8/16: What I Ate Wednesday

Wait, I’m late to the “What I Ate Wednesday” party? By how many years? Oh, well let’s not think about that ๐Ÿ˜‰

I’ve never been a huge fan of posting all of my eats. For one, I’m usually racing around grabbing food as I go -to think of plating it up beautifully and snapping a picture, well I’ve probably finished the meal by then- and my days vary so much depending on if it’s a work day or a rest day. Also, my eats are pretty boring for the most part. I’ve just stuck with posting the more interesting things, products I love or new-to-me combos/recipes and I like to think it’s been a good mix over here on the blog.ย 

I’ve had a few requests for a post on what a day of meals looks like for me, and since today was a pretty “normal” day -I taught a 45-minute Zumba class, and 45-minute workouts are the standard, unless it’s a rest day (two per week)- I thought it would be fun for a post.ย 

Breakfast:

Cantaloupe

Coffee with 1/2 a cantaloupe (shared with Liv)

and an egg scramble with chicken breast, 1 egg, veggies and my new spicy obsession

Scramble

Mid-morning snack: Breakfast cookie with defrosted berries on top (ate at work about an hour before Zumba)

Bfast cookie

More work snacks/lunch:

Work stuff

Salad beast with greens, goat cheese, lentils, turkey, Bragg’s dressing, chocolate coconut water, my favorite gum (minty fresh for when I’ve eaten said salad and have to assist classes), music, favorite water bottle

Afternoon:

Eggs and coffee

Two steamed eggs (they were cooling off in their icy bath when I took the pic) -saved one yolk for Oliv since she loves the yolk- and half-caf coffee.

Two of the chocolate chip cookies that magically appeared at work:

My favorite post-work snack while making dinner:

Popcorn

dinnertime mix of chicken sausage (3), wilted kale, zucchini and a can of organic garbanzo beans, seasoned with olive oil, salt, pepper, garlic, balsamic, oregano, Dijon and cayenne.

1/2 for dinner tonight, 1/2 for lunch tomorrow:

Bowl of goodness

So there ya go! A day of eats. The only thing that’s kind of unusual is that today was very animal protein-heavy. Usually I have maybe 1 chicken or turkey serving each day, but today was lots of eggs and poultry. Guess I was still craving protein after last night’s rainy day workout?

But chocolate and coffee? Standard tools for a little pep in my step.

    I’m obsessed with that chili garlic sauce too! My husband and I randomly picked it up a few months ago when we were replacing our bottle of sriracha and we have since gone through a ton of those little jars. It’s so good on eggs and pretty much anything! ๐Ÿ™‚

    Looks like a tasty day of eats – especially the eggs with sambal oelek. I’m hooked on that stuff too!

    Also, this post makes me want a breakfast cookie. Gotta get on that. ๐Ÿ™‚

    I often eat eggs twice in one day. Scrambled in the AM and an egg salad for lunch. Gotta love that protein ๐Ÿ™‚

    My day of eats?…In California they are big on frozen yogurt I found out today-being from MN it’s not that popular!

    Aside from a delicious serving of that mid-day, I had egg whites and 2 strips of turkey bacon for breakfast, chop salad with buffalo dressing for lunch, and grilled veggie co-bobs for dinner with cauliflower, tomato, broccoli, radish, and chopped asparagus ๐Ÿ™‚ (with a light drizzle of olive oil of course ๐Ÿ˜‰ )

    I need to start buying two cartons of eggs – 1 to hard boil and the other for everything else – because I love them so much but use up all the eggs before I get a chance to HB them! It’s cool seeing a day of your eats. I don’t like it when blogs post their meals every day, but for some reason I really enjoy WIAW posts.

    Today I ate: plain Greek yogurt w/ banana + pb; brown rice and chickpea salad (with assorted veggies and a simple vinaigrette) and cherries; polenta topped w/ marinara, chickpeas, peppers, onions and Romano cheese; waaaaay too many pb spoons (oops).

      same here– i almost always have to go to the store midweek for more eggs. need to just buy two!

    I am egg obsessed! Actually just got done writing about that junky study that came out demonizing them again. Punks. I really want an egg steamer. I do believe I am a good cook, and an even better baker. However. I am SO inconsistent with my hard boiled eggs! The worst is when they are not done. Yuck. I do the 12 minute thing and an ice bath, but sometimes they are good. Others..not so much! An egg steamer would be yet another kictchen appliance I really don’t need that I have no room for ๐Ÿ˜‰

    I never have done a WIAW either. Perhaps one day. I loved reading about your eats! You are so balanced and healthy and eat so well for your active lifestyle! Thanks for sharing and being so real, Gina!

      If you have a pasta pan with the strainer insert you can use that, I just put a little water in the bottom and steam the eggs 20 mins and they come out perfect every time.

    Okay let’s see here… I had pineapple for breakfast; Larabar snack; steamed broccoli/cauliflower + fruit salad + mashed carrots for lunch; carrot & raisin salad for a snack; “pizza” (goat cheese + onions + olives baked onto a portobello mushroom) and a giant salad beast for dinner; gluten free pretzels + tofee chocolate for dessert. =]

    I love eggs too! Did you read about this new study that egg yolks are as bad for you as smoking? I find that ridiculous, but was wondering what you thought about it?

    It’s almost 10, but now I really need to a) make a breakfast cookie and b) go to World Market for chili garlic sauce.

    Currently working on popcorn and wine. Because it’s Wednesday.

    Those berries on top the breakfast cookie look like TJs to me – they are great, all their frozen berries are.

    Typing the words breakfast cookie takes me back to 2009 and having a barely walking little peanut and I remember making them way back then. Said peanut is going into 1st grade in a month! Wow…time flies.

    I’ve been making my protein powder into cookie dough. Bananas + frozen fruit + protein powder.
    Lunch is canned tuna and a can of unsalted green beans.
    Supper is steamed yellow squash and grilled chicken.
    Snacks are puffed rice cereal, kale chips, and my microwave protein pumpkin bread recipes!

    My Wednesday eats:
    B: overnight oats made with coconut milk, SW protein powder, and blueberries from my yard
    S: boiled egg
    L: slice homemade pizza w/ chicken, artichokes, wilted kale, and sundried tomatoes, a little cheese and a salad on the side- romaine, avacodo, cherry tomatoes, w/ balsamic
    S: Yogurt w/ peach
    D: massaged kale salad w/ salmon and cherry tomatoes with a side of mashed sweet potatoes

    P.S You have now sparked a MAJOR craving for a cold juicy cantaloupe!

    All your food looks so delicious!

    For breakfast I had chicken curry ontop of a baked potato, lunch was toast (1 slice with PB and chia seeds, the other with mashed avocado) and a smoothie (coconut/almond milk, greek yogurt, frozen mangos), dinner was out with the girls (2 Corona Lights, buffalo wings, veggie wrap, side of broccoli). ๐Ÿ™‚ I’ve become a huge fan of non-traditional breakfasts lately for some reason.

    I just got the Tone It Up gluten free plan so I’ve been trying ideas from it. I had: Metabolism drink from the Beach Babe Edition (pineapple juice, apple cider vinegar, honey, lime juice), protein pancakes, a white peach, turkey and hummus in a collard green roll-up, a Think Thin bar (really good snack if you’re gluten free), and lemon chicken with quinoa and kale for dinner (with a few Taro chips afterwards – yum). Also a Kombucha and iced coffee mixed in there somewhere.

    Since we both have a passion for all things spicy I thought I’d share this litte tip with you if you don’t do so already. Popcorn + cayenne = AMAZING! I make my popcorn on the stovetop, put a dash of sea salt and a few shake of cayenne, shake it all about and voila! I’m addicted. ๐Ÿ™‚

    Thanks for the post!…I am a big snacker as well and like to get ideas to change it up. Wednesday I had a protein shake with Visalus powder, almond milk and frozen berries for breakfast along with a coffee once I got to work. Midmorning snack was supposed to be greek yogurt with fruit but surprisingly wasn’t hungry until lunch so I saved it for the next day. Lunch was a grilled chicken salad, afternoon snack was a handful of almonds and green tea. And dinner was 2 eggs broiled on top of a nest of quinoa, corn, black beans and S&P. I made sure the egg yolks were still runny since it really pulls everything together in this meal. I love eggs….I could eat them at every meal! Oh and I had some watermelon after dinner too.

    hmmm yesterday I didn’t eat that much actually– I had 2 wakes to go to :/

    breakfast was a smoothie, snack- peach and zico!!, lunch- chickpea apple salad, snack- 1/2 grapefruit, then dinner I got out at the diner with my family and managed to find a veggie salad

    it worked lol love your eggs as snack idea!

    I love your eats – you make me feel normal! I definitely eat at least that much on days I work out – some times more! Some of the people who participate in the WIAWs leave me feeling bad about myself because I eat at least 2x as many calories, even on my healthiest, feeling good days. I know it isn’t intentional on their part, but as a result, I mostly don’t read blogs that do it every week for that reason.

      Irene I DEFINITELY agree with you!!! I eat wayyy more than most of the bloggers who post WIAWs. Don’t let those posts make you feel bad about yourself! Everyone’s bodies are so different, and you need to honor your hunger =) I am at a healthy weight and probably eat at least double the calories of most of those bloggers on a daily basis..

    I love HOT!!!!! I’m a sriracha on everything kinda girl, so I must try this new find. What I ate Wednesday:
    PreWorkout- 1/2 scoop choc protein, 1tbsp ea whites and wowbutter(allergic to all nuts), 1 rice cake
    Brkfst- Food for life brn rice tortilla w/2tbsp ea blk beans and daiya cheese, handful of spinach and 3/4c whites, spice
    AM snack- 1/3c oats, 1/3 c ea rice milk and water, 1scoop cinnamon vanilla protein
    Lunch-1c kale, 1/2c quinoa, 1/4c ea corn and blackbeans, 1/4 haas avocado, red onion, 4 oz shredded chx brst, 2tbsp bbq/yogurt dressing, spice
    PM snack-3oz lean grnd tky, 1c mixed steamed veggies, spice
    dinner-4oz tilapia, 1c steamed greenbeans, spice
    bedtime-1 scoop choc casein, 1tbsp ea whites and wowbutter
    *1 hr weight training a.m. and 45min hiit cardio post dinner

    I love reading your eats!! all look great ๐Ÿ™‚ I love zumba days bc I tend to go a bit heavier on the carbs ๐Ÿ™‚ That breakfast lookie is genious, by the way… and hot chilli sauce? BOMB. I can’t get enough of that or Sriracha. My day of eats was pretty boring since I eat nothing but salads and cereal on my double zumba days.

    Funny you did this today! I am planning to jump on the bandwagon next week. My eats yesterday:

    Breakfast — Milky gingery tea, Chewy granola bar (ugh), banana, black coffee
    Lunch — Homemade tempeh vegetable stew
    Treat — More of the tea, two Hershey’s Dark Chocolate Kisses
    Dinner — Curried Rice Salad with garbanzo beans, a handful of tortilla chips

    I always drink tons of tea (no milk or sugar) throughout the day, usually 4 to 6 cups total.

    Hmm, so yesterday: I was camping so my eats were definitely off. It involved waffles for breakfast, steak for dinner and lots of pita chips in between (pita chip lunch), with some carrots and hummus, a cheese string and a few bites of a brownie thrown in there. Mmm, vacation.

    We normally do Indian food Wednesday for dinner, but sadly that didn’t happen this week. I subbed with Mexican restaurant….can’t go wrong there!

    breakfast: oatmeal, canteloupe, green tea
    morning snack: goat yogurt w/ protein powder, berries and an AB blob
    lunch: salad beast with greens, grilled chicken, beans, cuke, tomato, banana peppers, nutritional yeast and balsamic vin/olive oil
    snack: lara bar + watermelon
    dinner: shrimp skewers on top of greens with a little salsa for dressing + my body weight in chips and guac ๐Ÿ™‚
