Swim in sorbet

I’m more of a cake girl (or pizookie girl!) than an ice cream girl, but twice this week, I’ve fully appreciated the beauty of sorbet.

The Pilot and I took the family on a walk

and then walked over to Frost for a little treat.

It definitely stayed on my mind because when my friend Lee Anne texted to ask if I wanted sorbet with the baby meal she was bringing over, I didn’t turn it down.

We’ve been so fortunate to have friends and family supporting us for the past couple of weeks and helping us out with grocery, errand runs, and food. I’ve also been very thankful for all of the kind words, love and packages from my blog friends. A recent surprise:

Our last baby meal is on Monday, and then I’ll be back in the kitchen again! Since I’m still juggling and trying to figure out time to do things, what are your favorite quick and easy meals? I think the slow cooker and I may be reunited…

    Slow cooker for sure! As well as soup/chili over the stove top that you just have to stir once in a while after the prep is over!

    That fruit looks so good! These meals are making my lunch look really sad right now. My go to quick crockpot meals are salsa chicken (chicken breasts, salsa, taco seasoning, black beans, corn cooked all day and shredded for tacos, salad, enchiladas, etc.) or TJ’s turkey meatballs cooked all day in TJ’s garlic tomato sauce and served over pasta or spaghetti squash.

    I’m all about slow cooker lovin’!! I just made this again last week (and even froze some… we’ll see how that goes). Five ingredients and everything can just be chopped and dumped in the crockpot. No pre-crock sauteing.

    These are my two favorite chili recipes. One is my tried and true turkey chili that has chipotle chiles and beer and the second is my white chicken chili (also with beer). I think we like beer. haha

    This turkey lentil stew can be made with chicken or turkey and is filled with tons of veggies and poatoe.

    These two are two versions of pulled chicken… one is mexican chicken, which can be used for tacos, salads, burritos … the possibilities are endless. The second is buffalo chicken that can be used for sandwiches or a salad topper. Versatile much ?

    Pressure cooker for 10 bean soup, lentils, etc are my quick and easy faves with three young children! Top with shredded cheese and a scoop plain yogurt in lieu of sour cream and there you go.

    With two little ones I’m all about quick meals. I make a lot of soups/chili, tacos/fajitas, and stir-fry meals.

    Slow Cooker for the win! My favorite easy slow cooker recipe is to fill the slow cooker with raw kale, toss in some garlic, onions, lemon juice, and red pepper, and then pour in two cans of reduced salt navy or cannelloni beans.
    I also love white bean chicken chili- same type of beans as above, plus chopped boneless skinless chicken thighs, onion, garlic, green chilies, cayenne and cumin.
    Are you still on the chicken eating band wagon?
    If so, I also really like to just toss a couple of chicken breasts in the slow cooker with a can of reduced salt black beans and my favorite salsa- just shred the chicken when you’re done. It’s great as the basis for taco night or you can thin it out with some broth and use it as a start for tortilla soup.

    Slow cooker and oven got a lot of use when the little one was new… Stir frying is also pretty handy if you pre-make some rice.

    That sorbet looks delicious! I want some now. 😀

    My two go-to quick and easy meals (besides using the slow cooker because a lot of others have mentioned that) are:

    1. Greek couscous salad (I know you do the gluten free thing though, but I love that couscous literally only takes 5 minutes to cook…could it be any easier?). I like mine with lots of spinach/mixed greens, tomato, cucumber, pepper, olives, feta, and a homemade balsamic vinaigrette
    2. Quesadillas with spinach and goat cheese served with whatever fruit/veggies/protein we have laying around the house – usually its some kind of fresh fruit salad and black beans

    Can’t wait to see what meals you’ll come up with!

    In the last few days I made two meals that were quick, hearty and filling.
    One was Portabella Mushrooms in a Marsala wine sauce spooned over Polenta*. http://birdsnest101.com/2012/01/24/rustic-peasant-casserole/
    *this has cheese but you can certainly leave that out.
    The second one was a Crockpot soup. I add in Italian Sausage at the end, but you don’t have to and this will be filling for days! http://birdsnest101.com/2012/01/25/soups-on/

    You have the most amazing friends! We had to fend for ourselves! lol. I would say stick to grilling for a while…that’s always pretty easy.

    Wow, the Twin Cakes website looks great! What delicious treats! I love how supportive your friends (and the squadron families you’ve mentioned previously) are during your early baby days. As for quick meals, stir-fried veggies with some sort of protein are always my go-to!

    Soups are the best for quick meals. Or tossing some beans and veggies with quinoa or rice. Not the fanciest of meals but they hit the spot!

    I love sorbet! I make homemade sorbet all the time by blending up frozen fruit in my food processor with a little almond milk. Blueberry Banana is my favorite. 🙂

    I have 2 quick go to meals; any kind of quiche. Add any veg you like, any cheese, scramble your eggs (really good if add Frank’s red hot while scrambling) and pop in the oven at 350 for approx. 30min. so easy and you can change it up so easily.

    Other quick one is mexican bowl. I put brown rice, diced avocado, black beans with fried diced onions and pepppers with tex mex sauce (can make a bowl to keep in the fridge) salsa and a dollup of sour cream (or plain goats yogurt) optional (scoop it up and eat with a few tortilla style chips).

    Can’t beat the speed of salmon + veggies wrapped in tinfoil and put under the broiler for 10 minutes! Top it all off with goat cheese and you’re set 🙂 I think it’s awesome that your friends are providing you with such delicious and healthy meals!

    I love that quote 🙂 My favorite quick meal is a veggie sandwich on a gluten-free english muffin. I love the Food for Life multi-seed kind, it rules. I add hummus, tomato, cheese and toast it – then I add avocado, cucumber, lettuce and feast away!

    That fruit salad looked AMAZING! YUM! You have such amazing squadron friends! I love to do one pot meals, like veggies cooked until brown, then add rice, lentils or beans and spices and let come to a boil and simmer. Things like that that do not need much babysitting once you get them going. I know you will do amazing! You are to organized not to.

    Yes, the crock pot is my BFF when it comes to easy dinners. Italian meals are pretty quick and easy too, as are Mexican meals.

    Since the pilot eats meat, a carved cooked turkey put into single sized serving bags, then frozen, will save you tons of prep time. You can do the same with carved chicken, and pulled pork. For me, preparing veggies, rice, even soup is a snap. It’s the meat that gets to be a drag and takes time.

    By the way. My little girls really like some of ur quick workout videos. They r 5 & 6. They get into “workout” clothes (which once involved a hula skirt) and try to follow along with me. It’s fun!

    It is so wonderful the community you have over there with your squadron friends! How amazing all these meals you guys cook for one another! I was lucky to have Michael cook for me, or we would have to order in a lot. I also did lots of eggs, veggie burgers, tuna, quick stuff like that.

    I am super jealous of your package from Lori & Michelle! Love them! I’m about to order some of their stuff soon…they are so talented!
