Thanksgiving Leftovers: Sweet Potato Biscuits
Hi guys! How are you? Hope you’ve had a glorious day
I started mine off with a dip into the cashew butter, a piece of brown rice toast and a smoothie with Sun Warrior, almond milk and organic berries
+ a yoga practice with Rob at Full Circle. It was a more restorative practice, but still made me sweat like a monkey. My toe is still broken (and purple… and crooked) from when I broke it on my birthday, and when he was helping me hold my legs up in handstand, I kept thinking “Please, please don’t look at my toe.” It looks terrible but doesn’t hurt. A trip to the doc will be happening soon…

Gluten-free vegan-able, Sweet Potato Biscuits
These are perfect for Thanksgiving leftovers!!
Sweet potatoes are pretty much never leftovers (or do-agains as I like to say) in our house. If we have a baked sweet potato from the night before, I’ll usually eat it cold out of the fridge while I decide what I want for breakfast Thanksgiving is pretty much the only time we’ll have surplus sweet taters in our house, which makes this a great recipe to change things up a little. If you don’t have sweet potato puree on hand, the canned stuff is great too.
Makes 6 large biscuits
1 1/2 C Bob’s red Mill GF Baking Mix (spelt flour or wheat would be lovely too)
3 1/4 t baking powder
1/2 t xanthan gum (can omit if you aren’t using gluten-free flour)
3/4 C sweet potato puree (a la can or leftover from Thanksgiving)
1/2 t salt
Stevia to taste
1/3 C milk of choice (I used almond)
3 T butter (I used organic butter, but Earth Balance would be lovely too)
1. Preheat the oven to 375. In a bowl, add the flour, xanthan gum, sea salt, Stevia and baking powder. Mix well,
2. Add the butter (which should be cold and diced), and using a pastry cutter, knives or your fingers, cut in the butter until the mixture resembles little pearls. This is what will give the biscuits the flaky layers.
3. Add the sweet potato, milk and stir well.
4. Roll onto a floured surface, about 1 1/2 in high. (I cover the counter with plastic wrap or you could use a large cutting board)
5. Use a biscuit cutter to cut out the biscuits and place them onto a greased cookie sheet.
Don’t have a biscuit cutter? I don’t either. A glass or can works nicely
6. Bake for 10 minutes at 375, or until golden brown and delicious.
7. Eat warm… butter/honey/jam optional

Sweet potatoes and biscuits–that sounds like the best combination! One year, we had A LOT of leftover sweet potato casserole at our company Thanksgiving party and I got to take it allll home. O m g, best week of my life–there was a lot of “sweet potato straight from the fridge” that year.

These look great! I looovvvveeee sweet potatoes. My daughter can’t have them – ever since she was a baby, starting with jarred sweet potatoes and continuing to now with real sweet potatoes (she’s 13), she throws up everything in her stomach about an hour and a half after eating them. I feel really sorry for her because sweet potatoes are one of my favorite foods. My all time favorite food is peanut butter, which my son is allergic to (!!) I have to wonder if they developed these allergies because I ate so much of these foods when I was pregnant 🙂
Anyway, how much stevia do you use? I am new to stevia – do you use liquid?

i use the powder stevia but also love the liquid. i used about 6 servings for the recipe, but don’t measure it

your teacher looking at your toe? Nah. I don’t think that’s what he would choose to focus on, truly 🙂 And when I assist students I always am looking at them for alignment, symmetry, where there body is falling in a plane in space so that I can give a better assist, that type of thing..not the toes so much 🙂

Sorry about your broken toe! I broke my pinky toe in August by stubbing (read: slamming) it into a vacuum cleaner that was propped against the wall. Pretty random eh? It hurt like hell and my foot turned a few different colors. The worst part was that I was in the middle of training for a race and could not run for the life of me. It’s all healed now…. but it’s kinda crooked and hurts when it rains…..
The sweet potato biscuits look insane! They’re just one more reason to come home to your butt soon. Ha, your yoga teacher better keep his eyes on your toe 😉

I ripped my toenail out from the root when I was getting out of the shower months ago. (Yes, it killed. Yes, I’m a total klutz.) Now, my nail looks funky but doesn’t hurt. I’m always self-conscious when people look at my feet. Toe nails take so long to grow!

I love biscuits esp sweet potatoe; gotta be good. I hurt a lot of areas this morning falling down stairs. Usually I carry my heels downstairs to put them on, well not today oops. Pretty bruises!

I make a recipe like this one all the time, but in mine you add in orange zest and replace some of the milk with fresh squeezed oj. YUM! I think I’ll make these for dinner tonight and try your recipe!

OMG. First time using a pastry cutter, first time baking anything from scratch, first time dealing with dough period = OMG So Good. The recipe forgot something though, it serves one, not six. Haha! Great recipe!

I’m getting ready to put these in the oven, but I’m a little worried… apparently it is not a good idea to use a warm sweet potato straight out of the oven! :/ Fingers crossed it still works, though I suppose they might not be fluffy, I hope they will still taste okay!
