Superbowl Snacks

Even though it isnโ€™t for a couple of weeks, Superbowl hubbub is already in full swing.

Iโ€™ve mentioned this before, but after all of football games Iโ€™ve been to in my life, I still donโ€™t really understand it.game2

(My second date with the Pilot was an Arizona homecoming game)

I understand touchdowns and field goals, but start talking about first down, second down, blah blah, you lose me.

I just know when to rattle my keys and cheerโ€ฆ the important stuff, right?

As far as Superbowl goes, I donโ€™t really care about that too much, either. I usually donโ€™t find out whoโ€™s playing until that day, and pay attention to the commercials and gabbing with friends more than the actual game.

But snacksโ€ฆ

I definitely pay attention to the snacks ๐Ÿ˜‰

Here are some of my favorite Superbowl-worthy dishes if youโ€™re planning a party or heading to watch the game with friends:

Sweet potato, goat cheese and chives rounds

sweet potatoes

(bake the sweet potato rounds with olive oil, salt and pepper 375 for 20 minutes- top with goat cheese and bake 5 more minutes, top with chives)

Mini caprese stacks

appetizers

(Baby tomatoes seasoned with salt and pepper, cut in half, with 1 basil leaf and a slice of mozzarella)

Articoke dip

dip (2)

(recipe in the cookbook Eat, Drink and Be Vegan)

Tuscan White Bean dip

bean dip

Sweet Potato and Black Bean Chili

chili

Vegan Chocolate Chip cookies

cookies (2)

And now I really want a cookie.

Do you party it up for the Superbowl? Any other football-clueless friends out there?

Hope you have a great day <3

xoxo

Gina

Something to think:

Look, I really don’t want to wax philosophical, but I will say that if you’re alive, you got to flap your arms and legs, you got to jump around a lot, you got to make a lot of noise, because life is the very opposite of death. And therefore, as I see it, if you’re quiet, you’re not living. You’ve got to be noisy, or at least your thoughts should be noisy and colorful and lively.

Yum, those sweet potato rounds look delicious!

I have to say, I can’t get my head around American football. I spent a semester in America going to college and just went to the games because they looked fun! In Australia, our football players don’t wear those weird padding things and helmets ๐Ÿ˜‰

Okay that is a food party I want to be a part of…I feel the same way when it comes to football! The food gets the attention, the cheering is secondary! I love the twists to common snack foods like the caprese snacks. And, the sweet potato rounds are definitely going on my recipe list. YUMMY!

good ideas! Love those sweet potato circles! I too have prepped a post on getting ready for the big day!

Will you make a vegan chocolate chip cookie please!?!?!

I can’t believe it’s almost the superbowl…wasn’t it just like, last month? Wow, this year flew by!

I am much more concerned about the dessert tray than anything else. Scratch that: I go to the mall b/c it’s not usually as crowded and the people there are hard core shoppers and are there while most everyone else is glued to the tube ๐Ÿ™‚

I love that Mel brooks quote ๐Ÿ™‚

Haha, I am certainly clueless just as you are when it comes to foot ball. The parties my parents used to have all involved copious amounts of chilli, chicken wings and meat balls. Your suggestions looked a million times better than that!!

I was in high school and college marching band so I used to go to a lot of football games. Even though I played two-hand touch or flag football with my brothers/cousins and the kids in my neighborhood, I didn’t really get the sport until a friend in band explained the first down. As soon as I understood that you had 4 downs to move the ball 10 yards (and then get another first down and more tries) past the line of scrimmage things made much more sense. I still get confused by things like safetys, touchbacks and the NFL’s new overtime rules. But overall, I like watching games. Too bad I don’t really have a team to cheer for in LA.

Yes! This is all you need to know to follow a game if you are with some one who understands football….the team has four tries (downs) to move the ball 10 yards, marked by a floating yellow line. If they get 10 or more yards, the four tries start all over again. If they can’t do it, then the other team gets the ball at the same place. On the fourth down (last try), the team has the option to “go for it” which means pass or run it to try to get the last few yards, but usually (?) they will either kick (punt) or try for a field goal. The risk of “going for it” is that they might not get the last few yards and will turn the ball over to the other team at a good field position. When I got this, I could follow games, but my husband still has to fill me in on the other things…

You could be like me and marry a coach and know anything and everything there is to know about football and really every other sport there is! ๐Ÿ™‚

AMAZING food! Question – are you leaning more vegan these days? I am still seeing goat cheese of course, but lots of vegan stuff. Is this a conscious decision or you’re just finding lots of yummy vegan stuff?

I’m clueless when it comes to football too! And I can’t even use it as an excuse to have a party because my school always has midterms right around the time of the Superbowl. ๐Ÿ˜›

I must make the sweet potato, goat cheese and chives rounds. Don’t know if I can make it until the Super Bowl. I may need to make those as a side tomorrow night! Thanks for the idea!

L-O-V-E that quote, Gina! It’s so true. Definitely got my day started on a positive note. All the Superbowl snacks are amazing ideas…esp the tuscan white bean dip. YUM!

I want to come over. Seriously…you throw the best dinner parties..the Super Bowl is no acceptation!

My husband is beyond obsessed with football and all sports. He lives and breathes them. 3 Fantasy football leagues, 2 baseball leagues and a basketball league. Every 5 seconds I hear “Laur, come see this play!” Most of the time (unless it’s baseball, I <3) I couldn't care less…I have to humor him though. I understand the games, just not as interested in them as I was as a kid!

I am making those sweet potato rounds whether or not I go to a SP party. They look amazing and something everyone would enjoy!

Congrats on your new addition, Gina!
I have been following your blog for some time (beginning of your 2nd trimester I think) and want to thank you for graciously, and so openly, sharing your life with me. Frankly, I didn’t realize how much I was looking forward to your posts until you had Livi and I found myself searching through my feed reader daily looking for your blog posts!! :). Please know that you have a profoundly positive impact on one soul (at the very least!) and that your abscence did not go unnoticed.

You are a true source of inspiration and motivation for a “skinny-fat” girl like myself!

    Sincerely,
    Lauren

PS: Please add me to you distribution list when you have a minute.

I hosted a movie marathon at my apt yesterday and made the sweet potato and black bean chili for lunch. It was a big hit! Thanks for the recipe.

  22. Alaina on January 29, 2012 at 12:07 pm

I love the Mel Brooks quote! I have that one on my Facebook page. ๐Ÿ™‚

I’m looking forward to the Super Bowl this year (I’m from New England) but I am decidedly nervous as all get out! It’s going to be a stressful game; I probably won’t be able to eat! But the black bean and sweet potato chili looks so good!
