A new favorite beast

Thanks for the awesome feedback on Missy’s Focus On: IntenSati post! It looks like a class I’d LOVE to take.

I had the chance to meet with a blog reader at the resort today- she took two of my classes :) It definitely made the day more fun.

Lunch was nothing too crazy –even though Snobby Joe leftovers are fanfreakingtastic and I adored the Macrobar

I’ve been wanting to share with ya a salad beast I’ve been enjoying lately: the veggie cobb.

Remember when I made tempeh bacon? [And ate the entire block of tempeh in one fell swoop because it was so delicious]

Well that’s the star of the show :D

Not only is this beast a lot less calorically-dense than the original thang, it also has a ton of protein and a dose of healthy fat.

Tempeh bacon

-1 serving of tempeh

-3 T Nama Shoyu

-1 t olive oil

-splash of apple cider vinegar

-1 t maple syrup

-garlic powder, chili powder, paprika, sea salt and pepper

1. Marinate the previous ingredients for 5 minutes up to 1 day.. depending on your patience level. {You can guess how long mine soaked for, haha}

2. Cook in olive oil –this is importante! it won’t get crispy without it- on medium heat for 3-4 minutes each side, until golden and foodgasmic

Ranch dressing

-1 T Veganaise

-3 T almond milk

-1/2 t dijon mustard

-chopped fresh chives, dried parsley, thyme, garlic powder, oregano, sea salt and pepper

For the salad, combine:

-Greens (romaine is fab, but so are mixed spring greens or whatever you have on hand)

-2 boiled egg whites

-1/4 chopped avocado

-chopped grape tomatoes

-onion (optional)

-Toss with Ranch dressing and feast!

It’s my new fave, for sure.. I can’t wait to have it again tomorrow perhaps :)

    Thanks for the foot stretching link. After every long run I feel it in my feet more than anything else (I have awesome shoes, but flat feet, an extra bone in one of my ankles and a family history with foot issues, so I’m doomed). Bookmarked that page!

    mmmm…looks delicious. I picked up a pack of tempeh bacon at whole foods yesterday, and am looking forward to trying it for breakfast tomorrow. I may have to make more for lunch! My favorite salads lately have been the Weekend Glow kale salad from Oh She Glows (even my kids love that one) and your quinoa and kidney bean salad with hummus (have it in the fridge for a quick lunch tomorrow). Enjoy the rain!

    Thanks for the foot/ankle stretching link. I had ankle surgery in April and am having a horrible time recovering. What was supposed to be a 5-6 week recovery has turned into a 12 week and counting recovery. I do most of this in physical therapy, but always forget about the stretches once I get home. Now I have no excuses since that article has all the pictures and guidance I need!

    Thanks for the link. My left ankle talks to me all the time and I never know what to do besides ice. I’m seeing a physical therapist soon to work on strengthening that area. I’ll have to show her this too.

    That salad looks amazing, btw. Need to try making the tempeh ASAP!

    This looks so so good! It also really reminds me of something that Mama Pea would make, sans the eggs! I wish I could come and take some fitness classes with you! Although, I may be a touch star struck and really not do well…

    Oh my feet are a disaster! They are sooo tense! I wear the wrong shoes, I run, I don’t stretch them out enough, I have plantar fascitis, I have so many issues with my tooties. I would rather have a foot massage than anything else. Ahem. It’s that good for me…haha!

    The tempeh bacon recipe AND the ranch dressing with vegenasise are music to my little vegenaise-lovin’ ears :)

    I actually do stretch out my ankles and feet before I go to bed — it feels so good to have them loose before falling asleep.

    Cobb Salads are my favorite — although I love real bacon so much!

    Sounds like a fun day! This salad looks delish and super filling. I am the type of person who needs a salad AND something else, unless it’s a huge, dense salad.

    This salad looks delectable! I sometimes crave bacon-y things and have got to make this asap.
    Thanks for posting the foot exercise link, I checked it out! But you HAVE to look at exercise #5 “Toe Pick-Ups,” the photo on it is totally creepy… the foot is picking up Reese’s PB bells (like the kind they make around the Holidays). Eww!

    i have thought about that before, how out feet take such a beating but we really don’t do anything for them! sometimes at night before i climb into bed i will rub them for a minute and it feels really nice, soothing. maybe it feels extra good because they never get touched! thanks for being such sports feet! ;)

    That tempeh bacon sounds insanely delicious :-) It’s so hard to find tempeh here in ENgland – i have to mail order it, or go to a health food store like 3 hours away. Craziness! Please tell Trader Joes to come over the ditch to England, lol! ;-) Ah, so cool you got to meet a fitnessista fan! That must have been such a nice little ray of sunshine in your day. xyx

    I’ve been looking for a good homemade ranch dressing! There’s nothing better than a veggie wrap with ranch dressing and some cheddar cheese… it brings me back to my childhood. :D Thanks for the recipe!

    I’m going to have to try your tempeh bacon. I made a BLT yesterday, and while it tasted fabulous, I wasn’t very impressed with the ingredient list of the Morningstar brand fake bacon I used. That ranch dressing also sounds delicious and super easy!

    I’ve had no luck preparing tempeh on my own, but this recipe looks delicious! I’ll have to try it. I think the boy would love the salad. I’m going to try some of those stretches today, too.

    Funny that you mention stretching feet… I recently had a flare up in the connective tissue between the arch or my foot and heel. The remedy ?? …stretching ! After one week of stretching, I’m all better :D

    Hi Gina,
    I’ll admit, I’ve been a vegetarian for almost a year now, but I am TERRIFIED to try tempeh or tofu. I have no idea why, maybe the fact that it’s somewhat processed scares me…. not sure. I eat every veggie under the sun though. I am curious to try your tempeh bacon…. will you disclose what brand you used? I’ve heard some tempeh is really bitter and I don’t want a bad brand to poison me from tempeh if I might otherwise like it. Thanks!!
