Hi! Happy Monday! How was the weekend? Any fun adventures?

Friday afternoon, Liv and I had a lunch date with Whitney and Wynston. True Foods is always the answer.

(I get the same thing 99.97% of the time: kale salad, add salmon, sweet potato hash.)

Later that night, we went over to a friendโ€™s house for dinner. She had planned to grill some chicken, burgers, and sweet potatoes (she knew we were on our little detox, I was spared the awkwardness of telling her about it) and asked me to bring a salad. I made this awesome kale salad since it tastes better after sitting for a little while (instead of wilting to soggy city like most dressed salads), and love the creamy savory dressing.

I didnโ€™t want to be โ€œthat weird kale girl,โ€ so I also brought a pan of brownies.

Saturday morning was a training session, Zumba, Livโ€™s ballet class, and hanging out at the house. Saturday night, we decided to grill a glorious dinner: scallops, roasted garlic potatoes and house salad with vegan Ranch dressing. Quite an amazing feast! I originally planned to wrap the scallops in bacon for the Pilot, but since I couldnโ€™t find the skewers, I made bacon on the side.

Yesterday, we surprised Liv by taking her to see Fancy Nancy: the Musical. She looooves the Fancy Nancy books, and a Twitter friend let me know that the musical was coming to Casa del Prado at Balboa. It was so cute! The Balboa Junior Theatre is extremely family-friendly: they allow snacks, waters, and it was a sold-out crowd of families. The kids who performed were so talented and the show was the perfect length at one hour. Youth theatre productions have a special place in my heart, since they were a huge part of my childhood and high school life (I was a musical theatre major before I switched to Finance). I was excited to take Liv to the show, and she absolutely adored it. We will definitely be back to check out future productions!

Spent the rest of the afternoon walking around Balboa:

exploring the art exhibits, listening to live music, and riding the historic carousel. I had no idea they did this, but they hang a wooden lever down and riders can grab rings from the lever. If you get an iron ring, you throw it at a stuffed animal to knock it down; if you get a brass ring, you get a free ride.

Not a bad way to spend a Sunday. ๐Ÿ˜‰

    You were a music theatre major?! Oh my goodness–I’m applying to major in music theatre! Which university do you suggest for the states, and have you heard of Sheridan College here in Canada? I have so many questions for you.

    I can relate! I usually make a boxed dessert (love Immaculate Baking Company) as well when I take something to a party/cookout so I’m not the weird healthy girl…

    The kale, salmon and sweet potato hash lunch sounds amazing. I used to love dance like Liv! Then it was horses, gymnastics, etc. I was all over the place! By training session did you mean you are training or working with clients one one one? Have a great Monday!

    I love seeing all of your adventures! This weekend we took a day trip to Frankenmuth, which has the world’s largest Christmas store! It was an experience to say the least!

    I loved singing and dancing when I was a kid. I was all over it. And then I became a speech therapist. Lol. I still sing some. I was in a community Bach choir for a few years and I sing in church some.

    And I am sooooo excited for winter shape up! I’ve been on the sidelines the last couple years but this time I’m all in.

    Congrats on your detox. My conditioning class is cancelled with MLK day, so I’m doing my Body Pump video at home today. Do you have a recipe for your kale salad?

    All your eats look amazing! I know all about being “the weird kale girl” when eating out with other people in a public setting ๐Ÿ˜‰

    As a kid I think my hobbies were just getting dirty and getting into things. As a Mommy to 3 now, it’s more like “cleaning dirty messes” my own get into.

    SO EXCITED FOR SHAPE UP! Its my first day back to school. is that not perfect or what?!
    And, Can I ask why you switched from musical theter to finance?

      happy first day back!
      my mom and i had a long talk about the reality of getting a job with musical theatre, so i switched to something that was “safer” (which is funny because i don’t use my degree in a traditional sense at all). finance was an easy choice because i was a math nerd

    I took dance as a kid and I did it for 13 years. I don’t dance anymore, but I do like barre workouts and zumba, which are kind of similar. I miss it sometimes though!

    I love Balboa park! That show sounds awesome I saw one a few years ago, the kids were amazing! I never knew about that carousel thing with the levers. We will be in SD this summer for a few weeks so I’ll have to take my girls to balboa.

    I love Olivia’s baller outfit! Too cute! I was a ballerina when I was little and continued dancing for 20 years. I still go to barre and Zumba to keep my dancing feet wet. I still love to throw on music and choreograph when I feel the need. Today in trying Orange Theory Fitness for the first time.

        It was crazy awesome!! I loved the class and it flew by. The whole atmosphere was incredible. It’s a new studio in my area so the class times are a little limited, but I might sign up for a month when better times pop up.

          I also by accident drove half way home before I realized I was still wearing the heart monitor. Then I had to run back and embarrassingly drop it off. That wasn’t embarrassing at all lol

    Sounds like the perfect little weekend! As a kid I loved being able to ride my bike to the end of the street by myself. My first liberty as a child! Now kids are motor scootering to the end of the street…what is happening?!?!

    That Kale girl! ๐Ÿ˜‰ I have encouraged an addiction to massaged kale salad with my sister-in-law and recently sent a kale salad to a friend who had a baby, and I have been asked numerous times in the past week about the kale salad recipe. I get “hey, you make that kale salad right?…can you email me the recipe?” I guess that’s a good thing to be “known” for.

    Love kale salad! I could eat a ton of it. The good thing is that my kids feel the same way! Livi’s ballerina shirt is so cute! My daughter would love it.

    True Foods is always the best. I get their quinoa burger with the kale salad and sweet potato hash. It’s divine! I had someone else in Phx say they’ve only ever had bad things there. I couldn’t believe it! I was a dancer for 15 yrs-ballet, tap and jazz. Choreographed all my cheerleading routunes through high school. Now I can’t even Zumba without feeling like I’m bouncing around like weirdo. I’ve lost all coordination.

    Sounds like you guys had a fun weekend! I remember 6th grade musical theater and it was so much fun! I used to dance and do gymnastics as a little kid also. I had real plans to ice skate/compete in gymnastics during the olympics one day. Today I am going on a hike and probably will catch a yoga class later.

    Ohhh fun!! I was in a few plays and the band as a kid as well, which was really neat. I think that’s why I’ve always enjoyed seeing all sorts of productions, from ballets to operas to symphony. There’s just something about live performance! Happy Monday! ๐Ÿ™‚

I went to San Diego for the first time last March with one of my aunts on a girl’s trip and we had a great afternoon in Balboa. Sounds like a fun weekend!

    What a fun weekend! I love carousels that do the brass ring game. I grew up going to the Jersey Shore in the summer and that was always a favorite.
