BBQ Roasted Chickpeas
This savory, healthy snack is perfect for hangry toddlers, packed in a purse for emergency snack mode, or awesome as a salad topping.
Hi friends! Howโs your Monday going? 4 weeks of workouts went out to my newsletter friends this morning, and Iโm happy to hear youโre enjoying the plan! Madre and I took P Rose to the ped (sheโs right back on her growth curve, and got one shot. I still cry almost as hard as she does, every time), and came back to hang out at the house after an essentials stop at the co-op.
I think itโs safe to say that weโre all snack monsters. I never though Iโd see the day where Liv could get her own food, but the first time she went to the pantry to retrieve a bar for me to unwrap, it was like the clouds of self-sufficiency opened while the angels broke into song. That happened quite a while ago, and Iโm still amazed that she can scour the fridge, tell me what sheโs hungry for, and even help get her own snacks. We try to encourage her to make healthy choices, and are strategic about where we place items in the fridge and pantry. All of her favorites are on the bottom shelves so she can easily grab and eat. In the group, we have trail mix and dried fruit, apple sauces, pouches, almond butter and pretzel packs, Bitsyโs Brainfood, and fresh chopped veggies, cheese sticks, and fruit in the fridge.
I try to make a majority of our snacks here at home (like these amazing energy bars, fruit leather, or homemade Larabars) and am always on the prowl for new ideas to keep things exciting.
Enter the roasted chickpea.
I have no idea why I didnโt think about making these little beauts before. First off, theyโre a great source of protein, fiber and iron, plus theyโre like a simple palette for almost anything. Except brownies. I know donโt knock it โtil you try it and all of that, but I just canโt.
I thought theyโd be perfect roasted up with some BBQ seasoning, and they were even better than I was anticipating! Theyโre crunchy, slightly sweet, and a delicious snack. My only regret is that I didnโt double the batch, because theyโre almost gone.

This has been one of my fave quick appetizers or pasta toppings for so long, but I don’t make them nearly often enough! Love the idea of having it on hand as more of a snack than a dinner item or app.

BBQ sounds amazing! I try not to roast chickpeas because I seriously will eat the whole can in one sitting. I also got in Day 1 of the workout. The kiddo went down for her nap, I had energy to spare, and your plan popped up in my email that instant. It was meant to be!

I’ve been making homemade hummus and guac and almond butter a lot lately. I keep reading books that espouse getting more plant fats in your diet.

How do you store these to keep them crispy? I made roasted chickpeas once, and they were great right out of the oven, but the next day they were soft. I live by myself, so I need them to store for at least a day or two.
hmmm that’s a great question. when i worked at the raw food restaurant, we used silica gel packs (the kind that come in random packaging) to keep kale chips crispy. i wonder if that would work for these?
These would be awesome salad toppers too! I’ve kind been sticking to three meals lately (usually I’m a snack aholic) and it’s working so I’m rolling with it!
I don’t have any chickpea recipes to contribute, but I am obsessed with aquafaba! Which is the juice leftover in the chickpea can that is used in place of eggs for vegan desserts. You can make things like meringue (macarons), mayo, marshmallow, cheese, butter, etc. I follow the facebook group too! But I haven’t worked up the nerve to try anything yet. But I thought maybe with all that chickpea juice just lying around you might have?

This reminds me of a north african chickpea recipe called “Kemia” which is usually served as an appetizer but your recipe gives me ideas of how to make a roasted version of Kemias…
