B-fast Relleno- sneaky giveaway ENDED
Hi friends ๐ Howโs your day going? Hope itโs been lovely so far.
Lately in the mornings, Iโve had to drag Bella out of bed to go outside.
We wake up to my alarm, she covers me in Bella kisses and then she goes back to sleep until Iโm ready to leave for the day. Sheโs not a morning person, either ๐

Since Iโve been living in Tucson, so many Mexican food memories have come back to me. Tamales, pink cookies from the Mexican bakery, nanaโs homemade tortillas and beans, salsas, etc. etc. etc. For the past couple of days, Iโve had chile rellenos on the brain. When my family and I would go to Mexico more often we would always stop to have chile rellenos at the mercado. The lady who would make them would spend all day making chile rellenos- fresh peppers stuffed with cheese and lightly fried. The egg batter was so light and crispy – they would literally melt in your mouth. Definitely swoon-worthy.
So today, the breakfast relleno was born ๐
Last night while I was making dinner, I roasted two polano peppers in the oven for 30 minutes at 350.
I popped them into a container and put them in the fridge to be waiting for this morning.
When I woke up, I cut down each pepper and removed the seeds with a knife:
and then filled each one with goat cheese ๐
The peppers went under the broiler for 4 minutes, and while they broiled, I made some scrambled eggs (1 egg + 2 egg whites).
Stuffed the peppers with said eggs:
And served with pico de gallo (you can make fresh or buy), tea and (brown rice) toast.
Vegan? You could use vegan cream cheese of choice and a tofu scramble in lieu of eggs (tofu, peppers, nutritional yeast, sea salt, pepper and cumin)
They took less than 10 minutes to make and were AMAZING. Spicy, savory, and perfectly filling. The beautiful aroma even got Bella out of bed ๐
Well Iโm off to work!
See ya laterrrrrr <3
xoxo
Gina

Hoping to try some *vintage* treats! Love your bloggie ๐
I have quite a sweet tooth, so, I usually have a sweet breakfast (generally some oatmeal, cereal Greek yogurt, or pb and banana). It seems like these breakfast’s are quicker or easier to grab and go. Anybody else feel that way?
Buuuuuut i do love me some biscuits and gravy as a treat!
Ooh how fun! Thanks for all you do for us Gina!
Fun idea and the giveaway is very thoughtful!!
What a good way to be sneaky there. ๐ Well to answer the breakfast question I prefer a breakfast in the middle, not overly sweet but a touch to make it yummy. Have a good week.
Haha – your love of goat cheese has never wavered. Would love some roons!

OH the famous macaroons I would love to finally try them! On a funny note my friend calls you the fitness-sista ๐ Now it’s our inside joke for one of our favorite blogs.
Yeah for sneaky giveaways! Thank you
This breakfast looks awesome! So glad that I found your blog recently, love reading your posts!
This is creative…I like it! I love savory breakfasts (no sweet tooth over here). Lately, I’ve been making egg soufflรฉs for breakfast…I make them korean style (2 whole eggs + 1 white beaten well, sea salt, & chicken stock, sprinkle seasoned nori on top – steam in a clay pot until fluffy and cooked thru)….yay!!!
I have been reading for about a year but a while ago I went back an read a post from when you were still in Valdosta and have been reading forward from there and noticed the frequent roon giveaways but haven’t seen anything recently. I would be excited to try them!!
