Showing the coconuts who’s boss
Hey guys! Howโs your Monday going?? Iโm so glad youโre enjoying the pilot’s post so farโI loved waking up to that this morning ๐ Heโs a keeper, right? ๐
So this morning, I woke up after a host of terrifying nightmares (I have NO idea where they came from, but it was horrible and I was awake most of the night) and went to meet Michelle for our daily workout sesh. I had the other half of yesterday’s Larabar before bumbling out the door ๐
Hereโs todayโs workout breakdown:

When I got home, I was excited to try a new-to-me Vega product: the Whole Foods Optimizer in Chai flavor. Since I ran out of the smoothie infusion (and cried a little because it was gone), I was rummaging through my protein powder stash and found two packs of the Whole Foods Optimizer.
Vitamixed with almond milk, sea salt, Stevia and cinnamon, it was pretty glorious and I love the nutritional info.
Perfect pre-coconut hacking fuel ๐
Thatโs right, per Monday tradition, we each got to hack open a case of Young Thai coconuts.
And instead of letting those coconuts take advantage of me, I made them my biotch.
A whole case. And I didnโt gash any fingers open. Triumph!
We scooped the meat out and reserved the coconut water, and then got to work on the cinnamon-spiced Briagdeiro we started on Friday.
Chocolate cinnamon spicy deliciousness.
We rolled them into balls and then into cacao nibs.
It was a very messy job ๐
But they came out beautifully
And Iโm beyond ready to snack on one ๐
After finishing the truffles, we got started on the raw blue corn tostadas weโre going to finish tomorrow.
We made the tostada shells:
the yellow squash (seasoned with sea salt, pepper and fresh oregano)
And the sauces: an orange pepper cream and queso blanco
Lunch was ahhhhmazingโฆ
SALAD BEAST!
Mine had arugula, spinach, dulse, cucumber, zucchini, red bell pepper, hemp seeds, half an avocado, scallions, red pepper flakes and some spicy almond dressing that I made
(Splash of nama shoyu, sesame oil, lime juice, soaked almonds โI would prefer almond butter but we were out-, a shallot, scallions, cayenne pepper, a splash of agave, and a little water)
While I was feasting on my salad, I realized something: I donโt like sprouts. They have a strange funny taste to me. Theyโre fun to grow, but not so much to eat. Iโm also not a fan of celery AT ALL. It has to be cooked or mixed with something, or I wonโt eat it. Are there any healthy foods you despise??

Those little balls of goodness look soooo yummy!!! Let’s see…I don’t like jicama, bananas or olives. I used to hate mushrooms too but somehow I got over it and now I love them!
I don’t like celery either! My husband likes to use them while making spaghetti sauce, and I always have to pick them out!
I had sprouted chickpeas once that an Indian friend gave me and I thought they tasted too green(?)-if that’s an accurate description. And I also don’t like onions – will cook with them, but won’t eat them.
But everything else, is pretty much fair game!
So glad you finally conquered the coconuts! Y’all are my heroes because I am terrified of them and have refused buying one for fear of losing a hand.
Those chocolate balls? LOOK AMAZINGGGG! Wow.
Funny because I don’t like sprouts or celery, either! I put celery in my juice once and the entire thing tasted like DIRT. I do like sprouted quinoa but that’s the only thing. A little too earthy for my tastes. Besides that, I am pretty much open to new things.
I think I’m gaining weight just looking at those truffles! As for healthy foods, eggplant is not my favorite and even the smell of papaya makes me a little nauseous (don’t know why).

OMG those chocolate spice thingies look amazing! I want to eat them thru the screen! As far as healthy foods I don’t like…I am not a fan of vegetables in general! I know, GASP!
EGGPLANT! Ewww. And I wish I liked it because it’s my favourite colour. I don’t much care for celery, either. Like you, it has to be mixed in a sauce or stew for me to eat it.

I HATE raw celery and water chestnuts with a passion — something about their texture and taste is bleckkkk to me!!! Chocolate + cinnamon sounds delish – love the messy hands haha ๐
I actually only like celery straight up by itself. i can’t eat it in salads or cooked in stews or witha ny sort of condiment.
other than that, i’m pretty open minded. if it’s good for me, i’ll find a way to like it ๐

I’m the opposite with celery. I can eat it plain but absolutely hate when it’s mixed in with my food!

I’m with you on the celery, I really only like in tuna salad and that’s about it. Other healthy food I don’t like? Apples. They make my stomach hurt and I feel like I always need to eat them with something.

Healthy products I don’t like? Yeah that Vega stuff that you dig, girl. I dont like that stuff, albeit I’ve only tried the “chocolate” mix of the hemp/pea protein combo one. I dont think it was called Smoothie Infusion. But there’s also a berry flave that they sent me that I’m frankly scared to try b/c the choco one was gaggy to me LOL. Michelle Pure2Raw has posted before she likes it, too…guess I’m just the oddball ๐ And I dont like dulse either b/c it’s too salty for me. Another thing I know you and VeggieGirl both love!
Anyway, sorry to hear bout the nightmares, I have the most vivid dreams and sometimes they are awful and I wake up wondering the heck that was all about.
But good deal on the coconuts and you being accident-free! Oh and major props to your sweet man for guest posting for you. Wow, that’s a steppin’ up kinda guy, you’ve got a keeper, but you know that already ๐

mmmmmm chocolate balls. I grew up in Queensland (tropics Australia) and I HATE mangos. just can’t stand the texture and it’s too sickly sweet.

I despise raw celery! It MUST be cooked or hidden in something for me to eat it. Otherwise I cannot finish the meal. I also dislike papaya and raw mushrooms (unless they are in your raw sloppy joes!)

Everything looks awesome, as usual! People have been talking a lot about 105 at OUHSC, and I am so excited to tell them I’ve had a chance to try their delicious food…AND gotten free wine and desserts! ๐ We just found out today that the speaker at our Dietetic Assn meeting this week will be none other than the owner! SO EXCITED to hear her talk!

Oh yes!! Celery is gross unless it is cooked in a stir fry or with some sort of dip or PB. Eating it alone makes me gag. As do radishes.
Whew, finally a vegetable I love (celery) that you don’t like, I was beginning to feel that I paled in comparison because I didn’t like as many vegetables as you. I read your “About Me” and it reassured me that we all eat differently. I guess you start reading all these food blogs out there and in my case I started to get a little judgemental on my own food choices. As a fellow military wife, and with all the other stresses we face, it’s especially important to eat what makes us feel at our best both physically and mentally!
I’m with you on the celery, unless it’s cooked to death I usually avoid it. I also have a life-long hatred of bell pepper. It’s the only veggie left that I can’t eat in anything (except salsa) but I’m trying to conquer it one baby step at a time.
I looove the chai flavor! usually mix it with a banana, almond milk and ice cubes. so good.
