So, I wasnโt quite sure what I was going to blog about today.
Itโs been challenging to get back in the routine after being away, and Iโve been munching omelets for dinner.
So delicious, so easy.
After last nightโs omelet, I got inspiredโฆ
and made some Meyer Lemon Lavender Macaroons ๐
Theyโre just like my classic blonde macaroons, with refreshing, sweet citrus, and a fragrant lavender aroma.
But the thing is, there are way too many of them.
My roomies and I could eat them all, but that would be no fun ๐

My spring fitness goal is to incorporate a 30 minute walk into my life at least 3 times a week. I haven’t been very good at fitting in exercise in the past so I want to start small and build my way up from there. I know it isn’t much but you have to start somewhere!

My spring fitness goal is to increase my cardio endurance– I had mono for half of 2010 (yep, 6 months!) & I’m still working to get back into top shape after that medical setback.
My goal is to keep up my endurance so I am ready to do an Olympic distance triathlon in the late summer/early fall!
I’m jumping back into running after overcoming a medical setback, and my goal is to ramp back up to 25 miles per week. Running makes me feel good, so I’m excited to get there again.

My spring fitness goal is to get my legs (and kinda my entire body) back in shape since I have been recovering from a bad foot injury. My legs were so muscular before I was hit by a car, and now that I can finally walk again, they look like jello! These macaroons would definitely give me the energy boost I need for my workouts. ๐
