Pumpkin Protein Fudge
Good morning! How’s your morning going? I have just the perfect pumpkin fall recipe to make your day even better–pumpkin protein fudge! 🙂 My day is off to a good start with a 40 minute tempo Oreo (10 minutes easy, 20 minutes fast, 10 minutes easy– the good stuff’s in the middle) and coffee.
Always coffee.
So there’s this thing going on with my phone. I’m officially out of photos and space to do anything. Buuuut I found a way around that: I take the picture with Instagram. Even if I don’t post said photo, it still shows up in my camera roll.
I’m pushing 3,000 photos and a lot of music.. I wonder how much longer until it explodes.
It’s probably about the time to back everything up, delete and start over, but I like having Livi’s entire life on my phone. Otherwise, I wouldn’t be able to look back at old photos… like this one 🙂
I snapped a couple of Instagrammed-but-not-Instagrammed pics at Kyle and Meg’s last night. We brought some dinner over, as well as Bella, for her first puppy play date with her fur cousin Luna.
Bella was so sweet and gentle, even though Luna wanted to play and chase. By the end of the night, they were sprinting around the living room together. 🙂 We’ll have to see how Caro does, even though she’s kind of a cat-dog and doesn’t care who’s around or what they’re doing, as long as she has her comfy spot on the couch.
Protein Pumpkin Fudge
I didn’t prep a ton of snacks and goodies for this week- slim pickins at the grocery store- so I’ll have to do that at some point today. What we do have on hand: pumpkin protein fudge.
It had to happen.
Pumpkin Protein Fudge
A delicious pumpkin treat for fall that packs in protein power
Ingredients
- 1 pack protein powder (33g)
- 4 tbsp dry ingredients (either almond meal, coconut, oat flour or a mix)
- 2 tbsp nut butter (I used Sunbutter)
- 2 tbsp pumpkin puree
- Liquid Stevia or other sweetener to taste (I used 12 drops liquid Stevia)
- 1/4 tsp cinnamon, pinch of nutmeg or dried ginger
- Chocolate drizzle for garnish 😉
Instructions
- Mix all ingredients together.
- Press the mix into a container (you can make one big one or individual servings like I did here).
- Place in the fridge to harden slightly and take a piece whenever you want a little treat with protein power.
Pumpkin is a fun component to add to the usual meal suspects this time of year; not just because of the seasonal novelty, but it also adds a dose of nutrients and filling fiber. I figured it would be a holiday twist for one of my favorite snacks, and let’s be real… I’m pumpkin-ifying everrrrything. No shame.

This fudge looks delicious! I actually made a pumpkin protein fudge last year too and it’s still one of my favourite year round Snacks! It’s so simply and can be kept for a while so I just love it.

Gina, i had the same prob with my phone. Download the flickr app and get an account if you dont have one and you can upload alllll your photos to the app (a few at a time or it will freeze up). You will still have all the photos easily accessable just like they are in your photo albums on your phone, and you can keep putting photos on as ya go. you can also make your photos private if you want.

Isn’t it awesome that we live in an age where we can take 3000 photos!! I remember when I was a kid and mom and dad had the film camera. You thought taking 3 or 4 rolls was a TON and then it was always disappointing when many didn’t turn out. We sure are lucky. 🙂

I love Pumpkin Fudge. I definitely need to try it, though I always have to make the puree myself – no canned pumpkin in Switzerland. It’s ok, just takes double amount of time 🙂

Yum – that protein fudge looks so easy! Definitely making it soon. I feel the same way about pictures – I hate removing them from my phone, even if it’s just to back them up. It just doesn’t feel the same!!

Suddenly I don’t feel so bad about the 1100 pics I have on my phone. I know what you mean about just not wanting to part with them… I mean, sure, they’d be on the computer and everything, but there’s just something about always having them on hand and close to you that feels so much more comforting.
I had to go through and pick out my favorites from my baby and download the rest to the computer 🙁 I didn’t want to lose the access either! Although someone mentioned Flickr app! I’m all over that!

gina will probably answer but she has made a couple of variations on her protein fudge and she uses what looks like a pyrex lunch size dish that is rectangular. i don’t know the actual size but they sell them at wal-mart and probably other retailers too. i have 3 of them that i use to pack my lunches.
i have no idea what size it is. i went to go measure and also have no idea where my measuring tape is haha. my guess would be 8×6?

it was fairly small. like a large pyrex tupperware

You should check out Dropbox. It automatically uploads all your pictures via Wi-Fi and keeps them out of your albums.
I finally bit the bullet and started moving my photos off to my computer. Then backing them up on an external drive. Then backing them up again to Photobucket. And Facebook. I am NOT losing any of Squish’s baby pictures! How silly that I have probably averaged a photo a day of Squish, and my parents *maybe* have an album or two of me and my siblings. Ahh, the technology age!
I’m having the same phone problem except my computer is full too, which means I need to dump stuff off of that, which I don’t really want to do. There really needs to be a better system.

Protein fudge sounds amazing and pumpkin must take it to the next level! Sounds like such a great snack!
Made the fudge, think I followed instructions right but mix is DRY. Added more pumpkin and made in small (sandwich size) container… Will try it tomorrow. Did I miss something moist t add? (Used coconut flour… Maybe should’ve sifted?
coconut flour is very thirsty, so you have to add more liquid (like almond milk). i’d try oats or shredded coconut next time!
