Cauliflower Bread Grilled Cheese – A Low Carb, Extra Veggie Take On a Classic
I’m eager to share this awesome take on the traditional grilled cheese sandwich: Cauliflower bread grilled cheese! I know, right?
But first, ugh.
This is what happens when I say I like Daylight Savings:
-we all have an impossible time waking up and getting out the door this morning
-I forget Liv’s gymnastics outfit at home
-I step in dog poo. Isn’t it so violating when that happens?
Some good things from the day:
-BODYPUMP was awesome this morning. 🙂
-I got to see a hand therapist for Thumbgate. It was GLORIOUS. They desensitized my thumb by putting my arm in a sleeve attached to a machine. The machine gently circulated warm air and ground corn husks around my hand and arm (it sounds weird, but it felt great). Next, I placed my hand in a bucket of stones and buttons and moved them around. Finally, I got some massage and ultrasound therapy to break up the scar tissue. It feels less numb/painful than it has in months.
-THIS SANDWICH.
Cauliflower Bread Grilled Cheese
I’ve been doing a lot of quesadillas lately, and sandwiches on Paleo bread. When I saw this recipe pop up on Well+Good, the photos were so mouthwatering and the combo was so strangely intriguing, I knew I wanted to give it a try.
PS these little cornichons are delightful.
I followed the recipe pretty much exactly (using manchego cheese instead), but streamlined some of the process. There’s no way I could spend 30 minutes making a sandwich (even when it’s a really delicious sandwich). Trader Joe’s sells riced cauliflower, which helps make it go a lot faster! Also, instead of sautéing for 15 minutes, I went for about 5,
and used a clean dishtowel to strain the excess liquid. I also didn’t allow 10 minutes to cool; just spatula-ed out of the pan, smeared some butter, and made the sandwich right away. It was amazing!! The cauliflower was light and fluffy, and gave a light sweetness.
I layered the “bread” with manchego and sliced cornichons. It was a great snack and fantastic way to get in an afternoon serving+ of veggies. 🙂
Now it’s time to get ready for spin!
Hope you’re having a wonderful day <3 Any DLS snafus? Anything awesome about your day? Delicious sandwich combos or fave Trader Joe’s finds?
xoxo

Hmm the sandwich has me intrigued! I’ve been craving grilled cheese lately so I might have to give it a go! I think I’ll follow your shortcuts too!
hope you love it too!
I’m so glad your thumb is feeling better! Isn’t it amazing when chronic pain gets even a little better? I hope you get some more visits to get it as good as possible!
yes! it was amazing that one treatment made a huge difference. i was approved for 20 visits (it took months, but it went through!!!) so i’m really excited to be able to go twice a week <3
xoxo
That sandwich looks so epic! I saw the same one pop up on Well & Good but didn’t click it. Now I’m definitely going to make it and I’m going to follow your lead with the manchego. That sounds awesome!
hope you love it, too!
Bookmarked the recipe from Well+Good as well! Glad it’s worth it – thank you for making it to prove that, haha 🙂
hahah no prob!
Holy guacamole, I’m drooling. (Sidenote: Whyyyy do I always decide to read food-related posts right after working out??? It just makes me want to faceplant into my computer monitor. The struggle!)
DLS is great, but it makes getting up at 02:30 for opening shifts at the ‘bucks that. much. harder. Thank the Lord for free coffee!
2:30! free coffee would be a necessity
The cauliflower bread looks very interesting! I might have to try and create a vegan version. I am completely addicted to those cornichons from Trader Joes. I love eating them while I make dinner.
i could eat 2837499 of them haha
How intriguing! I may have to give this a try sometime. Thanks for sharing 🙂
My boss just gave me a recipe for cauliflower pizza dough. I can’t wait to try it!! 🙂
it’s surprisingly amazing 🙂
I tried the cauliflower pizza dough last week, and while I loved it, it was too much work for me to do again. I was making regular pizza dough for the rest of the family and the cauliflower stuff for me and together they dirtied a lot of stuff. Oh well…
That sounds delicious! Grilled cheese was my favorite sandwhich growing up. My favorite Trader Joe’s find lately is their Cold Brew. It’s amazing. 🙂
it’s so good with almond milk and cinnamon!
I need to check out that recipe. That sounds delicious!
sooooo good 🙂
Yum! Looks delicious! Are the cornichons savory dill or sweet?
savory! mustard seed, tangy, glorious
Yay! I’ll have to pick some up. I don’t enjoy the sweet ones…
i do but like the savory way more 🙂
I struggled with chronic pain for years. Thank you for sharing this part of your life and staying positive 🙂
<3 so sorry to hear you've been through it, too. i'm just staying hopeful that maybe one day i won't think about it anymore
My mouth is watering! I flew across the country from Fort Lauderdale home to San Francisco today and had to munch on snacky stuff all day because I didn’t have enough time to pack or buy decent meals. Therefore, nothing I ate was as good as that. Tomorrow is a new day! 🙂
ahh! those travel days are rough. you’re right though; tomorrow is a new day
I definitely want to try that sandwich! I have been all about cauliflower lately…that would be a fun twist 🙂
it is a fun way to switch it up
OMG this is a game changer, cannot wait to make this at home thank you for sharing xo C
hope you love it, too!
My most recent sandwich combination was a grilled cheese, on a seedy whole wheat bread, featuring apple butter, proscuitto, apple slices and super old cheddar, it was a fabulous sweet and savoury combo.
LOL, That is why those of us living in DST states don’t enjoy the time change. I’m still trying to reset my internal clock. I’m having crazy dreams and oversleeping. It’s all part of the fun. I thought you were crazy when you said that.
Cauliflower might be the most diverse ingredient in the world! This looks crazy good and I can’t wait to fix my grilled cheese fix with it!
I am glad your thumb is starting to feel better! 🙂
I had totally thought about making cauliflower bread sandwiches a while back but never followed through — this looks delicious and I love cornichons!
Wow that sammie sounds great! Pinning so I don’t forget to give it a try.
Ya DLS…my sleep is out of whack for sure! I still made it to 5:30am yoga though and it was amazing! Just what I needed 🙂
that cauliflower bread is blowing my mind!
This looks delicious!! I can’t wait to try it!
Um that cauliflower bread looks and sounds amazing! I’ll have to give it a try!

Turkey slices and mashed avocado on an Ezekiel wrap…omg delicious!!
