Thanksgiving Leftovers: Sweet Potato Biscuits

Hi guys! How are you? Hope youโ€™ve had a glorious day Smile

I started mine off with a dip into the cashew butter, a piece of brown rice toast and a smoothie with Sun Warrior, almond milk and organic berries

breakfast

+ a yoga practice with Rob at Full Circle. It was a more restorative practice, but still made me sweat like a monkey. My toe is still broken (and purpleโ€ฆ and crooked) from when I broke it on my birthday, and when he was helping me hold my legs up in handstand, I kept thinking โ€œPlease, please donโ€™t look at my toe.โ€ It looks terrible but doesnโ€™t hurt. A trip to the doc will be happening soonโ€ฆ

Thoughts of these made it all better though:

biscuits

Gluten-free vegan-able, Sweet Potato Biscuits

biscuits (2)

These are perfect for Thanksgiving leftovers!!

Sweet potatoes are pretty much never leftovers (or do-agains as I like to say) in our house. If we have a baked sweet potato from the night before, Iโ€™ll usually eat it cold out of the fridge while I decide what I want for breakfast Winking smile Thanksgiving is pretty much the only time weโ€™ll have surplus sweet taters in our house, which makes this a great recipe to change things up a little. If you donโ€™t have sweet potato puree on hand, the canned stuff is great too.

biscuits (4)

Makes 6 large biscuits

1 1/2 C Bobโ€™s red Mill GF Baking Mix (spelt flour or wheat would be lovely too)

3 1/4 t baking powder

1/2 t xanthan gum (can omit if you arenโ€™t using gluten-free flour)

3/4 C sweet potato puree (a la can or leftover from Thanksgiving)

can

1/2 t salt

Stevia to taste

1/3 C milk of choice (I used almond)

3 T butter (I used organic butter, but Earth Balance would be lovely too)

1. Preheat the oven to 375. In a bowl, add the flour, xanthan gum, sea salt, Stevia and baking powder. Mix well,

2. Add the butter (which should be cold and diced), and using a pastry cutter, knives or your fingers, cut in the butter until the mixture resembles little pearls. This is what will give the biscuits the flaky layers.

flour

3. Add the sweet potato, milk and stir well.

4. Roll onto a floured surface, about 1 1/2 in high. (I cover the counter with plastic wrap or you could use a large cutting board)

dough

5. Use a biscuit cutter to cut out the biscuits and place them onto a greased cookie sheet.

biscuits (3)

Donโ€™t have a biscuit cutter? I donโ€™t either. A glass or can works nicely Smile

6. Bake for 10 minutes at 375, or until golden brown and delicious.

7. Eat warmโ€ฆ butter/honey/jam optional Smile

biscuit

Please let me know if you try these! Hope you love them as much as I did.

Iโ€™m back to work but Iโ€™ll see ya in the morning!

Stay tuned for more Thanksgiving leftover ideas in the next week Smile

xoxo

Those look amazing! I’m curious, is there any reason you’re using more butter now instead of EB?

    • Fitnessista on November 17, 2010 at 10:32 pm

nope, just thought i’d change things up a little

  6. Carolyn on November 17, 2010 at 8:41 pm

Those look AMAZING!!! And so simple too!
I’m definitely a HUGE fan of the sweet potato… eating some sweet potato fries right now, as a matter of fact… ๐Ÿ˜‰

  8. Caitlin (EatFeats) on November 17, 2010 at 9:30 pm

Sweet potatoes and biscuits–that sounds like the best combination! One year, we had A LOT of leftover sweet potato casserole at our company Thanksgiving party and I got to take it allll home. O m g, best week of my life–there was a lot of “sweet potato straight from the fridge” that year.

  9. lindsay on November 17, 2010 at 9:40 pm

ohhh great recipe! I bet they would be good with pumpkin or squash too!
    thanks gina.

  11. jen on November 17, 2010 at 9:40 pm

These look great! I looovvvveeee sweet potatoes. My daughter can’t have them – ever since she was a baby, starting with jarred sweet potatoes and continuing to now with real sweet potatoes (she’s 13), she throws up everything in her stomach about an hour and a half after eating them. I feel really sorry for her because sweet potatoes are one of my favorite foods. My all time favorite food is peanut butter, which my son is allergic to (!!) I have to wonder if they developed these allergies because I ate so much of these foods when I was pregnant ๐Ÿ™‚
Anyway, how much stevia do you use? I am new to stevia – do you use liquid?
Thanks – I love your blog. Just came across it a couple of weeks ago and am hooked!

    • Fitnessista on November 17, 2010 at 10:30 pm

      hey jen,
thanks so much for saying hi! what a bummer that your daughter is allergic to sweet potatoes!
i use the powder stevia but also love the liquid. i used about 6 servings for the recipe, but don’t measure it

      • LisaG on November 19, 2010 at 8:20 am

I wonder if she could use pumpkin?

        • Fitnessista on November 19, 2010 at 10:17 am

yup! that would totally work ๐Ÿ™‚

  12. Michelle @ Give Me the Almond Butter on November 17, 2010 at 9:49 pm

  13. Mary @ Bites and Bliss on November 17, 2010 at 10:08 pm

These sound awesome!! I bet they’d work well with pumpkin..it’s much easier to find than SP puree around here. Wow, no way could I have said that a few months ago!

  14. rebecca lustig on November 17, 2010 at 10:42 pm

whoa, i just realized ive never tried to make biscuits. i’ve made challah, cuban bread, pizza dough, naan. but biscuits?! negative!

    thanks for the inspiration

  15. Averie (LoveVeggiesAndYoga) on November 17, 2010 at 10:44 pm

Oh these look great…Scott would adore those!

your teacher looking at your toe? Nah. I don’t think that’s what he would choose to focus on, truly ๐Ÿ™‚ And when I assist students I always am looking at them for alignment, symmetry, where there body is falling in a plane in space so that I can give a better assist, that type of thing..not the toes so much ๐Ÿ™‚

  16. Gina on November 17, 2010 at 11:28 pm

Thanks for the great recipe!! I wonder if I could just use some of my baby’s jarred sweet potatoes?!?!?! haha Love your blog, I’ve gotten so many great recipes from you and am actually starting to lose weight!!! YAY And, I owe it all to you!!

  17. Dee on November 18, 2010 at 12:26 am

Ooh this sounds great! I’ll definitely be trying this!

  18. Amanda on November 18, 2010 at 12:32 am

Sorry about your broken toe! I broke my pinky toe in August by stubbing (read: slamming) it into a vacuum cleaner that was propped against the wall. Pretty random eh? It hurt like hell and my foot turned a few different colors. The worst part was that I was in the middle of training for a race and could not run for the life of me. It’s all healed now…. but it’s kinda crooked and hurts when it rains…..

  19. The Pilot on November 18, 2010 at 12:58 am

The sweet potato biscuits look insane! They’re just one more reason to come home to your butt soon. Ha, your yoga teacher better keep his eyes on your toe ๐Ÿ˜‰

    • Fitnessista on November 18, 2010 at 8:17 am

      hahah! i love you

  20. Tracey @ I'm Not Superhuman on November 18, 2010 at 8:14 am

    These look great!

I ripped my toenail out from the root when I was getting out of the shower months ago. (Yes, it killed. Yes, I’m a total klutz.) Now, my nail looks funky but doesn’t hurt. I’m always self-conscious when people look at my feet. Toe nails take so long to grow!

  21. CaSaundra on November 18, 2010 at 8:34 am

What a good idea–I love adding sweet potato or pumpkin to different things ๐Ÿ™‚

  22. Chelsea @ One Healthy Munchkin on November 18, 2010 at 8:51 am

  33. Rachel on August 28, 2011 at 10:02 pm

OMG. First time using a pastry cutter, first time baking anything from scratch, first time dealing with dough period = OMG So Good. The recipe forgot something though, it serves one, not six. Haha! Great recipe!

    • Fitnessista on August 29, 2011 at 1:20 am

      hahah!! love that ๐Ÿ™‚

  34. Cerissa on March 14, 2012 at 9:06 pm

I’m getting ready to put these in the oven, but I’m a little worried… apparently it is not a good idea to use a warm sweet potato straight out of the oven! :/ Fingers crossed it still works, though I suppose they might not be fluffy, I hope they will still taste okay!

  35. ashley on June 10, 2012 at 4:10 pm

I pined your sweet potato biscuit recipe. I can’t believe I haven’t made them before. http://pinterest.com/pin/78039006013607038/
