I Swoon 4 ‘Roons

Hey everyone 😀 How’s your day been? It’s almost Friday! Thank goodness, eh? This week has be dragging for me.

This morning, I made some macaroons to send to the blogiversary winners since the rest of their packages are ready to go 😀

Blonde ‘roons

roon

Super ‘roons

roon (2)

Cacao almond-butter ‘roons,

I swoon 4 roons 😀

For lunch, I broke out this bad boy from the freezer.

enchilada (2)

I plopped the enchiladas onto a salad with grape tomatoes, hot sauce and cilantro:

enchilada

I started happily munching away when I noticed strange square-shaped smushy bites.

When it comes to Amy’s food, I check for 4 things:

-Vegan

-Soy-free (I avoid soy for the most part)

-No potatoes (blech)

-Whole-grain

Apparently I didn’t check the label that well, because tofu was in there. I ate it anyway, and my stomach didn’t hurt at all. Winner, winner, enchilada dinner lunch.

This afternoon was spent running errands and work stuff, and then I went up to the yoga room,

lit my favorite aromatherapy candle (Lavender Vanilla from Bath and Body Works- we have one in our room and one in the yoga room)

buddha

and practiced some yoga with my favorite downward-facing dog 🙂 (Viesa prefers running, but Bella loves yoga)

yoga

We free-styled to some Glee music and then I followed it with a 13-minute relaxation podcast from YogaDownload.com.

‘Twas lovely.

So… I’ve decided to apply for a scholarship to Bikram’s teacher training in September. I figured since I’m not teaching at the base gym right now, it would be an excellent step for me because I’ve fallen in love with Bikram yoga over the past year and a half and it’s something that I could teach wherever the military sends us. They only give out two scholarships so my chances are slim (there’s no way I’m paying 10 g’s for yoga training), but if they pick me, I’m going 😉

Time to meet with a prospective client and teach boot camp.

See ya in the morning with that crepe recipe <3

xoxo,

Gina

Something to talk about: If you could go back to school for anything and time/money/family/work commitments weren’t an issue, what would you choose?? I would absolutely love to finish my MBA –I will when we find out where we’re moving!- and enroll in one of those yoga teacher training retreats in another country.

Good luck with the scholarship!! Sounds wonderful!

  2. Jessica @ How Sweet on June 24, 2010 at 4:20 pm

I think one of those yoga retreats would be amazing! I would like to get a degree in journalism or creative writing. It is my passion and I’d love to learn as much as I could!

  3. Shelly on June 24, 2010 at 4:21 pm

I’d really love to get a degree in creative writing or actually, in English for that matter. I’m a chemical engineer, but I was really torn between majoring in chemistry (I got the engineering degree in grad school) and English when I started college. On the plus side, since I’m good at it, I actually do a ton of technical writing for my job- but my first love is fiction. 🙂

  4. Heather (Heather's Dish) on June 24, 2010 at 4:22 pm

LOVE lavendar! if money were no object, I would do culinary school, in Paris, in a heartbeat! I’d love to experience that!

  5. Lizzie on June 24, 2010 at 4:24 pm

I would go to baking school in a heart beat! I did recently apply but decided it was too muhc $$$. 🙁

  9. A Teenage Gourmet on June 24, 2010 at 4:40 pm

LOVE Amy’s . . . the pizzas are especially good. And they have this brown rice and veggie bowl that is absolutely excellent!

  10. Laury @ thefitnessriot on June 24, 2010 at 4:44 pm

I used to eat Amy’s very often..haven’t had it in…hmm…..probably 6 months or so..wow! Love the enchiladas. LOVEEEE the mini pesto pizza…best crust EVER!

I would love to go back to school to finish my nutrition, RD degree…and go to a natural foods culinary school. Time, money, family, wantign to buy a bigger house (meaning school with less pay and more bills is a no no) are all in my way 🙁

  11. Katie on June 24, 2010 at 4:54 pm

I’d also do a yoga training program! 🙂 Bikram or any/all of the other styles. 🙂 I hope it works out for you! I’ve always wanted to go to Vegas for his training, but can’t take that much time off work (or spend all those g’s). 😉

  12. Julie @ Pickley Pear on June 24, 2010 at 5:04 pm

I would love to become yoga certified. This is the time to do it too. It is expensive, so it’s a lot to think about. Good luck – you just never know about the scholarship!!

  13. Kim on June 24, 2010 at 5:08 pm

I’d love to be a dietitian and specialize in obesity counseling. Good luck with the scholarship!

  14. Brittany on June 24, 2010 at 5:13 pm

Best of luck with the scholarship Gina! I’m sure you’d be a great Bikram instructor.

I’d love to go back to get my RD certification or a Masters in Public Health.

  15. Alicia on June 24, 2010 at 5:25 pm

Good luck on the scholarship!!! I hope you get it! I have no clue what I would go to school for. I’m actually in the process of trying to figure it out??

  16. Carrie on June 24, 2010 at 5:26 pm

I ate that exact same Amy’s meal for lunch! Or maybe almost the same? Mine was super cheesy, which meant when I microwaved it, it was super greasy. Blech! Won’t be getting that one again.

  17. Christina @ A Beautiful Mess on June 24, 2010 at 5:27 pm

Good luck with the scholarship, that would be such a great addition for you professionally!

If I could go back to school for anything at all, I’d go to culinary school or pastry school… I would love to open a healthy, organic, partially raw bakery someday.

Those macroons look delish! I don’t suppose there’s any hope of the recipe ever popping up on here??? :O)

  18. Sarah R on June 24, 2010 at 5:32 pm

A yoga scholarship–how exciting! Why wouldn’t they pick you?! I’m actually going back to school right now. My first degree was in education, but now I’m going back to be an RD.

  19. Jenna on June 24, 2010 at 5:33 pm

I’ve been reading your blog for a couple of months now, and I just think you are so great! I love your breakfast cookie — I even sent the video link to my mom and now we both make breakfast cookies. I am wondering, why do you avoid soy products? Is there a particular reason?

  20. Laura on June 24, 2010 at 5:34 pm

I am still at school…and want to leave, SOOOOOOO badly!!! but i guess once i do leave, i’ll long to go back!!

i think i’m going to order some of the Amy’s wraps from online.. i always get so tempted when they appear in a blog! xx

  21. Megan @ Healthy Hoggin' on June 24, 2010 at 5:40 pm

I already have my dream job as an illustrator, but if I could afford it, I would love to go to the Institute for Integrative Nutrition in NYC! I love learning about nutrition, and think it would be awesome to get certified to help others live healthier lifestyles!

I have a friend who is getting ready to go through Bikram instructor training out here in LA– it sounds so intense! (and expensive!) It would be AWESOME if you got a scholarship! Good luck! 😀

  22. Meg on June 24, 2010 at 5:43 pm

I swoon for ‘roons too! 😀 I’m about to go into my last year of college – eek!

    I love Amy’s Meals 😀

  23. lindsay on June 24, 2010 at 5:55 pm

that sounds awesome! I would love to take a bikram yoga workshop. I hope you get the scholership! Keep us posted,

  24. Megan @ The Daily Sweat on June 24, 2010 at 5:58 pm

I want to go back to school! I’ve been thinking exercise science, but I’m not sure what I’d want to do with that… Hope you get the scholarship!

  25. Molly on June 24, 2010 at 6:04 pm

    Sounds amazing!

I’m just curious- have you seen the documentary Yoga, Inc.? You can watch it on hulu, and because I love yoga I watched it. The film doesn’t paint a flattering picture of Bikram. I don’t like Bikram practice anyway, so I don’t know much about it, but I’d be curious what someone like you, who is a fan, thinks.

    • Fitnessista on June 24, 2010 at 7:42 pm

wow, i’ll watch it tonight- thank you for letting me know about it!

  26. Lauren @ BIOCHEMISTA on June 24, 2010 at 6:07 pm

I’m rooting for you to win the scholarship!!!! I hear some of them are in really cool places!

  27. Kristina on June 24, 2010 at 6:08 pm

good luck, I hope you get the scholarship! 🙂

I LOVE school… in addition to a sociology degree, I went to art school for two years and recently went to an esthetics institute to receive skincare / esthetician certification. I LOVED IT !

One school I have wanted to go to, before traditional college, is the Western Culinary Institute… I would love to get a baking & pastry degree, and I would REALLY love to get the full on – all out culinary degree… *sigh* maybe someday… 🙂

  28. denise on June 24, 2010 at 6:09 pm

My yoga teacher training was closer to $3000.00 which is still a lot to pay. $10,000 seems almost ridiculous. I know you love Bikram but it may limit you to only teaching that style. Not everyone enjoys Bikram yoga. It is none of my business…just saying : )

    • Fitnessista on June 24, 2010 at 7:42 pm

      good to know- thank you!

  29. Amy @ Amy Starts To Run on June 24, 2010 at 6:12 pm

I hoping to go back to school, if the school accepts me, to become a Physician’s Assistant. Its a pretty intense program, and if I get in, I’ll have to quit my job and rely on my fiance to support us and our farm (2 cats and a dog). Very intimidating!

If you have extra macaroons hanging around, lemme know 😉

  30. Donna Porter on June 24, 2010 at 6:14 pm

Well, I’m currently a college student..an mom and AF wife and full time worker! lol But, I’m going to college to, one day, become an RD. LONG road ahead, but I should be finished with my undergrad within the next two years! Then, off to my masters!

  31. Salah@myhealthiestlifestyle on June 24, 2010 at 6:18 pm

I’m still in school right now, but when i finish I want to get my masters in Nutrition….and I would love to have a Personal Trainer Certification to go with my group fitness cert.

  32. Averie (LoveVeggiesAndYoga) on June 24, 2010 at 6:22 pm

Cute Lulu shorts. I think their lulu’s. 🙂

Anyway, girl. That is wayyyy tooo much to be paying. I paid about 3 grand for my RYT 200 Hours and then another 2g’s for my RYT 500. That’s nuts! I know that Bikram Chodury is obvi the man for, duh, Bikram yoga. But….if you would consider doing “hot yoga” or Bikram-inspired training, you could accomplish it for wayyyy less.

In the back of yoga journal or online, research it (I’m sure you have) but there are soo many schools and you can get it for like 3g’s. On the high end.

I know there’s a way for you to 1. accomplish your goal and 2. not go broke! LMK if you need more info…seriously!

    xo

    • Fitnessista on June 24, 2010 at 7:41 pm

thank you! i know you’re my go-to girl for info.. on many things 🙂
      xoxo

My boss’ sister did the teacher training in Cali over 4 years ago. She’s just gone bonkers and will be opening her own studio in September! She travels around, teaches at various studios and just loves life! (And she’s got a rockin’ bod after a baby by c-section!)

I’d love to go back to school for HOLISTIC Nutrition. I think I’d have one hell of a career, teaching people to eat well, and fuel their bodies properly, while potentially teaching people how to shop AND cook! I think sometimes people get way too overwhelmed (I know I do!) with choices out there and think it’s super difficult to eat well! Food is such a passion of mine, I just know I’d love it and my soul would thank me for it!

(mind you – I’m over 50k into debt with a MS in Env. Science 😛 Hard to think about going back!)

  34. Katherine on June 24, 2010 at 6:32 pm

Good luck with Bikram teacher training! I used to do Bikram and the teacher training sounds intense but great if you love Bikram. Is it the one at world headquarters in LA?

I’m in grad school now, but if I could get a degree in anything I would get a PhD in either Popular Culture (focus in the evolution of the teen drama, from the old 90210 to gossip girl) or a PhD in Urban Schooling. I’ve actually seriously considered adding this to my law degree but that would be at least 8 years of grad school which seems a bit insane.

    • Fitnessista on June 24, 2010 at 7:40 pm

i think so- i know it’s in cali

  35. Shannon @ Before Sunrise on June 24, 2010 at 6:36 pm

I would definitely go back to school for a degree in psychaitry or at least get some sort of certification where I could cousel people. Growing up I was always the go-to “therapist” of all my friends and family – I guess I give good advise (some of which I should follow myself!). I never persued it because I didn’t enjoy school then, but now I think I would appreciate it a lot more.. hmm… 😉

    • Shannon @ Before Sunrise on June 24, 2010 at 6:37 pm

Apparently I can’t spell… guess I should have paid attention in school 😉

      *advise = advice
      *persued = pursued

  36. Shannon @ Before Sunrise on June 24, 2010 at 6:36 pm

Oh! And good luck – I sure hope you get the scholarship!

  37. Katherine on June 24, 2010 at 6:47 pm

Wow that scholarship is an awesome opportunity! I didn’t know things like that existed. I’m definitely going to research some options for myself in that area. I’d love to be an events planner or a waitress with my life.

two other things really quick- 1. with your blogroll and favorite posts additions, you should put in links of your categories (or do a page of summer shapeup links haha that’s what made me think of it) 2. do you follow current events etc? I just found a site that supports the gulf oil cleanup by selling soap (it’s on my recent post if you’re interested)- do you ever go for philanthropic things?

    • Fitnessista on June 24, 2010 at 7:38 pm

send me the link for the soap! i love philanthropic opportunities

  38. Danielle (Runs on Green) on June 24, 2010 at 6:51 pm

That’s great that you’re applying for the scholarship! Even if the chances are slim, it’s always good to try 🙂

And Amy’s meals tend to have random tofu in them haha

  39. Tracey @ I'm Not Superhuman on June 24, 2010 at 6:54 pm

Good luck with the scholarship. That would be amazing! I would go back to get my MFA in creative writing. But school’s way too expensive right now for that.

  40. Mia on June 24, 2010 at 7:03 pm

Good luck with the scholarship! We can’t vote or comment to increase your chances, can we?

Even though money/location is definitely a factor I am excited to be returning to school in the fall! My husband and I are relocating so that I can go back to school to become an R.D. I already have a degree in culinary & pastries but I want to add more to it. I have developed such a passion for nutrition over the past few years that it is now or never. My husband is 100% on board (even though he does not have a job yet…still is employed with his old one though). It is so scary, but exciting at the same time!

  41. Diane on June 24, 2010 at 7:10 pm

Hey Gina- just a quick question. In the most recent Women’s Health, it says it would take 420 minutes/week to maintain a healthy body weight with no changes in diet. That’s 60 minutes a day…I’ve been doing less than that (but high intensity) and I’m trying to lose, so it freaked me out. Would you recommend doing more than that?

    • Diane on June 24, 2010 at 7:11 pm

forgot to add it’s on pg 26. and good luck with the scholarship!!<3

    • Fitnessista on June 24, 2010 at 7:36 pm

no, i think they mean moderate intensity. if you’re doing high intensity workouts, you can see results by workout out less each day

  42. Kim on June 24, 2010 at 7:29 pm

My dog watches me doing yoga also! She seems fascinated!

    Good luck with the scholarship!

  43. Robyn @ Frugal 'n' Fit! on June 24, 2010 at 7:34 pm

My fingers are crossed for you! That would be an amazing experience. Bikram is so hot (literally! hahaha) right now.

  44. Krystina on June 24, 2010 at 7:43 pm

I’m in love with macaroons too! I’m dangerously low on mine and need to make a new batch!

  45. Courtney @ Three Months on June 24, 2010 at 7:53 pm

Good luck with the Bikram scholarship! If I could go back to school – I’d pick culinary arts for sure!

  46. LisaG on June 24, 2010 at 7:54 pm

I gotta try your taco salad rendition! I need more Gina Macs too! Been too long.

  47. Jenn on June 24, 2010 at 7:56 pm

    Good luck!

If I could go back, I’d finish dental school, instead of having gone into television. Much less stress. 🙂

  48. Jenny on June 24, 2010 at 7:57 pm

I would love to go to law school!

  49. Megan @ The Oatmeal Diaries on June 24, 2010 at 8:08 pm

Ohh how I want some of your macaroons! I bet the “dough” is just as good as the finished product 🙂

  50. Paige @Running Around Normal on June 24, 2010 at 8:11 pm

I’m sure I would swoon for roons too 😉
I would love to go back to school to become an RD. I think it’d compliment the personal trainer thang wonderfully. I know it’d be hard, but I want it SO bad!
