The great block of cheese + your two words
Morning! Happy Humpday to ya 😉 It feels weird to be getting back in the swing of things on a Wednesday. Whenever we have company staying with us, I feel like I’m on vacation, too 😉 Today, it’s back to the usual to-dos and the mountain of laundry I’ve neglected.
In other news, I’ve also been trying to conquer this enormous block of manchego.
(Bella and Caro had a little, too.)
Even after using a generous amount for a party cheese plate, I still have my work cut out for me.
An easy tortilla pizza with marinara, chicken and said queso:
(tortilla pizzas are such a delicious, easy lunch!),
dinner was procured from our crazy amount of leftovers (it looks like an episode of Hoarders in our fridge)
and my workout was quick and dirty. I had a couple of minutes for strength, and was able to catch some of a Zumba class before heading to an appointment. Whenever I have a small amount of time for strength, I focus on compound movements that will elevate my heart rate and encourage strength gains. Last night, I alternated between a squat, bicep curl, overhead press combo, pushups (always kill me), assisted pull-ups, V-ups and planks for the 10 minutes. It’s amazing how much you can do in a short amount of time if you really PUSH yourself! I didn’t stop moving, got in a little cardio and was on my way.
Nighttime necessity:

Today, it’s casa-cleaning time, and Livi and I are going to make her Valentines. I remember when she was our little Valentine date last year!!
I’m off to refresh the Zumba playlist -teaching again tonight! Wahoo!- and start breakfast.

Something to talk about: My friend Carla (aka MizFit aka mom-and-muscle-spiration) posted this on her Facebook last night. If you could tell your younger self two words, what would they be?? Mine would be “slow down.” I was in such a frenzy during my college years, that most of my memories are a busy blur. I learned how to slow down a little later in my life, but am glad it finally happened. My second choice would be “more naps.” 😉

I feel the same way when we have company. It’s vacation time and all chores go out the window!
My two words to my younger self would be “take pictures.” I remember a lot about my child, teen, and college years but honestly I feel like I’ve already forgotten so much (and I’m only 29). I wish I’d taken more pics to look back on.
My husband makes fun of me for taking a million pics of our son. I think I’m making up for my own lack-of-picture issues. Haha
“Live passionately”. It is seriously the only thing that matters!

Happiness is the most important thing to me and is what gets me through the days.
This was a great idea, and surprisingly took me a while to think of what I would say!

My two words would be “love people” – I spent most of my college and grad school years focusing more on academics than relationships and I wish I had a better balance during that time!

I’ve been trying to add a little “fun” into whatever I’m doing. Sometimes I make up funny things to remember what I’m learning in school, turn on some music while reading, and I’ve definitely become a fan of the “study 30 minutes/ 5-10 min break.”

Breathe and believe. I would have told myself that worrying about things doesn’t get you further along. Instead, breathe in and out and let it go. Believe in yourself that you are enough and that you are strong, smart and good enough to live a happy life.

I used to spend a lot of time focusing on things I’d rather be doing, or places I’d rather be, which in retrospect was unfortunate because I missed out on a lot of great stuff that was around me.

I love those words that you picked. I am doing both this year, and I’ve noticed it’s a big trend to “slow down.”
Our dogs love cheese too!
I would definitely tell myself to “eat smarter” — I was a division I college athlete, but when I think about my food choices back then I didn’t have the same mindset I do now…and I will always wonder how much better I could’ve performed if I would have fueled myself correctly!

We got a bottle of Dearly Beloved for part of a wedding present and I loved the bottle! I have never seen that brand anywhere. We’re planning on saving it for our 25th anniversary 🙂

You’re enough is one of my favorites! I work with teens and regularly remind them, “you are good enough, exactly as you are!” ” It’s okay – you are enough!” It can really help to take that breath.

as a teen myself, i need to start telling myself that more often!
I really loved reading everyone’s two words…the “You’re ok” made me tear up. I’d probably say that to myself too. It helps even now – so I’ll tell it to the younger-5 minutes ago-Me.

I LOVE that cheese from Costco! I’m currently trying to get through the Kirkland Goat Cheese…the 2 logs…I’m on the second, but it’s taking me a little bit longer to get through this one. HA! Sucker for wine labels and I like that one…
haha i learned to stop buying the two logs. i couldn’t do it.
I always freeze the second log. It thaws perfectly when you are ready for it! 🙂

Mine would be “you’re beautiful”. Self esteem was so low I never thought I was pretty. And while I still wish I was thinner or had different features, I have learned to love myself and accept myself for who I am. I wish I figured this out sooner.

I stress about everything: being the best teacher, going back to school, being single at my age (31!!), eating healthier, working out more…I just need to relax! It’s a constant battle to just relax and enjoy my life at this very moment!

I’ve never tried manchego, but love the idea of a tortilla pizza. We always have tortillas on hand for tacos and quesadillas, but this is a great way to break out of the lunch rut. I typically eat the same lunch everyday, but now have some inspiration to switch it up!

Apothic Red is my dad’s favorite red as of lately. Whenever he sees it on sale, he stocks up!
Too much manchego, eh? Grilled manchego cheese sandwiches on brown rice bread or make a nice bechamel over some brown rice pasta? It’s also good drizzled with a little honey for somethings sweet after dinner with a glass of wine. 🙂

LOVE manchego cheese – my family is from Puerto Rico and we love pairing manchego cheese with slivers of guava paste for a sweet treat. If you try it, let me know how you like it!
“Be positive.” Having a positive outlook on life has completely changed my overall wellness and how I approach difficulties. I can never have enough little reminders to keep a positive mentality.

I live in Atlanta so it is pretty easy for me to find it in the ‘latin’ section of any grocery store (publix, Kroger, etc.) Anywhere that sells Goya products would be a good place to start!

What a great question! I think I would have a few that pop into mind – “Trust God,” “worry less,” “slow down.” I am, unfortunately, a worrier, and constantly need to remember that God is in control – worrying can really take away. And I completely relate to your story about college. I’m a big-time perfectionist and usually moving 100mph … that isn’t always great for appreciating people and experiences.

Onto the cheese: my family always takes forever to finish a big block of cheese from Costco too, but we still get them anyway as a treat because some cheeses are just too good to pass up! We haven’t tried manchego yet though— maybe that’s next!
