Lasagna Pizza

Itโ€™s a slow morning over here!

[Bella was mad for the lack of recent blog face time, so I had to remedy that. Sorry, Bell]

The Pilot and I were feeling adventurous and decided to pry ourselves off the couch from watching X Factor and go out and do something last night. Cocktails and mocktails sounded like a good plan, so we headed over to our favorite patio spot at Sakura. We had no idea that a benefit dinner was going on, so the patio was closed. Sooooo we ended up chilling at the madreโ€™s and then hitting Starbucks. At least we went out, eh?

I ordered a short drink (soy hot chocolate) since I was still extremely full from dinner.

Butternut squash, goat cheese and arugula pizza!

I based this pizza off my favorite lasagna– thought it would be good in pizza form, and it was incredible.

Thereโ€™s not really a recipe, but hereโ€™s what I did:

Used a pack of gluten-free dough

dough

let it rise and all that jazz

dough (2) 

steamed some bnut squash (in the microwave, covered with a damp paper towel)

bnut 

and after pre-baking the crust, topped with goat cheese (soft and gouda), marinara, butternut squash, arugula, sea salt, pepper and oregano.

I actually might have a piece with an egg for breakfastโ€ฆ.

The Pilot is off work today, so weโ€™re going to get some things done around the casa before we leave tomorrow.

    thanks for always having the yummiest meals i can copy! i can’t have dairy, and my husband doesn’t eat gluten, so there a a lot of nights I get frustrated with dinner. I am going to try this pizza, like, tonight!

    Hi Gina – i remembered reading your post from the other day about how all of your workout capris still fit, but it’s too cold for them now, and I wanted to tell you how I’ve been making my capris work in this cold weather. I’m not pregnant, just too lazy to do my laundry and I am not wearing dirty stretched out jeans. I have a butt, you know.

    Anyway… My yoga capris aren’t long enough to wear with my boots by themselves (looks lame), but when I put a pair of chunky socks on over the capris, and then put the boots on (so you can see the socks still) – WARMTH! Looks cute, too.

    Maybe this isn’t news to you, but I thought I’d share. ๐Ÿ™‚
