Shrouded in a cheese blanket

Hey guys! Hope your Monday is treating you well ๐Ÿ˜€ Thanks so much for the suggestions and tips with the IT band stuff. Iโ€™ve been spending some time with the foam roller and am also getting a massage on Thursday before we leave. That, combined with the fact that I donโ€™t have to teach 3 classes a day anymore, should *fingers crossed* make a huge difference!

I had the same sludge as yesterday before walking the puppers:

Pineapple, frozen banana, water, 2 scoops Vega goodness, sea salt, Stevia, vanilla and cinnamon.

We walked for about 40 minutes (I owed them after yesterday) and a man walking thanked me for picking up their dog disasters. I wouldnโ€™t be able to just leave them there, but it was nice (and random) for him to thank me.

We came back to the casa and I decided to surprise the pilot by making one of his favorite meals.

White Enchiladas (a prime example that Iโ€™ll never make the pilot eat as I do)

Hereโ€™s the recipe:

(I must forewarn you, itโ€™s not healthy, but is quite delicious and is a great meal to make every blue moon)

Sautรฉ 1/2 yellow onion with 1 can drained green chilies and season with salt, pepper, 1/2 ts cumin and add two finely minced garlic cloves

Add in 1 large can (family sized) of cream of chicken soup, 1 small can cream of mushroom soup and 1 cup chicken stock or water (I used the latter as I didnโ€™t have any chicken stock on hand). Stir to combine.

This is the โ€œsauceโ€:

Shred a rotisserie chicken of choice (Iโ€™ve used the mole, lemon pepper and traditional flavored ones and they all got rave reviews), or you can bake boneless, skinless chicken breasts and shred the meat. I say why do the extra work when someone else can do it for you? ๐Ÿ˜‰

Add in 1 handful of shredded Mexican cheese, a ladle-full of the sauce and stir to combine.

This is the filling:

Take a pack of small corn tortillas and heat 12 in the microwave for 30 seconds, flip and heat for 20 seconds more.

-Ladle some sauce on the bottom of a casserole dish and spread it around. This will keep the enchiโ€™s from sticking.

-Take a corn tortilla and coat it with the sauce (will help to prevent breakage) and fill with a row of chicken mixture down the middle. Place the rolled tortilla, seam side down into the casserole dish and repeat with remaining tortillas until the dish is filled.

-Top the rolled tortillas with extra sauce to make sure every tortilla is fully coated and top with as much Mexican cheese as you would like.

-Bake, covered, in a preheated 375* oven for 30 minutes. Remove foil and bake for 15 minutes more, or until cheese is brown and bubbly.

-Top with sour cream, green onions and cilantro to serve.

I let it cool, covered it with saran wrap and put it in the fridge as a surprise to the pilot when he gets home. This is seriously one of his favorite mealsโ€ฆ possibly because itโ€™s the epitome of comfort food. *Whatโ€™s your ultimate comfort food?? Mine has to be tortilla soupโ€ฆ with avocado slices. Just warms my soul ๐Ÿ˜€

I spent about an hour doing yoga (a Namaste yoga episode on FitTV and a 20-minute Hip Opening Flow from Yoga Download) and spent some quality time with my new boyfriend, the foam roller.

And now Iโ€™m off to make a spin cd, train a client, teach spin and Zumba and then back for another training appointment. Iโ€™ve purposely cut back training because I leave for school in exactly one month!!! There wouldnโ€™t be a point for me to sign new clients when I have to leave so soon. Iโ€™m way excited about my upcoming adventure though ๐Ÿ˜€

    That was awfully nice of you to make the Pilot his favorite dish! My comfort food would probably be a milkshake, I think it's because when I was little my mom would always get me one if I was sick:)

    I love your yoga mat, I love everything pink! Where can i buy it? Also what cookbook would you recommend? Your recipes are fabulous, going to try out some of the Vega products. I'm off to the States in the morning so I'll stock up on some fitness stuff and food, we don't have a great selection of fitness things here in Ireland.

    Lovely enchiladas! I don't think I could ever even remotely try to get Josh to eat like me ๐Ÿ˜‰ He will eat the occasional veggie meal every now and again but he values his steak night ๐Ÿ™‚ You must be getting super excited for school!! Hope your classes go well tonight

    Wow, the pilot is a lucky guy – those do look like the perfect comfort food. Its strange, but I think my favorite comfort food is oatmeal. My dad always used to call it "rib-stickin" and it signals the start of a brand new day. ๐Ÿ™‚

    great enchilada tutorial! i love comforting meals. one of mine definitely has to be my mom's chicken casserole. So easy and good and just reminds me of home.

    that's so exciting that school is in a month!

    do you ever make mole sauce? i love it, but i'm not sure how authentic the recipes are that I've found.

    Gina, I used to make those all the time! Gawd they are good! ๐Ÿ˜€ I actually have been thinking about looking at the recipe and tweaking it a bit. My local grocery store has organic cream soups and while the sodium content is still up there, all the ingredients are organic. Not too shabby, like you said, for a once in a blue moon kind of meal! ๐Ÿ˜€

    Okay those enchiladas may not be healthy, but they sure look TASTY!! Sometimes you just have to indulge in REAL unhealthy type food such as that ๐Ÿ™‚

    My comfort food is for sure wholegrain tortilla chips with salsa. Alongside a big glass of red vino – and it's just like being at University all over again.

    That, or my Daddy's pizza. It is also, shrouded in a cheese blanket.

    I showed the enchilada recipe to my bf and his eyes lit up. I think he considered marrying them. I'll have to make them now. ๐Ÿ˜‰

    Hey girl, hope the IT Band is feeling better.

    Ugh, the sore IT band is the worst! I know you mentioned you are trying this, but I honestly find that the foam roller is the very best cure for a tight band. If you you-tube Foam Roller, you will find some great exercises that use the roller.

    Good luck hun and take care of that band. Any serious injury to it is a major killer and takes ages to recover from.

    hey rissykay- they would definitely serve 5. my husband eats a LOT ๐Ÿ˜€ i would just serve them with some spanish rice, refried beans and guacamole ๐Ÿ˜€ (all recipes are on my blog)

    I want to make this for company for tonight. Do you think it would be okay to do all steps in advance up to cooking it in the oven and then pop it in the fridge until they get here and are ready to eat?

      i’m sorry i’m just now getting back to you! did it work out ok?? usually i would cook it completely and heat up in the oven so the tortillas don’t get soggy
