Gluten-free high protein pancakes

Hi friends Smile It’s almost Friday! For those of you who are celebrating, how’s the Christmas shopping going? I haven’t done ANYTHING. At all. After a mild freak out morning, I remembered that I work best under pressure Winking smile

Then I made pancakes.

Gluten-free, high protein pancakes using:

-1/4-ish C Bob’s Red Mill Gluten Free hot cereal mix (oats would be lovely, too)

-a flax egg (1.5 T flax mixed with 3 T almond milk)

-1/2 scoop vanilla Sun Warrior

-Stevia, cinnamon, vanilla, pinch of sea salt

-almond milk, to thin it out

Topped with peanut flour fluff (1/4 C peanut flour, water, sea salt and Stevia) and chocolate chips.

    I tend to work best under pressure too. Although I am surprised to be done with shopping. That never happens. It feels kind of good.

    I’ve slacked alot this year with Christmas shopping, i made an online order for some stuff, one package will arrive today, and the other just before christmas! i think i only have one more thing to pick up and i’m done. i’m usually more ahead than this!

    My open sky account is being super finky aka not recognizing my password, even though i have logged in before and its still the same:(:(:( Once i get that figured out, is there anyway i can get a big chocolate instead of vanilla?? I like chocolate so much better!

      i think it’s chocolate and vanilla. try adding cacao powder to the vanilla- it tastes just like the chocolate that way

    Thankfully my shopping is mostly done. The pancakes look great! I got that tea from TJ’s last year and loved it! Especially for the price! But apparently everyone else did too because I haven’t seen it since. 😛

    I love your bird plate! Super pretty. I’m not much of bird person myself, they are kinda scary. I think I remember hearing that the Crocodile Hunter was scared of chickens. Crazy right? Can’t say I would blame him though!

    So I know you love yourself some good vino but I was wondering if you have any recommendations, I am not a wine drinker and came from a family of non wine drinkers and don’t know where to start!

      You should visit eatdrinkandbehopeful.com. Lauren offers GREAT wine recommendations on a monthly, and sometimes, weekly basis. She has really good taste in wines. May I also suggest going to a tasting at a local wine bar first? You can get a really good idea of what you like/don’t like in terms of varietals without having to purchase an entire glass. 🙂

        I don’t know you, but thanks so much for mentioning my blog. I’m glad people actually enjoy my wine recommendations because I put a lot of time and thought into which ones I want to write about it. I didn’t know people even read them! Thanks so much for reading!

        As for Laura-I would try whites first and reds with very little tannins. Those are usually good ones to start off on.

        Gina-great looking pancakes..makes me want chocolate and peanut butter!

      try riesling- it’s sweet and slightly bubbly. there’s a brand called “relax” (blue bottle) that i LOVE. for try an organic shiraz 🙂

    Oh and review on the eggless nog is that it was perfect!!!!!!!!!!!! I ruined the first batch because 1 c. of rum was just a wee bit to strong for me but the second batch without the rum was AMAZING <3 Thanks so much for the recipe!
