B-fast Relleno- sneaky giveaway ENDED

Hi friends ๐Ÿ˜€ Howโ€™s your day going? Hope itโ€™s been lovely so far.

Lately in the mornings, Iโ€™ve had to drag Bella out of bed to go outside.

We wake up to my alarm, she covers me in Bella kisses and then she goes back to sleep until Iโ€™m ready to leave for the day. Sheโ€™s not a morning person, either ๐Ÿ˜‰

Since Iโ€™ve been living in Tucson, so many Mexican food memories have come back to me. Tamales, pink cookies from the Mexican bakery, nanaโ€™s homemade tortillas and beans, salsas, etc. etc. etc. For the past couple of days, Iโ€™ve had chile rellenos on the brain. When my family and I would go to Mexico more often we would always stop to have chile rellenos at the mercado. The lady who would make them would spend all day  making chile rellenos- fresh peppers stuffed with cheese and lightly fried. The egg batter was so light and crispy – they would literally melt in your mouth. Definitely swoon-worthy.

So today, the breakfast relleno was born ๐Ÿ˜‰

Last night while I was making dinner, I roasted two polano peppers in the oven for 30 minutes at 350.

I popped them into a container and put them in the fridge to be waiting for this morning.

When I woke up, I cut down each pepper and removed the seeds with a knife:

and then filled each one with goat cheese ๐Ÿ™‚

The peppers went under the broiler for 4 minutes, and while they broiled, I made some scrambled eggs (1 egg + 2 egg whites).

Stuffed the peppers with said eggs:

And served with pico de gallo (you can make fresh or buy), tea and (brown rice) toast.

Vegan? You could use vegan cream cheese of choice and a tofu scramble in lieu of eggs (tofu, peppers, nutritional yeast, sea salt, pepper and cumin)

They took less than 10 minutes to make and were AMAZING. Spicy, savory, and perfectly filling. The beautiful aroma even got Bella out of bed ๐Ÿ˜‰

    Yum! I’ve never had one of those before but they sound tasty! For ages I would have an omelette for breakfast stuffed with spinach and peppers, with tons of chipotle chili powder and salsa. Now I tend to go for things like fruit, cereal and yogurt (all at once!) but occasionally will do the omelette thing for a change.

    Those seem a lot more healthy than the the traditional way of making of them. I might just have to try it :D; although, my dad does have a great traditional recipe for them that I have yet to try as well.

    I normally always enjoy sweet breakfasts. But after a few weeks of serious treats I think something savory sounds pretty appealing! Such a unique idea :).

    My Italian grandmother used to cook up a tomato, onion pepper and green pea mixture fold it into an omelette and call it a “Spanish” omelette. As I got older, I realized she just made her version of salsa!

    As for sweet or savory breakfasts, it depends on the day. Sweet gets oats with dates and cinnamon, savory days get poached eggs on whole grain toast. Occasionally, I throw a flax muffin in there, but usually those are the stand-bys.

    BTW-These peppers look fantastic! They beat out good ol’ poached eggs anytime!

    Mmmm, that’s SO my kind of Mexican food– yummy, fresh, authentic, real and healthy! ๐Ÿ™‚ I bet it would be super yummy with tofu scrambled and nooch! I love making my own tofu fajitas with whole made corn toritllas, guac and lots of veggies!

    Oooh savory for sure! I don’t have much of a sweet tooth (I know, right). My fam and I just got back from Arizona for Christmas (Scottsdale area) and one morning we went on a horseback riding trip. For breakfast, the guy made us tortillas with refried beans and eggs. Holy cow that combination was amazing! I love the west!

    are you sure they were poblanos? they look like anaheim to me… poblanos are a deeper green and wider usually…

    Which part of Mexico did your family come to? I live in Hermosillo, Sonora and when you said the mercado it seemed like you were talking about Hermosillo haha. I used to live in Tucson when I was little but it was only while my dad was studying his PHD.
