B-fast Relleno- sneaky giveaway ENDED

Hi friends ๐Ÿ˜€ Howโ€™s your day going? Hope itโ€™s been lovely so far.

Lately in the mornings, Iโ€™ve had to drag Bella out of bed to go outside.

We wake up to my alarm, she covers me in Bella kisses and then she goes back to sleep until Iโ€™m ready to leave for the day. Sheโ€™s not a morning person, either ๐Ÿ˜‰

Since Iโ€™ve been living in Tucson, so many Mexican food memories have come back to me. Tamales, pink cookies from the Mexican bakery, nanaโ€™s homemade tortillas and beans, salsas, etc. etc. etc. For the past couple of days, Iโ€™ve had chile rellenos on the brain. When my family and I would go to Mexico more often we would always stop to have chile rellenos at the mercado. The lady who would make them would spend all day  making chile rellenos- fresh peppers stuffed with cheese and lightly fried. The egg batter was so light and crispy – they would literally melt in your mouth. Definitely swoon-worthy.

So today, the breakfast relleno was born ๐Ÿ˜‰

Last night while I was making dinner, I roasted two polano peppers in the oven for 30 minutes at 350.

I popped them into a container and put them in the fridge to be waiting for this morning.

When I woke up, I cut down each pepper and removed the seeds with a knife:

and then filled each one with goat cheese ๐Ÿ™‚

The peppers went under the broiler for 4 minutes, and while they broiled, I made some scrambled eggs (1 egg + 2 egg whites).

Stuffed the peppers with said eggs:

And served with pico de gallo (you can make fresh or buy), tea and (brown rice) toast.

Vegan? You could use vegan cream cheese of choice and a tofu scramble in lieu of eggs (tofu, peppers, nutritional yeast, sea salt, pepper and cumin)

They took less than 10 minutes to make and were AMAZING. Spicy, savory, and perfectly filling. The beautiful aroma even got Bella out of bed ๐Ÿ˜‰

    Bella looks so sweet… my puppy has been taking forever to wake up in the mornings, too. She probably doesn’t want to go outside in the snow!

    savory…I hate oatmeal even looking at it makes me a little sick. I have an egg white sandwich on a bagel thin or lite english muffin its amazing.

    My uncle and I were just at Mexican restaurant on Christmas Eve and he ordered chili relleno – they served him some kind of browned meat covered in cheese with little pieces of chili chopped up in the mix. He was NOT happy! Thanks for the recipe, maybe I can make him this to redeem our terrible Mexican restaurant experience. Have a great day at work!

    I am dying to try poblano peppers at home! Anytime I can get them when we are out I do! I was in Scottsdale for Thanksgiving and had by far the best stuffed poblano pepper EVER. So delish!

    Great idea with the chile rellenos – I had basically taken that dish off my radar when I started really watching my nutrition. Now I can eat it again – healthified! I’m definitely going to try something similar very soon.

    wowzas- those look amazing! i should try them for my boyfriend, since he’s half Mexican and loves savory for breakfast. i, on the other hand, DIE for chocolate croissants, french toast or pancakes. thank god i have parlayed my breakfast pastry-lovin’ ways into stevia-sweetened oats and fruit-filled yogurt concoctions… for the most part ๐Ÿ˜‰

    I would say I prefer a little sweet in the morning. There is nothing that makes me happier than oats with blueberrie and a little bit of almond butter in the morning. However, I am a big fan of savory breakfast food for dinner. Last night, we went to a Mexican restaurant for dinner and I had an egg quesadilla! It was amazing!

    You are seriously making me miss Tucson with all of these posts! And NM for that matter. I miss my Hatch green chili that my sister and i used to peel by the garbage bag for my grandfather when we were little. Don’t touch your eyes after handling that stuff! We always forgot and our eyes would be burning. haha

    Like my dog, I have to un-bury her from the comforters in the morning. The breakfast vegan relleno sounds wonderful, I may need to try it. Typically I’m a sweet breakfast person, but I could go for savory as well.

    Wow. How’s that for a creative breakfast? I almost always go for sweet, but I went through a scrambled eggs phase (during which the thougt of sweet in the morning made me gag). Funny how our preferences change.

    My breakfasts are ALWAYS sweet, but this would be amazing with tofu for lunch and dinner. I love spice, but I never have much of an appetite when I wake up!!

    Sweet breakfast all the way! I’ve tried to have savory breakfasts but I usually don’t feel satisfied afterwards. Me and my sweet tooth…out of control!

    I am totally a savory bfast kinda gal! I love me my eggs and bacon! I sometimes want pancakes or waffles…but 95% of the time, I eat eggs with some kind of breakfast meat and fruit!

    MMM breakfast looks delicious. I’ve never had an actual relleno before because it is fried and fried food makes me very icky! I will have to try your version. I love polano peppers!
