! ๐

Wow! These look melt in your mouth delicious!
I like St. Patty’s day, but don’t really celebrate it…I often just make soda bread and colcannon and call it a day ๐
Yum! I love Bailey’s but only around St. Patrick’s Day. I think we have a bottle though and these are calling my name!
Oh wow. You are a genius. These look heavenly and so light and fluffy! I don’t know if they are in real life but they look great either way!
Hi Gina I’m following the March calendar and will be doing the hotel room circuit tomorrow. Can u explain the “knee tucks and hip swings” exercise? Thank u!!
Never mind! I was reading it as one exercise instead of part of the warm-up. I thought you warm up separately for 5 minutes ๐ Oops!
it’s a variation i did in the plank. alternate bringing knees into your chest (maybe 2-4 each side), then drop your hips towards the floor in plank (i should have called them “hip drops”)
Well, I guess I needed an explanation after all! I actually did knee tucks on a stability ball and then in standing, swung one leg at a time back and forth, side to side… I’ll try it your way next time! ๐ Have fun in NYC!
Wow, I cannot wait to make these…
let me know if you do!
Look so yummy. A big salute for you..:):)
Oh WOW! These look amazing.
Hi Gina. I’m reading from Dublin, Ireland. What’s the name of the pub? Wonder if I know it! ๐
i think it’s the harney pub?
o’harney
Do you melt the coconut oil first?
you don’t need to, but i’d soften it if it’s totally solidified. mine was fairly soft at room temperature.
Those look and sound so yummy and they seem like they’re not too difficult to do. I too would love to visit Ireland some day.
LOVE Bailey’s! I might just give these a try even though I’ve never tried the cashew soaking thing.
Wow, a bar in Ireland?!? That’s crazy fun! Good thing we can’t share & eat each other’s food over our blogs because it would be dangerous.
What a great, easy recipe that can be dressed up so many different ways! (Always vegan for me!) And all of those ingredients really only need 1 tablespoon of coconut oil to hold together? Amazing. They look just like a pile of chocolate fluffiness ๐
