Brownie Fruit Pizza

I finally started packingโ€ฆ

This means I have a pile of travel-sized things + Reebok clothes and shoes, ready to be stuffed into a suitcase.

Bella wants to know where weโ€™re going on vacation, and Caroโ€ฆ well, poor Caro is just freaked out from the monsoon storms.

Weโ€™re having a little dinner party at our house tonight โ€” the best type to have the night before leaving on a trip: one where youโ€™re not doing the cooking.

Kyle and my Uncle Eric (the pro chefs in the family) are making dinner at our house for everyone. Iโ€™m guessing there will be about 15 of us ๐Ÿ™‚ Iโ€™m not sure whatโ€™s on the menu, but word on the street is that ahi tuna and truffle fries are on the menu. Canโ€™t wait!

If youโ€™ve ever been to a Pampered Chef party, chances are that youโ€™ve tried brownie or cookie pizza. Itโ€™s a festive and refreshing summer dessert, plus you can customize it according to your preferences. The idea is super simple: bottom layer is brownie or cookie (the fancy kind made from a boxed mix), the โ€œsauceโ€ is some kind of cream cheese or pudding mixture, and the toppings are whatever you like: fruit, nuts, chocolate chips, mint, anything goes!

I made the brownie part after breakfast this morning,

and during nap time it was cooled enough to be topped with a whipped cream cheese, powdered sugar and vanilla mix.

Next, I added slices of fresh fruit,

and made sure cover the banana slices with a bit of lemon juice so they wouldnโ€™t turn brown.

This is an awesome easy party dish, especially since we usually have most of the ingredients on hand.

Liv is starting to stir from her nap, so Iโ€™m off. We have a couple of errands to run, then itโ€™s party time. See ya in the morning <3

    Oh my goodness, I totally forgot about cookie fruit pizzas! My mom used to work for Pampered Chef several years ago, and weโ€™d have Pampered Chef parties all the time with lots of cookie fruit pizzas involved. ๐Ÿ˜‰ Iโ€™m going to have to make one soon! Yum!

    Iโ€™ve had cookie pizza at a pampered chef party but have never made it. Not sure why since it is so easy and with the fruit additionโ€ฆ itโ€™s sort of โ€œhealthyโ€ too. You know, for a brownie smothered in cream cheese! ๐Ÿ™‚

    Fruit pizza is my absolute favorite dessert. I love the mix of thin cookie with fruit. I havenโ€™t had the opportunity to go to a pampered chef party, but if they serve these, Iโ€™ll start showing up at every single one!

    Just came across this recipe and it looks so good. What are the approximate measurements for the frosting you made?
