Soft and Healthy Oatmeal Peanut Butter Cookies
Sometimes you just need a cookie.

I was really hankering for cookies the other night, and since my little sous chef is always willing to help me bake, I thought it would be fun to sneak off to the kitchen to make some cookies.
As far as the cookies go, Iโll let the pics do the talking since my mouth is full.
These ones are chewy, with melted chocolate chips, and also remarkably light for how decadent they taste. We added almond meal to the dough which always gives cookies a pleasant nutty taste, and satisfying oats.

Soft and Healthy Oatmeal Peanut Butter Cookies
Ingredients
Scale
- 1 cup oats
- 1/2 cup almond meal
- 1/4 tsp cinnamon
- pinch sea salt
- 1/2 cup chocolate chips
- 2 tbsp melted butter
- 1/4 cup maple syrup
- 1/4 cup peanut butter
- 1/2 tsp vanilla
Instructions
- Pre-heat the oven to 350 and spray a cookie sheet with olive oil or nonstick spray.
- In a large bowl, combine the oats, almond meal, cinnamon, sea salt and chocolate chips. Mix well.
- In a separate bowl, whisk the melted butter, maple syrup, almond butter and vanilla until well-combined. Add the wet mixture to the dry and stir well.
- Make cookie shapes onto your cookie sheet (I like to use a melon ball scooper) and bake for 10-12 minutes until set and light golden brown. Remove from the oven and allow to cool one minute on the sheet before transferring to cooling racks. Enjoy!!
I was originally planning on freezing some to have as snacks, but I think we all know how that worked out.

Hey Gina. I want to make these today the title says they are oatmeal peanut butter cookies, but there is no peanut butter listed as an ingredient. Is this a typo? I’m confused.

Made these today! So good! Very easy to whip up, took about 10 min to throw it all together. I’m a breastfeeding mom on maternity leave. I’ve had a crazy sweet tooth lately and these were perfect! Thanks!

Ahhh these have almost everything I love in cookie form. I wonder if I could sub honey or agave in place of maple syrup?
yep! honey would be sweeter, so i would start with less and see how they taste
Is almond meal the same as almond flour? I have never seen almond meal in the stores. yummy
almond meal is ground up almonds -they have it at trader joes- and almond flour is usually dehydrated and ground almond pulp. they’re usually interchangeable in recipes though

Finally (!) made these and I got 12 decent sized cookies ๐ I did have to add one egg as I found the batter didn’t stick together without.
Made these tonight substituting some Justin’s almond butter instead of peanut butter – absolutely delicious! The perfect after dinner treat to enjoy while sipping a little vino and watching The Voice ๐
These look great! I’m going to make them for and use them for a pre-workout meal when I’m having a sweet tooth.
I made these tonight and holy moly are they good! I needed a lower sugar treat cause I’m having a hard time with sugar after all the Halloween treats and these are perfect. I added a mashed banana to the dough cause it seemed a little loose and they firmed up perfectly!

I tried making these last night and failed. Maybe it’s bc I subbed Coconut Flour for almond meal, didn’t use enough butter, subbed Peanut for Almond Butter and had to mix Maple and Date Syrup together bc I ran out of Maple Syrup. I found that the dough didn’t bind that well together ๐
But they smelled really good and tasted ok!

Coconut flour will do that. It’s not a great sub for other flours because it’s very thirsty and will suck the moisture out. I learned the hard way with that one!

I have made these cookies a few times now for friends and my dads girlfriend said this is the best cookie she has ever had!! She has many food allergies like me so I am always trying your recipes and these ones are definitely a hit! I actually made them with almond butter because I thought the peanut butter was a type HAHA and theyre great!! I will be making these with PB this week!
