Shrouded in a cheese blanket
Hey guys! Hope your Monday is treating you well ๐ Thanks so much for the suggestions and tips with the IT band stuff. Iโve been spending some time with the foam roller and am also getting a massage on Thursday before we leave. That, combined with the fact that I donโt have to teach 3 classes a day anymore, should *fingers crossed* make a huge difference!
I had the same sludge as yesterday before walking the puppers:
Pineapple, frozen banana, water, 2 scoops Vega goodness, sea salt, Stevia, vanilla and cinnamon.
We walked for about 40 minutes (I owed them after yesterday) and a man walking thanked me for picking up their dog disasters. I wouldnโt be able to just leave them there, but it was nice (and random) for him to thank me.
We came back to the casa and I decided to surprise the pilot by making one of his favorite meals.
White Enchiladas (a prime example that Iโll never make the pilot eat as I do)
Chicken, tortillas and cheese.. shrouded in a cheese blanket
Hereโs the recipe:
(I must forewarn you, itโs not healthy, but is quite delicious and is a great meal to make every blue moon)
Sautรฉ 1/2 yellow onion with 1 can drained green chilies and season with salt, pepper, 1/2 ts cumin and add two finely minced garlic cloves
Add in 1 large can (family sized) of cream of chicken soup, 1 small can cream of mushroom soup and 1 cup chicken stock or water (I used the latter as I didnโt have any chicken stock on hand). Stir to combine.
This is the โsauceโ:
Shred a rotisserie chicken of choice (Iโve used the mole, lemon pepper and traditional flavored ones and they all got rave reviews), or you can bake boneless, skinless chicken breasts and shred the meat. I say why do the extra work when someone else can do it for you? ๐
Add in 1 handful of shredded Mexican cheese, a ladle-full of the sauce and stir to combine.
This is the filling:
Take a pack of small corn tortillas and heat 12 in the microwave for 30 seconds, flip and heat for 20 seconds more.
-Ladle some sauce on the bottom of a casserole dish and spread it around. This will keep the enchiโs from sticking.
-Take a corn tortilla and coat it with the sauce (will help to prevent breakage) and fill with a row of chicken mixture down the middle. Place the rolled tortilla, seam side down into the casserole dish and repeat with remaining tortillas until the dish is filled.
-Top the rolled tortillas with extra sauce to make sure every tortilla is fully coated and top with as much Mexican cheese as you would like.
-Bake, covered, in a preheated 375* oven for 30 minutes. Remove foil and bake for 15 minutes more, or until cheese is brown and bubbly.
-Top with sour cream, green onions and cilantro to serve.
I let it cool, covered it with saran wrap and put it in the fridge as a surprise to the pilot when he gets home. This is seriously one of his favorite mealsโฆ possibly because itโs the epitome of comfort food. *Whatโs your ultimate comfort food?? Mine has to be tortilla soupโฆ with avocado slices. Just warms my soul ๐
I spent about an hour doing yoga (a Namaste yoga episode on FitTV and a 20-minute Hip Opening Flow from Yoga Download) and spent some quality time with my new boyfriend, the foam roller.
Snack time was a macaroon Larabar:
And now Iโm off to make a spin cd, train a client, teach spin and Zumba and then back for another training appointment. Iโve purposely cut back training because I leave for school in exactly one month!!! There wouldnโt be a point for me to sign new clients when I have to leave so soon. Iโm way excited about my upcoming adventure though ๐
Hope you all have a wonderful day!!!
xoxo,
Gina
That was awfully nice of you to make the Pilot his favorite dish! My comfort food would probably be a milkshake, I think it's because when I was little my mom would always get me one if I was sick:)
I love your yoga mat, I love everything pink! Where can i buy it? Also what cookbook would you recommend? Your recipes are fabulous, going to try out some of the Vega products. I'm off to the States in the morning so I'll stock up on some fitness stuff and food, we don't have a great selection of fitness things here in Ireland.

I can see why that is pilot's comfort food ๐ My comfort food is a bowl of piping hot oatmeal with bananas and cinnamon! Mmm!
Cute mat! ๐
Oh my goodness, I'm SO FREAKING EXCITED for you that school starts soon – you're going to love the program.
Lovely enchiladas! I don't think I could ever even remotely try to get Josh to eat like me ๐ He will eat the occasional veggie meal every now and again but he values his steak night ๐ You must be getting super excited for school!! Hope your classes go well tonight
Wow, the pilot is a lucky guy – those do look like the perfect comfort food. Its strange, but I think my favorite comfort food is oatmeal. My dad always used to call it "rib-stickin" and it signals the start of a brand new day. ๐
Have a great afternoon!
I think my husband would be in heaven if I made him those enchiladas! They look incredible. I might have to surprise him one of these days…
Bella cracks me up! She always has this "just got caught in the cookie jar" face on in pictures!
great enchilada tutorial! i love comforting meals. one of mine definitely has to be my mom's chicken casserole. So easy and good and just reminds me of home.
that's so exciting that school is in a month!
do you ever make mole sauce? i love it, but i'm not sure how authentic the recipes are that I've found.
Cute yoga mat, lady!
You've inspired me to make something manly and meaty for my Chris. I think he deserves it, don't you?!
Gina, I used to make those all the time! Gawd they are good! ๐ I actually have been thinking about looking at the recipe and tweaking it a bit. My local grocery store has organic cream soups and while the sodium content is still up there, all the ingredients are organic. Not too shabby, like you said, for a once in a blue moon kind of meal! ๐
Those enchiladas look so good! I think I'm going to have to make them for my husband with a few substitutions since he can't eat chicken. I think he'll love all the cheese. ๐
That dish looks like something MY husband would like too ๐ good luck with school, can't wait to hear all about it!
wowza – those enchiladas look AMAZING!
oh wow, those are some cheesy enchiladas! you are going to have a blast in school girl ๐
Oh my I am sooo hungry now.
Lovely blog
Mmmm, tortilla soup! Have you seen the Hector Elizondo film by that name? It's about a Mexican-American chef and always makes me SO hungry!
So cute to surprise him like that! I need to do that but I'm rarely home when he's not ๐
Pineapple is always such a great addition to smoothies!
holy foodgasm! ๐ i might have a slight idea why this is his favorite dish. looks delicious!
lol. I'm making a non-me meal for the hubby this week too. W/tons of cheese. The things we do…
That husband of yours is one lucky guy! Shane would LOVE to have that meal! haha. My comfort food is an Almond Butter and Jelly or chili. Mmm mmm.
Cute yoga mat!
ahhhh…that pilot better have given you one big fat kiss for making that meal for him. ๐ hehe!
Okay those enchiladas may not be healthy, but they sure look TASTY!! Sometimes you just have to indulge in REAL unhealthy type food such as that ๐
My comfort food would have to be French toast or meatloaf.
I would love to be shrouded in a cheese blanket ๐ My tum wouldn't but I would! My comfort food is grilled cheese and tomato soup – oh so delicious!
Hope you got my email about IT stretches!
great tip on coating the tortillas in sauce first. makes sense.i love vegan style enchiladas and this will make them better!
Cute yoga mat!
My comfort food is for sure wholegrain tortilla chips with salsa. Alongside a big glass of red vino – and it's just like being at University all over again.
That, or my Daddy's pizza. It is also, shrouded in a cheese blanket.
I showed the enchilada recipe to my bf and his eyes lit up. I think he considered marrying them. I'll have to make them now. ๐
Hey girl, hope the IT Band is feeling better.
Ugh, the sore IT band is the worst! I know you mentioned you are trying this, but I honestly find that the foam roller is the very best cure for a tight band. If you you-tube Foam Roller, you will find some great exercises that use the roller.
Good luck hun and take care of that band. Any serious injury to it is a major killer and takes ages to recover from.
Yummy looking enchiladas! I love all things Mexican and covered in cheese. ๐
Hope your body is back to normal soon!
homemade chicken noodle soup ๐

Cute yoga mat! And, is your dog a shiba inu? We almost got a shiba inu but went corgi instead. ๐
my ultimate comfort food would be anything with dark chocolate, creamy pb, banana and lots of cinnamon
Awww! You're so good to the pups… walks are sweet for their souls ๐
Love all of the pics!
Cheers,
Kristen
LOL–I can see my man loving those enchiladas, too. I'll try them and tell you how he likes them ๐
My hubs will love that!! Thanks for the recipe :). I know he misses the chalupas I used to make. I need to healthify those if possible???

Yum!! I would like to make these for a dinner party Thursday night, how many would this serve? I have 5 peeps to feed. My comfort foods are mac 'n cheese and mashed potatoes.
susan- got it at target! i think they have it online too… it's a giam mat and the pattern is lace heart or something like that ๐
hey rissykay- they would definitely serve 5. my husband eats a LOT ๐ i would just serve them with some spanish rice, refried beans and guacamole ๐ (all recipes are on my blog)
I want to make this for company for tonight. Do you think it would be okay to do all steps in advance up to cooking it in the oven and then pop it in the fridge until they get here and are ready to eat?
i’m sorry i’m just now getting back to you! did it work out ok?? usually i would cook it completely and heat up in the oven so the tortillas don’t get soggy
I decided to do the prep work and waited until they arrived to put it all together and cook it. Thanks!
gotcha! hope it turned out well!
