WIAW
(on a Wednesday! Punctuality always feels a little strange.)
Hi friends! Howโs the day going? Hope youโre having a wonderful morning. Today Iโm blasting through work stuff and taking the girls to the pool. Itโs supposed to be in the 90s today?! Iโm sending sunshine to all of my blizzard friends — I hope youโre staying safe out there.
Iโve had a lot of requests lately to post a day of eats. I love to get healthy meal ideas from as many sources as possible, so I hope I can share something here you might want to use. (Dinner was a HOMERUN.) My meals have been a little on the (extra) boring side, with the exception of dinners (yay Sunbasket) and restaurants, but Iโve done a better job of fueling myself throughout the day. I never understood forgetting to eat (like how could you forget to eat?! Eating is EVERYTHING) until I became a mom. Then, it all made sense.
So hereโs a full day of food from start to finish ๐
7:30am: I take my supplements while making the girls their breakfast. Since the Pilot had to work later, he could go in a little bit later, so he dropped Liv off at camp and I blitzed over to barre3 for an early class.
Doesnโt that mixture look tasty?? Spoiler: it tastes like death and sadness.
barre3 was so so so good. My legs were insanely sore after our hotel workout on Sunday, so it felt great to shake them out and move. Iโm definitely taking today off, though.
10am: Half a chocolate donut and a black coffee from Dunkinโ Donuts.
The Pilot stopped at Dunkinโ on his way home from camp drop off, and picked up some goodies. I rarely eat sugary foods anymore, but LOVE a chocolate donut every now and again. I eat half of it and chug my coffee while playing with P on the playroom floor.
11am: The rest of breakfast! 2 eggs + 2 egg whites during Pโs naptime. This was my second attempt at making them because I completely burned the first batch in the cast iron (oops) and also cracked an egg onto the floor. #fail
12:30 pm: An RX bar and green tea as P starts to wake up.
3pm: Weโre back from camp pick-up, and I make my lunch: two small sweet potatoes (already prepped) with leftover chopped chicken thighs, Primal Kitchen Ranch dressing, and romaine. P picks at my salad, and the funny thing is that she loves the romaine with Ranch more than the chicken and sweet potato. She keeps going after the green crunchy bites.
4:45 Sharing blueberries with P during Livโs gymnastics class. I was still pretty full from lunch, but P thinks shoving berries into my mouth is hilarious and belly-laughs the whole time.
6:00pm: Dinner! The Pilot was working late, so I did the dinner and bedtime routines solo. I knew I needed something I could make with minimal active work -Liv plays while I cook, but I have to keep both eyes on P as she empties kitchen drawers and tries to jump on the couch- so I did sushi roll-inspired bowls. These were a favorite so long ago, and I forgot about them until I recently saw them pop up on Pinterest. It was maybe 5 minutes of active work: season salmon, boil rice, chop, serve.
I seasoned salmon with salt, pepper and olive oil,
then baked it in the oven at 375 for 12 minutes,
while white rice simmered on the stove. When the rice was soft and fluffy, I stirred in rice vinegar and set it aside.
I topped the rice with salmon, chopped cucumber, avocado, chopped seaweed snacks,
and drizzled it with soy sauce. The girls went CRAZY for it (the Pilot loved it too when he got home), and it was so satisfying. I was especially happy that Liv enjoyed it as much as she did. Sometimes kiddos can be hit or miss with dinners, and she told me a few times that it was amazing.
9:30pm big glass of Apothic red wine while watching This Is Us.
11pm: Ginger tea and supplements before bed
What I liked about this day of meals: I feel like it was a good mix of protein and produce, and I didnโt feel hungry since I was snacking throughout the day. I was also stoked to get a real meal on the table while doing the single parent ops for the evening.
What I would have done differently: I might have saved the donut for later in the afternoon. When I have something sweet in the morning, I crash and find myself craving sweets more throughout the day. While it was delicious, I would have loved it with some tea later on, and oats in the am instead. Either way, it was delicious.

Vinegar on the rice? That sounds interesting, specially when pairing it with salmon.
The fact that you had breakfast at 11 am caught my attention. I’ve been practicing 12-hour fasts between my dinner and my breakfast the next day, just because I think it is good for my digestion. Do you do take a late breakfast for any particular reason too?
I was wondering about this, too. The last couple of posts you’ve done on a full day of eating/activities, you eat breakfast around 11am. I know you take your supplements before and maybe have coffee or tea, but any specific reason for the late breakfast (other than 2 small kiddos running around!)?
that’s exactly it. unless i make breakfast the night before (usually a breakfast cookie or overnight oats), it’s literally impossible to cook and eat food until p goes down for nap
yeah, i wanted to make it like sushi rice!!
i usually just eat late if i didn’t prep anything the night before. it’s pretty crazy in the mornings between feeding the girls and getting everyone ready for the day
It is crazy! My two are the same ages and I aim to eat breakfast with them, but we don’t get around to it until after 9 most days, and half the time I’m so worn out from getting them fed that I don’t feel like eating myself until later lol!
P.S. I’m impressed with your eats, Gina. A lot of posts like this on other blogs leave me wondering how people get by on so little food.

The chocolate cake donuts from Dunkin are my FAVE – I am impressed by your willpower in only eating half! Did you ever have Apothic Inferno while it was out this fall? So. Good. I will need to try those salmon bowls soon because they sound delish!

My fave meal yesterday was dinner. We had leftover kahlua pork and I added it to broth, cabbage, asparagus, garlic and millet ramen noodles. Topped with sesame seeds! The kids thought it was a hit, too.

i cry probably every episode. sometimes it’s a good cry, so it’s not tragically sad every episode
Those double chocolate donuts from DD are my kryptonite! Best thing I ate yesterday? Brown Rice pasta and my homemade tomato sauce with meatballs – perfect snow day dinner!

Favorite thing I ate yesterday was popcorn made fresh in the popcorn maker with melted coconut oil and salt (we were out of butter). We had a snow day, and it felt like a fun snack when you are snowed in ๐
My favorite quick dinners lately have been in the crockpot (shocker!) I put everything in there at night after the kiddos are in bed, and leave it in the fridge overnight. The next morning I just plug it in before we leave for work and school. Favorite lately has been chicken noodle soup with fresh pasta added 20 min before serving.

One of my fave quick dinners, which we happened to have last night, is Damndelicious.com Chicken lettuce wraps! That is theeeee best recipe for them, just like PF Changs!

Ahh the couch jumping! My 20 month old has been at it for about 6 months now. Makes me crazy and is showing no signs of losing his interest.

Those sushi bows look SO good! I love bowl meals like that where all of the flavors mix together. My favorite thing I ate yesterday was sushi my husband brought me from Whole Foods…wtih salmon and avocado, so basically those bowls in sushi form lol.

DUNKIN is SO GOOD! I only recently discovered it- I can only get the packaged coffee since they don’t have locations near me in CA, but dang that is relish! Best thing I ate recently was runny eggs and toast ๐

Hahahaha!! Your spoiler that your mixture tastes like death and sadness made me laugh so hard. Just started reading your blog, and I’m really enjoying it! I have two little ones myself (6 and 3) and recently got engaged, so I’m looking at getting into shape for the wedding and for life! It’s been a long time coming, and I love that your blog seems to be entirely HEATH concerned and not geared towards gimmicky workouts and meals for weight loss. Thank you so much, and keep writing!
