B-fast Relleno- sneaky giveaway ENDED
Hi friends ๐ Howโs your day going? Hope itโs been lovely so far.
Lately in the mornings, Iโve had to drag Bella out of bed to go outside.
We wake up to my alarm, she covers me in Bella kisses and then she goes back to sleep until Iโm ready to leave for the day. Sheโs not a morning person, either ๐

Since Iโve been living in Tucson, so many Mexican food memories have come back to me. Tamales, pink cookies from the Mexican bakery, nanaโs homemade tortillas and beans, salsas, etc. etc. etc. For the past couple of days, Iโve had chile rellenos on the brain. When my family and I would go to Mexico more often we would always stop to have chile rellenos at the mercado. The lady who would make them would spend all day making chile rellenos- fresh peppers stuffed with cheese and lightly fried. The egg batter was so light and crispy – they would literally melt in your mouth. Definitely swoon-worthy.
So today, the breakfast relleno was born ๐
Last night while I was making dinner, I roasted two polano peppers in the oven for 30 minutes at 350.
I popped them into a container and put them in the fridge to be waiting for this morning.
When I woke up, I cut down each pepper and removed the seeds with a knife:
and then filled each one with goat cheese ๐
The peppers went under the broiler for 4 minutes, and while they broiled, I made some scrambled eggs (1 egg + 2 egg whites).
Stuffed the peppers with said eggs:
And served with pico de gallo (you can make fresh or buy), tea and (brown rice) toast.
Vegan? You could use vegan cream cheese of choice and a tofu scramble in lieu of eggs (tofu, peppers, nutritional yeast, sea salt, pepper and cumin)
They took less than 10 minutes to make and were AMAZING. Spicy, savory, and perfectly filling. The beautiful aroma even got Bella out of bed ๐
Well Iโm off to work!
See ya laterrrrrr <3
xoxo
Gina

i’m working somewhere AMAZING. going to wait until the pilot gets home to divulge the deets ๐
Oooh..how much longer til he gets back?!
i can’t post that info online
Those peppers look amazing!! I love spicy food and have been searching for something new to try ๐
Bella looks so sweet… my puppy has been taking forever to wake up in the mornings, too. She probably doesn’t want to go outside in the snow!
My pup does the same thing. She hates the snow outside!
wow that looks amaaaaazing! is there a specific brand of goat cheese you use?
ps. are you full mexican? i would looove to visit mexico one day. i took 4 years of espanol in high school, im pretty sure i forgot most of it though ๐ necesito practicar mi espanol
What part of Mexico is your family from Gina?
i have no idea. is that bad? hahah
my great grandparents on my mom’s side were from italy, spain and mexico. the great grandparents on my dad’s side were from england
i’m half hispanic (mexican, spanish, italian)
this is a great recipe. I have never tried that. Thanks for the idea to switch it up!
My doggies do the same thing, so cute. ๐
yum i love chili relleno! this looks so good!!
savory…I hate oatmeal even looking at it makes me a little sick. I have an egg white sandwich on a bagel thin or lite english muffin its amazing.
My uncle and I were just at Mexican restaurant on Christmas Eve and he ordered chili relleno – they served him some kind of browned meat covered in cheese with little pieces of chili chopped up in the mix. He was NOT happy! Thanks for the recipe, maybe I can make him this to redeem our terrible Mexican restaurant experience. Have a great day at work!
I am dying to try poblano peppers at home! Anytime I can get them when we are out I do! I was in Scottsdale for Thanksgiving and had by far the best stuffed poblano pepper EVER. So delish!
That looks great! I’m definitely a savory b-fast girl, so I might be trying this combo real soon!
p.s. I’m now following you on open sky and am loving the picture of you in standing boat pose!
thanks!
I like savory for breakfast and love rellenos! MMM.
I tend to have sweet for breakfast, as I love having porridge and fruit. Though sometimes I do have savoury. Hope you have a great day! ๐
Oooh I am so making this on the weekend! All of my favorite things in a neat little package. I tend to lean toward savory breakfasts and my husband sweet so I always get a bite or 2 of pancakes as well ๐
Hey girl – I’ve been reading your blog for almost a full year now, and I love it! I also love that you’re living in the Southwest for a while, and blogging a lot about Mexican foods. I live in NM and it’s fun having you as a “neighbor”!
Great idea with the chile rellenos – I had basically taken that dish off my radar when I started really watching my nutrition. Now I can eat it again – healthified! I’m definitely going to try something similar very soon.
These sound delicious! Great idea!
What a unique breakfast idea! Looks delicious! I’m traveling to El Paso this weekend and am hoping to get some great Mexican food:)
I have never seen anyone eat out of a pablano like that! I love your idea
mmm~! I LOOOVEE Mexican food ๐ good thing I have a lot of Mexican friends! Hahaa ๐
savory! my sweet tooth doesnt kick in until night time!
But thats okay, because chocolate for breakfast wouldnt roll very well with my tummy!
wowzas- those look amazing! i should try them for my boyfriend, since he’s half Mexican and loves savory for breakfast. i, on the other hand, DIE for chocolate croissants, french toast or pancakes. thank god i have parlayed my breakfast pastry-lovin’ ways into stevia-sweetened oats and fruit-filled yogurt concoctions… for the most part ๐
These look soooo good! I usually roll with sweet breakfasts but lately I can’t get enough of eggs.
Those look great! How spicy are the peppers?
not too spicy if you get all the seeds out
I am always a sweet trumps savory girl, not just for breakfast ๐
I love that you are reconnecting with your mexican foodie roots being back in AZ and living close to family…that has got to feel so good for you! Not just the food itself but eating/cooking the food with your loved ones right near you. So happy for you, Gina!
๐
My husband would love this recipe. He’s a mexican food addict, yet he is from new zealand. Kinda funny, eh? Thanks for the recipe. keep ’em coming!
Do you think that Bella misses Viesa?
nope, vies is staying with my mom so bella gets to see her everyday ๐ i didn’t want vies to have to get used to my new house before going with her new family- too much adjusting for her within a short time
That’s a good idea! I thought that she had already moved in with her new family because it seemed like it had been a while since you posted a new pic of her on the blog. I’m probably totally wrong about that too:)
I love the poblano in the morning – that’s totally right up my alley! ๐ I love savory – and by that I mean really a runny egg and toast! ๐
I would say I prefer a little sweet in the morning. There is nothing that makes me happier than oats with blueberrie and a little bit of almond butter in the morning. However, I am a big fan of savory breakfast food for dinner. Last night, we went to a Mexican restaurant for dinner and I had an egg quesadilla! It was amazing!
yum!!!
I love rellenos, these look so easy to make and delish! I can probably eat these for breakfast, lunch AND dinner ๐
Your dog is so cute! I have a Bella too ๐ She is a huge American Bulldog, hehe.
I love to mix sweet & savory for breakfast. Gotta have a little pancakes & bacon.
You are seriously making me miss Tucson with all of these posts! And NM for that matter. I miss my Hatch green chili that my sister and i used to peel by the garbage bag for my grandfather when we were little. Don’t touch your eyes after handling that stuff! We always forgot and our eyes would be burning. haha
Like my dog, I have to un-bury her from the comforters in the morning. The breakfast vegan relleno sounds wonderful, I may need to try it. Typically I’m a sweet breakfast person, but I could go for savory as well.
Ooooooh that looks like an AMAZING breakfast! Like the other comments I usually prefer something sweet in the morning but next time the savory urge appears, THIS is definitely going to happen.
I love that bag!!! Along with everything else you have in your shop:)
I mix up the savory and sweet breakfasts, although cereal or oats or toast usually prevail. I love me some eggs though too!
Wow. How’s that for a creative breakfast? I almost always go for sweet, but I went through a scrambled eggs phase (during which the thougt of sweet in the morning made me gag). Funny how our preferences change.
Oh yummm! These look so good!!!
Jen
My breakfasts are ALWAYS sweet, but this would be amazing with tofu for lunch and dinner. I love spice, but I never have much of an appetite when I wake up!!
I usually go with cereal or oatmeal, but just a tad sweet.
Yay! I have been having issues with the “follow” page on Open Sky for 3 days now but finally got it to work so I am now following you! That is a drool inducing b-fast Gina! YUM! You know what I haven’t seen on your bloggy in a long time? An egg-puff! Where’s all the yummy egg-puff love?!
you’re right- time to bring the egg puff back!
Sweet breakfast all the way! I’ve tried to have savory breakfasts but I usually don’t feel satisfied afterwards. Me and my sweet tooth…out of control!
Ooo those looks sweet! i like seeing you make food on the blog again!
I don’t think i could win that bag could i? i’m in Canada, opensky isn’t delivering to Canada so i am probably out of luck?
hahah i like it too ๐
they’re still working on getting shipping to canada- hopefully soon
That breakfast looks great! I usually choose sweet, but its nice to switch it up and go savory every once in a while!
I’m a sweets girl when it comes to breakfast but sometimes I am in the mood for savory and I typically go the egg and toast route.
Bella sounds like Olive, she actually slept in until 10:30 today!
I am totally a savory bfast kinda gal! I love me my eggs and bacon! I sometimes want pancakes or waffles…but 95% of the time, I eat eggs with some kind of breakfast meat and fruit!
MMM breakfast looks delicious. I’ve never had an actual relleno before because it is fried and fried food makes me very icky! I will have to try your version. I love polano peppers!
oh my stars i have got to try that for breakfast!! you are a genius!
That’s my kind of chile relleno – yum!
I don’t blame bella, lol, it’s cold out there in the morning and warm beds are so much cozier!! ๐
This looks awesome! Love the idea – very smart!
I am going to make these tomorrow for breakfast for my boyfriend and I. I can’t wait to try them! Oh and I just started (yesterday!) your HTP Intro to Iron Pumping workout… oh my was it great! It’s made be achy- in a good way! Thanks so much I really enjoy trying your workouts and recipes!
i’m so glad you’re enjoying it!
