Chicken Tortilla Soup for the Soul

Little lovebug woke up coughing yesterday. Thankfully, as of now, it sounds fairly superficial -like a little summer cold/ick- but I’ve been trying to think of ways to soothe her throat and stop the coughing. She had some warm mint tea in her sippy cup yesterday morning (loved it!), and for dinner, it was chicken tortilla soup. A little spice always help with any ick that comes our way, and for the child who now won’t eat her breakfast eggs until I put tiny dots of sriracha on them, let’s just say she was a big fan.

Baked plain chicken set to cool:

(375 for 20 minutes with salt, pepper and olive oil)

and in a large pot, I sauteed 1 chopped sweet onion, 1 can chopped green chilies, 1 teaspoon oregano, two cloves minced garlic, salt and pepper.

When the onions were translucent, I added 2 cans of drained diced tomatoes with green chilies, 1 carton of chicken broth and brought to a boil.

While it was boiling, I chopped the chicken, added it to the mix, covered it and let simmer for 20 minutes or so. Just before serving, I added in two cans of black beans, more salt, pepper and oregano to taste.

Put tortilla chips and avocado in bowls (cheese for the Pilot, none for Miss Livi since dairy isn’t the best when you’re coughing),

topped with soup, and served with fresh chopped cilantro and lime.

Ingredients

  • 2 chicken breasts
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp oregano
  • 1 can chopped green chiles
  • 2 cans diced tomatoes with green chiles, drained
  • 1 carton (4 cups) chicken broth
  • 2 cans black beans
  • salt and pepper to taste
  • Tortilla chips
  • Avocado, sliced
  • Cheese (optional)
  • Cilantro, chopped
  • Lime

Instructions

  1. Preheat oven to 375.
  2. Season chicken with salt and pepper and bake for 20 minutes.
  3. While chicken is baking, in a large pot, heat oil or butter and sauté garlic, oregano and onions until translucent.
  4. Add chiles, tomatoes and chicken broth, and bring to a boil.
  5. When chicken is done, chop into bite sized pieces, then add it to the pot.
  6. Just before serving, add two cans of black beans.
  7. Salt and pepper to taste.
  8. Put tortilla chips in a bowl, top with cheese if desired.
  9. Pour soup on top, sprinkle on fresh cilantro and a squeeze of lime.

Tires

I flipped a tire! It’s funny because at work I show guests how to flip a tire for our bootcamp class, but I’ve never done it for my own workout. It killed me in the best way possible. I’m just gonna walk around flipping heavy things now, mmm k?

I also got the chance to test out my new Nanos that Reebok sent per our partnership. They’re my sponsor for the IDEA conference, and basically it was Reebok Christmas over here. I’ll show ya all the goods next week, but definitely wanted to showcase these shoes today. I have another pair of Nanos, and the recent ones I received are equally amazing. For cross training, Nanos are my favorite shoe, hands down. SOOOOO light, comfy, and supportive enough for weightlifting and quick cardio. (I pronate so I wouldn’t wear them for long distances.)

    I’ve been upping the strength training/circuits lately (at least 2 per week)! But, we’re on vacation in San Francisco right now and I’m pretty proud of the fact that I’ve gotten some really great exercise here (hard to do on vay cay).

    We’ve walked up and down hills all day long. I squeezed in BPT’s Filthy Fifty in the morning yesterday and got to take a yoga class with my sister yesterday at a local studio!

    Yesterday I jumped back to plank from crow pose in my yoga class! It was the first time I did that since I have only recently mastered the crow pose.

    I have started running! I realize that isn’t a huge accomplishment to the experts here, but it is for me. I have spent so much time not running because I was too self conscious to try. I have *finally* conquered my fears and now I can’t imagine my life without it. I really do love it!

    I’m in training mode for a half marathon I’m running at the end of August. When I started training my average min/mile was around 9. Now, I’m down to 8. Woot woot! Going for a PR, hoping to be under 1:50.

    Working hard on the fitness progress- almost 80 lbs. down and attempting to break this little plateau in time for my spring wedding! Have, as always, been following closely for tips and insights and attended not only a hot yoga class for the first time this week but scheduled a crossfit class tonight at the new center by my casa- figured it was a sign from above haha 🙂 love the blog and would love the new shoes to go with the new motivation. and any time you want to write more about plateaus or keeping spirits high through an extended fitness program, I’m all ears!

    I worked out while on a work trip! My days are packed and I’m visiting a town I used to live in too, so I have lots of fun social opportunities too, but I set my alarm clock and actually got my work out in before the crazy day started.

    PR’d both my high bar back squat and front squat 5RM last week! My 5RM back squat is now 10lbs higher than my 1RM that I did back in January.

    I am redoing Couch to 5K! I’m just not a runner and have been struggling to motivate myself to DO it. Instead, I was sticking with the elliptical because it was my comfort zone. I start Week 3 today and I’m proud of myself for sticking with it for so far and not quitting.

    In our kettlebell class last night I realized for someone who used to hate jumping rope, I’ve grown to love it now! I’ve gone from a socially awkward jump/trip/stop/frustration building at my lack of coordination then restart again, again and again…to feeling like I’m floating when jumping rope now & getting my heart rate up. I was usually the one to groan & give the instructor the stinkeye when it was time to jump rope, now I actually look forward to it!

    I am going to be doing the 10 for 10- its a 10K run that if I complete it, I will be feeding 10 kids in a third world country and I start training tomorrow! I am super excited!
    Here’s my accomplishment: I am doing great in my squats, push ups and planks daily- time to up it!

    I am pregnant, so I have not had many workout accomplishments in awhile, but the best one to date is my half-marathon. Actually, I would say lately, even working out 2-3 times a week, which I have been doing, is an accomplishment! 🙂

    A recent workout accomplishment for me is being able to run 25 minutes non-stop as part of my Couch 2 5K training! Today was my 2nd day being able to run for that long and I’m so proud of myself for not throwing in the towel and giving up. It’s amazing what my body can do when I put my mind to it!

    I’ve been Crossfitting three days a week and biking two 🙂 My “rest” days are more of adventure days with my corgis going to different dog parks and nature trails. I can almost clean my body weight which is exciting!

    I’ve just now started getting back to a (kind of) regular workout routine. I have a six month old and I’ve started a light jog with her in the mornings. My husband does crossfit so he’s scaled it down for me and we crossfit at home in the evenings and yesterday we even brought the little to ymca to let her swim a little while we alternated swimming laps! Slow progress 🙂

    Running my first half marathon at the end of April and strength training three days a week since. I was diagnosed with lupus a little over a year ago and was unable to move without extreme pain for seven months. I made the decision to help myself feel better with exercise, and it’s worked! I’d love the shoes so I can have better tools to cross train with (I’m a medical student so let’s just say the age or quality of my clothes and shoes leave something to be desired!)

    My latest workout accomplishment would be hitting the pool for a little swimming and aqua fitness on Monday after being down with sprained back muscles since 4th of July.
    I’m pregnant for the first time so adjusting to bodily changes has made it tough to get workouts in. But the pool will be where it’s at for the summer. Crazy to think that just 4 months ago I ran my 11th half marathon and now a walk around the block is a feat.

    I am a little behind on m y marathon training plan and was feeling very out of shape, but I knocked out my 1st 12 mile run without any issues… I actually think I could have kept going. Amazing how much our bodies can do when our mind thinks it can’t. We are our own biggest critics!

    I’ve been working out consistently every day for almost two weeks! It might not sound like much, but I tend to let last-minute after-work plans get in the way of getting my workouts in, but I’ve been making sure to not let other things get in the way, no matter when I have to try to fit my workouts in.
