Showing the coconuts who’s boss

Hey guys! Howโ€™s your Monday going?? Iโ€™m so glad youโ€™re enjoying the pilot’s post so farโ€”I loved waking up to that this morning ๐Ÿ˜€ Heโ€™s a keeper, right? ๐Ÿ˜‰

So this morning, I woke up after a host of terrifying nightmares (I have NO idea where they came from, but it was horrible and I was awake most of the night) and went to meet Michelle for our daily workout sesh. I had the other half of yesterday’s Larabar before bumbling out the door ๐Ÿ˜€

Hereโ€™s todayโ€™s workout breakdown:

Elliptical Level 5 25 minutes
Treadmill Hill walking, 4.0mph and incline 4.0-11.0% 20 minutes
Weighted plie squat 12 lbs 3 sets of 12
Stability ball hip raise Body weight 3 sets of 12
Bosu calf raises Body weight 3 sets of 12
Side step up Body weight 3 sets of 12 on each side
Wall squat Body weight 3 sets of holding for 45 seconds
Total time: 1 hr 15 min

When I got home, I was excited to try a new-to-me Vega product: the Whole Foods Optimizer in Chai flavor. Since I ran out of the smoothie infusion (and cried a little because it was gone), I was rummaging through my protein powder stash and found two packs of the Whole Foods Optimizer.

007

Vitamixed with almond milk, sea salt, Stevia and cinnamon, it was pretty glorious and I love the nutritional info.

008

Perfect pre-coconut hacking fuel ๐Ÿ˜€

Thatโ€™s right, per Monday tradition, we each got to hack open a case of Young Thai coconuts.

009

And instead of letting those coconuts take advantage of me, I made them my biotch.

010

A whole case. And I didnโ€™t gash any fingers open. Triumph!

We scooped the meat out and reserved the coconut water, and then got to work on the cinnamon-spiced Briagdeiro we started on Friday.

Chocolate cinnamon spicy deliciousness.

011

We rolled them into balls and then into cacao nibs.

013

It was a very messy job ๐Ÿ˜‰

012

But they came out beautifully

014

And Iโ€™m beyond ready to snack on one ๐Ÿ˜€

015

After finishing the truffles, we got started on the raw blue corn tostadas weโ€™re going to finish tomorrow.

We made the tostada shells:

016

the yellow squash (seasoned with sea salt, pepper and fresh oregano)

017

And the sauces: an orange pepper cream and queso blanco

018

Lunch was ahhhhmazingโ€ฆ

SALAD BEAST!

020

Mine had arugula, spinach, dulse, cucumber, zucchini, red bell pepper, hemp seeds, half an avocado, scallions, red pepper flakes and some spicy almond dressing that I made

019

(Splash of nama shoyu, sesame oil, lime juice, soaked almonds โ€“I would prefer almond butter but we were out-, a shallot, scallions, cayenne pepper, a splash of agave, and a little water)

While I was feasting on my salad, I realized something: I donโ€™t like sprouts. They have a strange funny taste to me. Theyโ€™re fun to grow, but not so much to eat. Iโ€™m also not a fan of celery AT ALL. It has to be cooked or mixed with something, or I wonโ€™t eat it. Are there any healthy foods you despise??

Well Iโ€™m going back to class. Enjoy the rest of your day, lovely bloggies!

xoxo,

G$

Those little balls of goodness look soooo yummy!!! Let’s see…I don’t like jicama, bananas or olives. I used to hate mushrooms too but somehow I got over it and now I love them!

  2. cjbrownsc on September 21, 2009 at 2:10 pm

I don’t like celery either! My husband likes to use them while making spaghetti sauce, and I always have to pick them out!
I had sprouted chickpeas once that an Indian friend gave me and I thought they tasted too green(?)-if that’s an accurate description. And I also don’t like onions – will cook with them, but won’t eat them.
But everything else, is pretty much fair game!

  3. Heather on September 21, 2009 at 2:10 pm

So glad you finally conquered the coconuts! Y’all are my heroes because I am terrified of them and have refused buying one for fear of losing a hand.

Those chocolate balls? LOOK AMAZINGGGG! Wow.

Funny because I don’t like sprouts or celery, either! I put celery in my juice once and the entire thing tasted like DIRT. I do like sprouted quinoa but that’s the only thing. A little too earthy for my tastes. Besides that, I am pretty much open to new things.

I think I’m gaining weight just looking at those truffles! As for healthy foods, eggplant is not my favorite and even the smell of papaya makes me a little nauseous (don’t know why).

The most beautiful mess I’ve seen to date ๐Ÿ™‚

  6. Jessica @ How Sweet It Is on September 21, 2009 at 2:30 pm

OMG those chocolate spice thingies look amazing! I want to eat them thru the screen! As far as healthy foods I don’t like…I am not a fan of vegetables in general! I know, GASP!

  7. Krista on September 21, 2009 at 2:32 pm

EGGPLANT! Ewww. And I wish I liked it because it’s my favourite colour. I don’t much care for celery, either. Like you, it has to be mixed in a sauce or stew for me to eat it.

  8. Erica on September 21, 2009 at 2:43 pm

Hey chica- nice job on the coconuts! The truffles look amazing (totally worth the dirty hands ;)). I do not like mushrooms…ick!

  9. Emily on September 21, 2009 at 2:44 pm

Hey Gina! The pilot is definitely a keeper, I was cracking up at his post this morning. ๐Ÿ™‚

I’m with you on the celery – YUCK!

  10. K on September 21, 2009 at 2:44 pm

I agree with you on celery! It’s so gross – all stringy and yuck ๐Ÿ™

It may be messy but it looks worth it! Yum!!

  11. Mara @ What's For Dinner? on September 21, 2009 at 2:53 pm

WAY TO GO!!!!!! You show those coconuts who’s boss ๐Ÿ™‚ Those cocoa bites look amazing

  12. Stephanie on September 21, 2009 at 3:19 pm

I HATE raw celery and water chestnuts with a passion — something about their texture and taste is bleckkkk to me!!! Chocolate + cinnamon sounds delish – love the messy hands haha ๐Ÿ™‚

  13. Molly on September 21, 2009 at 3:22 pm

I actually only like celery straight up by itself. i can’t eat it in salads or cooked in stews or witha ny sort of condiment.
other than that, i’m pretty open minded. if it’s good for me, i’ll find a way to like it ๐Ÿ™‚

  14. Sarah on September 21, 2009 at 3:34 pm

I actually really like sprouts and celery, ha ha!

I’m trying to think of what I don’t like…the things I don’t like aren’t really health foods (bleu cheese, cheesecake, cottage cheese — I’m catching a theme here).

    So I guess none?

  15. Dawn (HealthySDLiving) on September 21, 2009 at 3:35 pm

Yay for no more coconut cuts!!!
I’m the opposite with celery. I can eat it plain but absolutely hate when it’s mixed in with my food!

  16. Chloe (Naturally Frugal) on September 21, 2009 at 4:10 pm

    Congrats on no more cuts!

I’m with you on the celery, I really only like in tuna salad and that’s about it. Other healthy food I don’t like? Apples. They make my stomach hurt and I feel like I always need to eat them with something.

Hopefully you’ll get some better rest tonight!

  17. Yvonne on September 21, 2009 at 4:18 pm

I LOVE chocolate spice! It’s such an amazing combo.

Do you have a search engine anymore with this new layout? I was trying to search for one of your slow cooker recipes (which I ADORE and have tried most of them) but couldn’t find the search! Or maybe I’m just blind. . .

  18. Yvonne on September 21, 2009 at 4:19 pm

Wait, duh, I just saw that you have a slow cooker recipe tab. ๐Ÿ™‚ But I’m still curious about the search engine?

    • Fitnessista on September 21, 2009 at 10:44 pm

      hey yvonne!
it’s kinda hard to see but there’s a search bar on the right hand upper corner of the bloggy ๐Ÿ˜€

  19. Jenny on September 21, 2009 at 4:39 pm

I never thought I would ever say this but, can I lick your hands?

  20. Jenna on September 21, 2009 at 5:24 pm

those cacao bliss deserts look invredible gina!

LOL – way to make them your biotch – that was too funny!

I am just constantly in awe, every time you post! You have been making some of the most beautiful, fantastic looking stuff while at 105. can I hire you to be my personal chef? can i pay you in wine?! ;P

    • Fitnessista on September 21, 2009 at 10:44 pm

omg, when can i start?? shiraz is my favorite, just so you can stock up ๐Ÿ˜€

  22. Averie (LoveVeggiesAndYoga) on September 21, 2009 at 6:07 pm

Healthy products I don’t like? Yeah that Vega stuff that you dig, girl. I dont like that stuff, albeit I’ve only tried the “chocolate” mix of the hemp/pea protein combo one. I dont think it was called Smoothie Infusion. But there’s also a berry flave that they sent me that I’m frankly scared to try b/c the choco one was gaggy to me LOL. Michelle Pure2Raw has posted before she likes it, too…guess I’m just the oddball ๐Ÿ™‚ And I dont like dulse either b/c it’s too salty for me. Another thing I know you and VeggieGirl both love!

Anyway, sorry to hear bout the nightmares, I have the most vivid dreams and sometimes they are awful and I wake up wondering the heck that was all about.

But good deal on the coconuts and you being accident-free! Oh and major props to your sweet man for guest posting for you. Wow, that’s a steppin’ up kinda guy, you’ve got a keeper, but you know that already ๐Ÿ™‚
    xoxo

  23. Annabananabomb on September 21, 2009 at 6:50 pm

mmmmmm chocolate balls. I grew up in Queensland (tropics Australia) and I HATE mangos. just can’t stand the texture and it’s too sickly sweet.

good job on the coconuties ๐Ÿ™‚

  24. Lauren on September 21, 2009 at 8:16 pm

    Congrats on the coconut success!

And the chocolate balls looks like it was a blast to make. I would have been all over those hands if I were you. Licking the spoon (or fingers) is the best part of baking.

Hope you had a lovely day love!

  25. Naomi on September 21, 2009 at 8:32 pm

looks sooo good! i went to an all raw/vegan restaurant that just opened in my town the other day http://www.pranaraw.com it was delish! i had ‘pizza’ and i have no idea how the crust was made but everything was so fresh, colorful and good! I thought of you and the 105 academy!

  26. Shelby on September 21, 2009 at 8:38 pm

    Those balls look scrumptious (TWSS!)!

I despise raw celery! It MUST be cooked or hidden in something for me to eat it. Otherwise I cannot finish the meal. I also dislike papaya and raw mushrooms (unless they are in your raw sloppy joes!)

  27. WholeBodyLove on September 21, 2009 at 8:54 pm

Holy chocolate deliciousness! I wish I was there to taste test those babies!!

  28. Erin on September 21, 2009 at 9:46 pm

You show those ‘nuts who’s boss Gina! Totally just an excuse to say nuts. But honestly, great job girl ๐Ÿ™‚
I love seeing all the stuff you’re creating. Everything is phenomenal.
I don’t like a lot of healthy foods. Like tomatoes and mushrooms. El nasto!

  29. carolinebee on September 21, 2009 at 9:48 pm

OMG the pilot’s post was freakin HILAR…he is totally a keeper ๐Ÿ˜€ I don’t like red bell pep’s- I KNOW i’m a freak but o well lots of other veggies to love!

  30. Meghan on September 21, 2009 at 9:53 pm

I am not a huge celery fan either. I find it kind of pointless! Those balls of chocolate goodness look soooo good!

  31. Meghan on September 21, 2009 at 10:28 pm

Everything looks awesome, as usual! People have been talking a lot about 105 at OUHSC, and I am so excited to tell them I’ve had a chance to try their delicious food…AND gotten free wine and desserts! ๐Ÿ˜€ We just found out today that the speaker at our Dietetic Assn meeting this week will be none other than the owner! SO EXCITED to hear her talk!

    • Fitnessista on September 21, 2009 at 10:42 pm

oh my goodness, you’re going to LOVE dara. she is seriously amazing– so knowledgeable, kind and light just radiates from her. you’ll see what i mean ๐Ÿ˜€

  32. Christabel on September 21, 2009 at 10:31 pm

I love your blog! You are a workout inspiration and I love your healthy outlook on life :). Those truffles look absolutely delicious – if only I ate chocolate!

  33. Suzanne on September 22, 2009 at 12:46 am

Oh yes!! Celery is gross unless it is cooked in a stir fry or with some sort of dip or PB. Eating it alone makes me gag. As do radishes.

  34. Jackie on September 22, 2009 at 2:13 am

Whew, finally a vegetable I love (celery) that you don’t like, I was beginning to feel that I paled in comparison because I didn’t like as many vegetables as you. I read your “About Me” and it reassured me that we all eat differently. I guess you start reading all these food blogs out there and in my case I started to get a little judgemental on my own food choices. As a fellow military wife, and with all the other stresses we face, it’s especially important to eat what makes us feel at our best both physically and mentally!

  35. Jessica on September 22, 2009 at 4:38 am

I’m with you on the celery, unless it’s cooked to death I usually avoid it. I also have a life-long hatred of bell pepper. It’s the only veggie left that I can’t eat in anything (except salsa) but I’m trying to conquer it one baby step at a time.

  36. Sara on September 22, 2009 at 6:08 pm

I looove the chai flavor! usually mix it with a banana, almond milk and ice cubes. so good.
