Pumpkin Protein Fudge
Good morning! Howโs your morning going? I have just the perfect pumpkin fall recipe to make your day even betterโpumpkin protein fudge! ๐ My day is off to a good start with a 40 minute tempo Oreo (10 minutes easy, 20 minutes fast, 10 minutes easyโ the good stuffโs in the middle) and coffee.
Always coffee.
So thereโs this thing going on with my phone. Iโm officially out of photos and space to do anything. Buuuut I found a way around that: I take the picture with Instagram. Even if I donโt post said photo, it still shows up in my camera roll.
Iโm pushing 3,000 photos and a lot of music.. I wonder how much longer until it explodes.
Itโs probably about the time to back everything up, delete and start over, but I like having Liviโs entire life on my phone. Otherwise, I wouldnโt be able to look back at old photosโฆ like this one ๐
I snapped a couple of Instagrammed-but-not-Instagrammed pics at Kyle and Megโs last night. We brought some dinner over, as well as Bella, for her first puppy play date with her fur cousin Luna.
Bella was so sweet and gentle, even though Luna wanted to play and chase. By the end of the night, they were sprinting around the living room together. ๐ Weโll have to see how Caro does, even though sheโs kind of a cat-dog and doesnโt care whoโs around or what theyโre doing, as long as she has her comfy spot on the couch.
Protein Pumpkin Fudge
I didnโt prep a ton of snacks and goodies for this week- slim pickins at the grocery store- so Iโll have to do that at some point today. What we do have on hand: pumpkin protein fudge.
It had to happen.
Pumpkin Protein Fudge
A delicious pumpkin treat for fall that packs in protein power
Ingredients
- 1 pack protein powder (33g)
- 4 tbsp dry ingredients (either almond meal, coconut, oat flour or a mix)
- 2 tbsp nut butter (I used Sunbutter)
- 2 tbsp pumpkin puree
- Liquid Stevia or other sweetener to taste (I used 12 drops liquid Stevia)
- 1/4 tsp cinnamon, pinch of nutmeg or dried ginger
- Chocolate drizzle for garnish ๐
Instructions
- Mix all ingredients together.
- Press the mix into a container (you can make one big one or individual servings like I did here).
- Place in the fridge to harden slightly and take a piece whenever you want a little treat with protein power.
Pumpkin is a fun component to add to the usual meal suspects this time of year; not just because of the seasonal novelty, but it also adds a dose of nutrients and filling fiber. I figured it would be a holiday twist for one of my favorite snacks, and letโs be realโฆ Iโm pumpkin-ifying everrrrything. No shame.

Hope you all have an amazing day <3

If youโre looking for a moment of stillness in your day, check out this beautiful ballet time lapse video. My favorite part is the slow sequence around 1:12.
Congratulations to the winners of Ashleyโs cookbook giveaway and the Reebok Nano Speed giveaway: Gina and Liz!! Both winners have been emailed ๐
Wow, this is the easiest thing in the world to make and I love that I have all the ingredients at home right now! I see pumpkin fudge in my very near future! ๐
This fudge looks delicious! I actually made a pumpkin protein fudge last year too and itโs still one of my favourite year round Snacks! Itโs so simply and can be kept for a while so I just love it.
Iโll need to try out your recipe next!
Gina, i had the same prob with my phone. Download the flickr app and get an account if you dont have one and you can upload alllll your photos to the app (a few at a time or it will freeze up). You will still have all the photos easily accessable just like they are in your photo albums on your phone, and you can keep putting photos on as ya go. you can also make your photos private if you want.
Yum! I made some protein fudge the other day โ but vanilla ๐
Iโm absolutely terrible about deleting picture from my phone. My husband thinks Iโm the worst, lol
I love fudge!
Isnโt it awesome that we live in an age where we can take 3000 photos!! I remember when I was a kid and mom and dad had the film camera. You thought taking 3 or 4 rolls was a TON and then it was always disappointing when many didnโt turn out. We sure are lucky. ๐
coffee makes everything better, right ๐
Aaah, even as a non-coffee person that coffee picture looks so good ๐
I love Pumpkin Fudge. I definitely need to try it, though I always have to make the puree myself โ no canned pumpkin in Switzerland. Itโs ok, just takes double amount of time ๐
That fudge sounds yummy
Yum โ that protein fudge looks so easy! Definitely making it soon. I feel the same way about pictures โ I hate removing them from my phone, even if itโs just to back them up. It just doesnโt feel the same!!
YUMM!!! I canโt wait to try that! My kids LOVE pumpkin! Thanks for the recipe! ๐
Suddenly I donโt feel so bad about the 1100 pics I have on my phone. I know what you mean about just not wanting to part with themโฆ I mean, sure, theyโd be on the computer and everything, but thereโs just something about always having them on hand and close to you that feels so much more comforting.
I had to go through and pick out my favorites from my baby and download the rest to the computer ๐ I didnโt want to lose the access either! Although someone mentioned Flickr app! Iโm all over that!
I am TOTALLY making this tonight!! Looks deliciousโฆand nutritious ๐
let me know what you think! ๐
Can I ask what kind of protein powder you prefer to use?
i like jay robb egg white in smoothies and oats/yogurt, sun warrior for baking and projects like this
Delete all of your text messages. ๐ if youโre like me, youโre probably sending a lot of photos around of Liv so that will clear up a lot of space!
smart! thank you ๐
Making this pronto! Iโve been needing some more snack ideas, so this is perfect!
Yum! This looks so simple & delicious!
I have all of these ingredients so I am making this stat! Also, you should feel honoredโฆwe are having a โfittest winnerโ competition in my school district for the employees & I am the captain of my team and chose theโfitnessistasโ for our team name. Your blog is the very first food/health blog that I ever read three years ago & itโs my favorite.
ahhh i love it!!! good luck to your team ๐ thank you so much for reading
xox
this looks so tasty! way to get a little fall flavored protein in โ love it!
Haha! Oreo intervals. I love it. And Iโm also going to love this fudgeโฆI know it ๐
sorry to be so technical.. but whatโs the size of you rectangle container ?
thanks
gina will probably answer but she has made a couple of variations on her protein fudge and she uses what looks like a pyrex lunch size dish that is rectangular. i donโt know the actual size but they sell them at wal-mart and probably other retailers too. i have 3 of them that i use to pack my lunches.
i have no idea what size it is. i went to go measure and also have no idea where my measuring tape is haha. my guess would be 8ร6?
my guess would be 8ร6. itโs not huge
You added pumpkin, your so smart, Iโm definitely making this tonight!
OOO! This looks great!! ๐
what size pan did you use?
it was fairly small. like a large pyrex tupperware
I feel like every day I see a new way to include pumpkin on one of the blogs I read. I love it!!! Pumpkin everyyyythiiinnnngggggggโฆ..
I just made pumpkin turkey chili!! So smooth and yummy ๐
You should check out Dropbox. It automatically uploads all your pictures via Wi-Fi and keeps them out of your albums.
I finally bit the bullet and started moving my photos off to my computer. Then backing them up on an external drive. Then backing them up again to Photobucket. And Facebook. I am NOT losing any of Squishโs baby pictures! How silly that I have probably averaged a photo a day of Squish, and my parents *maybe* have an album or two of me and my siblings. Ahh, the technology age!
Iโm having the same phone problem except my computer is full too, which means I need to dump stuff off of that, which I donโt really want to do. There really needs to be a better system.
You and your fudges of late! Make a girlโs heart real real warm. Making this during naptime tomorrow.
xooxxo
Protein fudge sounds amazing and pumpkin must take it to the next level! Sounds like such a great snack!
Made the fudge, think I followed instructions right but mix is DRY. Added more pumpkin and made in small (sandwich size) containerโฆ Will try it tomorrow. Did I miss something moist t add? (Used coconut flourโฆ Maybe shouldโve sifted?
coconut flour is very thirsty, so you have to add more liquid (like almond milk). iโd try oats or shredded coconut next time!
