Chicken Tortilla Soup for the Soul

Little lovebug woke up coughing yesterday. Thankfully, as of now, it sounds fairly superficial -like a little summer cold/ick- but I’ve been trying to think of ways to soothe her throat and stop the coughing. She had some warm mint tea in her sippy cup yesterday morning (loved it!), and for dinner, it was chicken tortilla soup. A little spice always help with any ick that comes our way, and for the child who now won’t eat her breakfast eggs until I put tiny dots of sriracha on them, let’s just say she was a big fan.

chicken tortilla soup

Baked plain chicken set to cool:

baked chicken

(375 for 20 minutes with salt, pepper and olive oil)

and in a large pot, I sauteed 1 chopped sweet onion, 1 can chopped green chilies, 1 teaspoon oregano, two cloves minced garlic, salt and pepper.

When the onions were translucent, I added 2 cans of drained diced tomatoes with green chilies, 1 carton of chicken broth and brought to a boil.

chicken tortilla soup

While it was boiling, I chopped the chicken, added it to the mix, covered it and let simmer for 20 minutes or so. Just before serving, I added in two cans of black beans, more salt, pepper and oregano to taste.

Put tortilla chips and avocado in bowls (cheese for the Pilot, none for Miss Livi since dairy isn’t the best when you’re coughing),

tortilla chips in bowls

topped with soup, and served with fresh chopped cilantro and lime.

Super simple and soooo delicious.

Other Happenings

CrossFit bright and early this morning.

I flipped a tire! It’s funny because at work I show guests how to flip a tire for our bootcamp class, but I’ve never done it for my own workout. It killed me in the best way possible. I’m just gonna walk around flipping heavy things now, mmm k?

I also got the chance to test out my new Nanos that Reebok sent per our partnership. They’re my sponsor for the IDEA conference, and basically it was Reebok Christmas over here. I’ll show ya all the goods next week, but definitely wanted to showcase these shoes today. I have another pair of Nanos, and the recent ones I received are equally amazing. For cross training, Nanos are my favorite shoe, hands down. SOOOOO light, comfy, and supportive enough for weightlifting and quick cardio. (I pronate so I wouldn’t wear them for long distances.)

Reebok Nanos

I love these shoes so much that I asked Reebok if they might be able to do a giveaway, and they said yes (because they’re awesome like that). Two lucky readers will win their own pair of CrossFit Nanos. This is subject to color and size availability. (They said they’d give away two pairs like the ones I’m wearing above, but if they don’t have that color combo in your size, you can pick another color you like.)

My big accomplishment – I just got my Zumba instructor license and am already leading dances in my current class. Next accomplishment – a Zumbathon I’m co-hosting!

Also – last week, I deadlifted 140 pounds in my kettlebell class!

  2. Erica on July 31, 2013 at 12:56 pm

My husband and I just re-started our morning workout routine again – getting up at 5am is tough, but worth it to get the workout out of the way and get on with my day! I’d love a pair of those Nanos to ease me in to my 5am workouts! 🙂

  3. Jacki on July 31, 2013 at 1:29 pm

I did the Team Run Flagstaff track workout last night – always fun and challenging.

  4. Jen on July 31, 2013 at 1:36 pm

I just did my second half marathon two weeks ago! I was slow and steady and enjoyed it so very much! Now it’s time for some cross training and these shoes would certainly motivate me!

  5. Jamie on July 31, 2013 at 1:42 pm

Last week, I had two achievements: I ran my longest distance yet in my marathon training (12 miles) and did a 6-mile run a sub-9 minute mile pace (that’s fast for me :)).

I am trying to keep y running shoes just for running, so some cross trainers would be most welcome!

  6. Devon on July 31, 2013 at 1:51 pm

I’m pregnant and considering every work out an accomplishment haha 🙂 But I’m proud to say I’m kept up with lifting and running and still feel good running up to 5 miles albeit slower than before to watch out for LO’s heartbeat. 🙂 Love those shoes! 🙂

  7. Amy Hotaling on July 31, 2013 at 1:55 pm

I signed up for my first half marathon and have stared my training 🙂 Started running a year ago after my second baby was born, and I’m hooked! Love working out and just started doing a crossfit style workout and for the first time in my life I can do a real push up 🙂

My recent workout accomplishments are recovering from a sprained ankle, don’t injuries suck?, and starting my blog which has a fitness focus!

  9. Ilana on July 31, 2013 at 2:20 pm

I signed up for my next 5k and I am training to PR!

  10. Melissa on July 31, 2013 at 2:23 pm

    Thanks for a great giveaway!

    Two things to share:
    1) Thanks to your awesome SSU workouts/routines and all of the consistent HIIT my running is getting WAY faster. I’ve shaved 3 minutes off my 5K time in the past 9 weeks without even really focusing on it! (And I’ve been running for several years so it’s not like I was starting from ground zero)
2)My fav Zumba instructor asked me to help her co-lead a routine last week and it was SO.MUCH.FUN–Pretty much felt like a rockstar in our super fun/crowded class and it left me on an energy high for the remainder of the hour!

Last Wednesday I participated in a day of RAGBRAI (an annual bikeride across the state of Iowa in 7 days). It was 50 miles and my first time participating in such a big biking event. What kept me going towards the end of the ride was knowing I’d see my son at the end cheering me on!

  12. Tracy on July 31, 2013 at 2:31 pm

    I held a 5 minute plank!

  15. Meg on July 31, 2013 at 2:37 pm

Oooo, I would love a pair of these! I recently squatted 225.

  16. Paige on July 31, 2013 at 2:42 pm

Little victory but I worked out two days in a row this week and started using the fitness pal app!

  17. Niki on July 31, 2013 at 2:45 pm

I wore a sleeveless shirt to work yesterday and it finally hit me when I saw myself in the bathroom mirror that years of making pilates & yoga classes a regular part of my workout routine (which has traditionally always revolved around running/lower body work) has paid off: my super toned upper arms can rival the First Lady’s, and then some!

  18. Megan M on July 31, 2013 at 2:47 pm

I did a headstand in yoga!!!

  19. Amy on July 31, 2013 at 2:55 pm

I clean and jerked 75lbs 32x in a CrossFit WOD! This is huge for me because a couple months ago I struggled cleaning the same weight so much that I couldn’t complete the workout. I love knowing I’m getting stronger! 🙂

  20. Clo on July 31, 2013 at 2:58 pm

I made it through not only my box’s grueling WOD this morning, but my clean and jerk session (every minute on the minute, do 1 squat clean + 3 jerks for 7 minutes. I used 100#).

  21. Anna A on July 31, 2013 at 3:00 pm

Getting back into jogging after nine months of pregnancy! I’d gotten out of the habit and haven’t picked it back up until now!

  22. Brittany on July 31, 2013 at 3:07 pm

I recently got 3rd place in a local 5k! I’m marathon training so I don’t usually do 5ks, so it was fun to feel fast!

  23. Bee on July 31, 2013 at 3:09 pm

I’m training for ironman 70.3 so my accomplishment is in the works!

  24. Traci B on July 31, 2013 at 3:16 pm

I ran a 9 miler Sunday! First ever!!! So excited! I love Reebok & these shoes are too cute!

  25. Julie on July 31, 2013 at 3:19 pm

I worked out every day on vacation last week. We were at a dude ranch in WY & the elevation from the bottom of the road leading up to the ranch (2 mi. roundtrip) was 500 ft. It was a hike! I did it every day as fast as I could. I also did yoga on the porch of our cabin. 🙂

  26. Mariana on July 31, 2013 at 3:22 pm

Recent workout accomplishment would definitely be my new deadlift PR at crossfit: 215#!

  30. Jacquelyn @justjacq on July 31, 2013 at 3:34 pm

I just started Crossfit!! That’s my accomplishment. I was so darn scared to do it and so nervous. This wasn’t anything I ever thought I’d enjoy, but I do!

I ran 5 miles twice last week (at lunch) and I didn’t die! I’m getting stronger and I am so happy. I love that I am now able to keep up with my coworkers (and their LONG legs) and run with them and chat along the way. I feel awesome about it!!! I still need to try crossfit, I know I’d love it.

  33. Brooke @ on July 31, 2013 at 3:58 pm

  36. Irene on July 31, 2013 at 4:05 pm

Hmmm – I packed up my apartment (haha!) If I make it to the gym tonight after a week away that will be my biggest accomplishment in a while, but before that I was really finally getting consistent with mixing strength training in with my cardio – a major victory for me!

  37. Katie H on July 31, 2013 at 4:08 pm

I PRed my back squat by 15lbs!

  38. Katie on July 31, 2013 at 4:15 pm

Just joined a new gym and have tried out a different class everyday this week. So far my favorite was the spin class I took this morning. An instructor can make or break a class and the one today made the hour of hard work fly by! P.S. This pregnant lady loves reading your blog to help keep me motivated, thank you!

I finish my 2nd 90 day challenge for Bikini Body Mommy this Saturday! 🙂

  40. Kelsey on July 31, 2013 at 4:28 pm

I haven’t been feeling the run lately, and this weekend I cranked out a 9-miler. And it felt amazing.

  41. roopa on July 31, 2013 at 4:30 pm

30 day yoga challenge this past May!

  42. Jen on July 31, 2013 at 4:30 pm

I ran 6 miles last weekend. Having always struggled with running that felt like a huge accomplishment. Up until this month I had never run more than 3 miles. Now my sister in law and I have registered for a 10K in October…what’s come over me?!?! Major thanks to you, Gina. Your winter shape up this year came at just the right time and really kicked me into gear. Thanks for all the work you do on the Shape-ups.

  43. Conni Boykins on July 31, 2013 at 4:36 pm

I think my most recent accomplishment is starting and committing to TurboFire! It is so much fun but such hard work but I love it!!

  44. Kim N. on July 31, 2013 at 4:39 pm

I’m slowly getting back into daily walks/jogs after a huge lupus flare that left me fatigued and with only enough energy to get through my workday (at the most). Hoping I can get back to some fitness classes or strength training real soon!

  45. Emma on July 31, 2013 at 4:48 pm

After several weeks of not being able to run, I got out for a fast hilly run on Monday that felt great!

  46. Mel on July 31, 2013 at 4:49 pm

  47. Yolande on July 31, 2013 at 4:49 pm

I don’t know if this woud be considered a accomplishment but I purchased rollerblades the other day, and my bf and I rollerbladed 15 km. this is huge considering I haven’t been on rollerblades in over 10 Years 🙂 I was rusty at first but managed to get the hang of it fast 🙂 such a great workout!!

  48. Kady on July 31, 2013 at 4:55 pm

I canoed and portaged for 5 hours two times this past week to go camping in the middle of nowhere. Definitely feeling sore, but very accomplished, after that!
