Carrot, beet and bean burgers
Hey friends! Happy humpday! This week feels so short since I was traveling this weekend- I like it ๐
So to those of you who guessed beet burgers were last nightโs dinnerโฆ

Carrot Beet & Bean burgers
-1 organic beet, roughly chopped
-2 carrots, roughly chopped
-1 can cannellini beans
-1/3 C chickpea flour (ground oats would be lovely too)
-1 t mustard powder
-1/t dried oregano
-1/4 t garlic powder
-sea salt and pepper
1. Preheat the oven to 350 and grease a cookie sheet with the Misto ( or non-stick cooking spray)
2. In a food processor, add the carrots, beet and pulse to finely chop
3. Add in the beans, seasonings, chickpea flour and blend well. Donโt taste the mixture- uncooked chickpea flour tastes foul.
4. Transfer mixture to a bowl and stir in remaining beans. Using a measuring cup, make burger patties on the cookie sheet
5. Bake for 30 minutes at 350, gently flip over and bake for an additional 15 minutes.
Serve with a salad or roasted veggies. ๐
Glorious! They were also a marvelous shade of reddish-pink, so I was definitely a fan ๐ Itโs also fun to switch things up from the usual black-bean burgers (Emily has my fave recipe).
I ended up skipping out on yoga last night because traffic was horrendous and when I was 4 lights away with 2 minutes to go, I knew I wasnโt going to make it to class on time. It was probably for the best because my body was exhausted (I think itโs a mix of traveling and lack of sugar), so instead I went to acupuncture to take a nap.
It was pretty peaceful and wonderful, but the same spot on my leg hurt like a biotch when they put the needle in, so I asked them to remove it. They told me the name of the point is Stomach 36 and that itโs a pretty critical point for getting the qi (energy) to flow. Apparently Stomach 36 and I arenโt friends. Any acupuncturist bloggies know what the dealio is?
I still think itโs pretty funny that the biggest needle chicken in the world likes going to acupuncture ๐ Itโs the closest thing I can get to renting a nap pod (the US really needs to get on this trend), so if it means I have to have needles sticking out of my arms, legs and head, Iโll take it:)

After all of that, I came home, feasted on above beet burger meal and called it an early night.
This morning, I couldnโt wait to get some green juice:
-1 head of romaine
-1/2 cucumber
-1 green apple
-handful of dandelion greens
-1/2 lemon

Haha those pods totally creep me out… I don’t think I could take a nap on the street in one of those things. Where I live people are always napping on the subway on the way to and from work, and I can never figure out how they get comfortable enough to do that either.
Cracks me up how much those burgers look like raw beef patties! Beet burgers sound so awesome!
I can’t even nap at home, much less in a pod! A girl @ our office has a cot she unfolds in our storage room & naps for part of her lunch hour. How about a RR on losing the last 5-10 pounds? Why is it the hardest?
That’s too funny – today in class my business professor brought up the fact that Google has nap pods in their building! Not to mention a fitness center, a 5-star restaurant, and slides! Um, why didn’t I pursue a computers degree?? ๐

I am currently in massage therapy school & ST36 is a point that can be used in the Eastern massage modality known as Shiatsu. In Shiatsu, we use potent points the way acupuncturists do, but instead of needles we use our bodies to apply pressure – acupressure. If you want, you can just try pressing ST36 with your finger. That may help the (chi) energy in that area & you can control the amount of pressure you apply yourself. I don’t have an issue with ST36, but I know many people who are sensitive to it.

I think we might have to duke it out for title of biggest wuss about needles…Seriously, the thought of acupuncture makes me weak in the knees and clammy in the palms!!!

I just came across your website recently because I was looking for some healthy meal ideas and your Summer Shape Up 2010 came up. I’m in university right now so I don’t really have the money to spend on a gym membership so do you have any suggestions for exercises I can do at home that don’t require equipment? You seem like such an energetic and positive person, all your posts I’ve read so far are definitely inspiring ๐
Yay acupuncture! ST36 is a tender point on a lot of people, both because of the energetics and the musculature. It’s also really helpful! In chinese the name means ‘Leg Three Mile’, because it’s said if you’ve collapsed from exhaustion, needling that point will let you jump up and walk another three miles ๐
If you always find it’s tender, ask your acu about moxa on that point. (moxa warms a point by holding a cigar of burning herbs over it.)
do you know how many cups of cooked beans the can of chickpeas is equal to? Most cans of beans are ~15-16 oz {2 cups cooked} but wanted to make sure. thanks bunches.
