Sweet Potato Protein Breakfast Bowl
Sick of oatmeal for breakfast? Try a sweet potato breakfast to change it up! Bonus: itโs gluten-free, high in protein, nutrients, smart carbs, and customizable.
Iโve been a little bit breakfast bored lately.
Itโs my favorite meal of the day, but itโs also the most frantic. Iโm usually trying to feed Liv and P at the same time, chugging coffee, and scrambling around afterwards getting everyone dressed. For this reason, I usually donโt have a *real* breakfast until later in the morning, after the girls are playing happily after breakfast (or if itโs a camp or preschool day: after drop-off) or when P takes her first nap.
Then I can settle in, make some food and enjoy.
I usually stick to the same staples: overnight oats, egg burritos, egg with oats, breakfast cookies, or cookie dough cereal.

Iโve been known to eat a cold sweet potato out of the fridge, skin and all, but to actually put it into a bowl, heat it up with delicious toppingsโฆ.

This is one of those recipes that isnโt really a recipe, but a great idea that I wanted to share with ya.
How to Make Sweet Potato Breakfast Bowl
Bake an entire bag of sweet potatoes. Peel them while theyโre still slightly warm -theyโre easier to peel that way- cool to room temperature, and store covered in the fridge.
For breakfast, grab one medium potato or two smaller ones out of the fridge, and mash in a bowl with almond milk to thin it out.
Heat on the stovetop or in the microwave, before stirring in a scoop of protein powder, more almond milk as needed, pumpkin pie spice, and a splash of vanilla.
Top with any combo of the following:
sliced bananas or berries
walnuts, almonds, hemp seeds or flax
a drizzle of your favorite nut butter
shredded coconut
Honey or maple syrup
More cinnamon or pumpkin pie spice
Boom!

So glad you love it too! Bulk baking the sweet potatoes is definitely the key. They are just not the same in the microwave!

Brilliant and simple! I haven’t tried them heated, but I do throw in my sweet potatoes into my protein smoothies PWO. Adds sweet, creamy, and thickness to the shake. Yum!
I’m so lazy with breakfasts! I like a good bagel, cereal or one of my favorite smoothies. I do like the idea of a mashed sweet potato dinner combo though so maybe I’ll play with that.
I get bored with my usual breakfast routine as well (alternate b/w greek yogurt w/berries, overnight oats or micro-scrambled eggs and veggies) so I love this idea. I head to work early so always eat my breakfast at work so this looks like it would travel well -another bonus.
I have seen Jen’s sweet potato bowls on her blog and have been meaning to try it! I also keep seeing “sweet potato toast” and I’m definitely trying that as soon as I pick up some sweet potatoes!

Yes! Love this! I’ve been tired of my regular oatmeal for breakfast too but I would definitely eat this any time of day! Great for grab and microwave with no prep time for busy moms!

We do not have ‘regular’ sweet potatoes where I live but I am thinking your recipe would also be amazing with a butternut squash…… =)

IBe made something similar before with sweet potato, & cinnamon bun protein powder. So yummy!
I like to make sweet potato smoothie bowls which I guess is essentially the same thing ๐ I just throw a sweet potato in the microwave for like 6 min, then blend it up with some almond milk and maple syrup and put all sorts of toppings on it. So gooooood.
This looks great! I would never have thought to use sweet potatoes for breakfast. Breakfast is usually hard for me because I do not enjoy most of the foods in the morning that actually have protein in them. So always looking for good ways to get my dose of protein in the morning.
