Chocolate mug cake

Hi guys 😀 How’s your Monday treating ya?? Hope you’re having a great day so far- LOVED reading your thoughts on Skinny Bitch this morning.

I know ya’ll don’t usually hear from me again this early in the day, but for this recipe… I had to do it 😀

I spent a lot of my morning sitting at the dining room table, working on the Pilot’s pages for the squadron scrapbook.

(I have to sit on a cushion at the table.. it’s my booster seat, haha)

I have so much admiration for those who scrapbook willingly and enjoy it. I can’t stand it because I’m a busy body, but really needed to get these pages done because they were due on Friday (slacker). While I was working away, I kept thinking that some chocolate would make the task a little more bearable 😉

So.. I took a 5 minute break and was rewarded with this beauty.

Vegan Chocolate Mug Cake

Serves: 1

Ingredients:

-2 T flour of choice (I used spelt, but whole wheat or gluten-free would be lovely)

-1 T protein powder (chocolate or Vanilla; I rolled with vanilla Nutribiotic brown rice protein)

-1 T raw cacao powder (1/2 T of cooked cacao powder, since the flavor is stronger)

-1/4 t baking soda

-pinch of sea salt

-1 flax egg (1 T milled flax seed mixed with 3 T water)

-2 T almond milk (or milk of choice)

-1 T chocolate chips

-1/2 T oil, yogurt or applesauce (optional: will make the cake more moist, but I made mine without)

-1/2 t vanilla extract

-cinnamon and Stevia, to taste

1. Spray the inside of a microwave-safe coffee mug with nonstick spray

2. Add the dry ingredients (flour, protein, cacao, baking soda and salt), and stir well to combine

3. Add the wet ingredients and mix with a spoon until mixture resembles a thin cake batter –make sure there are no flour chunks in there

4. Taste the mixture and add Stevia and cinnamon to your liking – I used about 6 drops of liquid Stevia and a hefty shake of cinnamon. Stir in chocolate chips.

5. Microwave on high for 2 1/2 – 3 minutes, until the cake is cooked on top and around the edges.

6. Using a spoon, loosen the edges and plop onto a plate. Drizzle with chocolate syrup (Ahlaska! is fabulous) or almond butter, if you’d like.

7. Prepare for foodgasmic glory.

    hmmmmm I make something similar only using all protein powder instead of flour, and a real egg white so not vegan but its delicious, not sure what else different but mine is about 125cals so I usually throw some vegan ice cream on top, yummm

    Yes! Super exciting! I actually don’t love the traditional chocolate mug cake but I have a feeling I will love this! It looks so moist and delicious! I’m not actually sure what raw cacao powder is but I’m assuming its different than cocoa powder? I have a dark cocoa powder that I love. What do you think about using it instead….?

      yup raw cacao powder isn’t heated so more nutrients are intact. you could totally use the dark cocoa powder instead, though!

    That looks really good, good luck with the squadron book. I did one for my husband a few years ago with all his military stuff and I KNOW hoe much a PAIN in the you know what it can be after a while did someone say “labor of love”?

    Looks yummy! I’ve been making a similar ‘cake’ (although I kind of think of mine as pudding) by mixing a scoop of chocolate casein protein with water, egg whites, baking bowder, and a bit of cinnamon. So so good and it seems so indulgent – but it’s not really!
    I love scrapbooking, and it’s a bit of a coincidence that you’re doing it as well because I just got all of my gear out yesterday…. I am SOOO behind and have my 2 final years of university photos to catch up on.. yiiikes!

    Hi Gina,
    I am a HUGE fan of this blog. I found it last week and spent about five hours reading it and getting ideas for recipes, etc. I wanted to know what your thoughts are on gluten/ eating bread. I noticed that in general, you don’t eat a lot of breads. Is this a personal taste preference, or do you prefer to stay away because it impacts your diet adversely? I am weening myself off of processed breads and now love Esekiel, but am still a little wary, coming from my South Beach past, lol. The fear of carbs is still in me, I guess you could say.

      thank you so much for reading my little blog!
      i actually have bread almost every day, but don’t usually post it because i don’t post all of my eats and think a piece of bread with almond butter and cinnamon gets a little boring to look at day after day 🙂 i usually have 1-2 pieces of some kind of bread (millet, ezekiel, brown rice, kamut or spelt) every other day or so.
      don’t fear the carbs! we need them 🙂

    Sounds good — I’m a little confused by the calorie and fat count though…it seems to be off (as in too high?) — unless that’s stemming from the cacao powder, which I’m not as familiar with…

      the high cals are from the cacao powder and protein powder (100 cals from those two) and the flax is what gives it so much fat- it’s healthy fat though 🙂

    Oh yum can’t believe it’s healthy! If I wanted to add some espresso powder how much to add? I usually add it to brownies or choc cake.

    This is off topic but wanted to let you know I made your enchiladas this weekend and they were wonderful…easy, filling, yummy! I made them sans the Chipotles in adobo with zucchini, green peppers, onions, tomatoes and added shredded chicken to the ones I made for my hubby! He loved them too! Thank you!!

    I just followed your exact recipe, except used coconut oil to grease the mug instead of nonstick spray and I forgot the vanilla. It still came out super yummy. I love that it’s a single serving recipe. I also avoid microwaving, but this is a perfect reason to use it. I think next time I will dry the partially defatted peanut flour from Trader Joe’s as the flour for a little peanut butter chocolate action. Thanks for the idea!
