The Best Gluten-Free Brownies

Fudgy and delicious, these are the best gluten-free brownies! They’re actually the best brownies ever, gluten-free or not! I’m so excited to share the recipe with you and hope you love them as much as I do! This is an older post that got a little photo refresh.. and we got to eat a ton of brownies.

Ingredients

  • 2/3 cup brown rice flour mix (see below) OR 1/6 tapioca flour + 1/6 potato starch + 1/3 brown rice flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon xanthan gum
  • 2 oz. unsweetened chocolate
  • 4 oz semisweet chocolate
  • 1/2 cup unsalted butter (or vegan butter)
  • 1 1/4 cup granulated sugar
  • 2 teaspoon pure vanilla extract
  • 3 large eggs (can also use flax eggs)
  • 3/4 cup chopped toasted walnuts (optional)

Instructions

  1. Pre-heat oven to 325. Position rack in lower-middle of oven.
  2. Line a 8 in square baking pan with foil and grease with cooking spray.
  3. Combine flour, salt, baking powder and xanthan gum in a small bowl and set aside.
  4. Melt chocolate and butter in a double boiler (or melt in the microwave for about 45 seconds, stirring every 15 seconds).
  5. Whisk in sugar, vanilla and eggs, one at a time. Continue to whisk until mixture is smooth and glossy.
  6. Add flour mixture and whisk until incorporated.
  7. Stir in nuts (if you wish to add them).
  8. Pour batter into prepared pan and bake for 45 minutes, or until a toothpick inserted into the center comes out with wet crumbs.
  9. Cool in pan on rack for 5 minutes.
  10. Remove brownies from pan by lifting up foil and cool completely on rack.
  11. Cut into squares or triangles.

The quality of the chocolate makes the difference, so I picked these adorable Tcho baking critters. They’re almost too cute to melt!

After melting the chocolate in the microwave (for about 45 seconds, stirring every 15 seconds), I whisked in the sugar, butter, egg and vanilla until thoroughly combined and shiny.

Then I added the flour mix. I like to keep a gluten-free flour mix on hand (recipe below), but you could also wing it on the spot. I filled a 1/3 measuring cup halfway with potato starch and halfway with tapioca flour, then filled another 1/3 measuring cup with with brown rice flour.

Then poured the batter into a greased baking dish.

There’s a trick you can try that will save you cleanup and help you cut your brownies better: Line the baking dish with aluminum foil and spray with cooking spray. When they’re done and have cooled for a bit, you pull the whole thing out – aluminum foil and all – let it cool, then cut it up.

Either way, you’ll have delicious, fudgy gluten-free brownies.

These gluten-free brownies are especially delicious with a scoop of coconut milk ice cream on top. Your family might just go so nuts over these that there will be very little left to enjoy the next day.

  • 2 C Brown rice flour
  • 2/3 C Potato Starch (not flour)
  • 1/3 C Tapioca Flour (also known as starch)

Instructions

  1. Mix all ingredients together and store in an airtight container to use as needed.

    Well, I can honestly say that there are some other commenters who deserve brownies WAY, way more than me. Reading about some of the other people’s struggles definitely puts things in perspective for me!

    Aw I could really use a brownie or 20 cause I’ve been dealing with an injury for over a year and now I just did something to my other leg just as the other one was seeing some progress… BUT I’m not going to throw myself a pity party cause life will go on and I have a lot of other things to be thankful for.. I’d really like to add some YUMMY brownies to that list! 🙂

    I don’t so much need a brownie as really, really, really want one. Today I was diagnosed with hypothyroidism, my sister in law called sobbing because she needs help while my brother is deployed and we were temporarily evacuated from our home this a.m due to a rupture in the gas lines in front of the house. Wait, maybe I do need one after all! Seriously, a yummy brownie and a glass of wine sound like an oasis right about now :).

    I seriously need a brownie! I’ve been teaching a crazy number of exercise classes all winter (i.e. 18/week :S) and have been waiting for months for Easter weekend as I’ll finally have three days off in a row!! A celabratory brownie is a must I think!:D

    I really need a brownie. As I am typing this I am on the verge of overload almost meltdown lol! my live in boyfriend dislocated his knee 1.5 weeks ago, so he is completely immobile, so on top of my busy to do list I have daily I am now in charge of taking care of him. It is not a difficult task, but things like cleaning, laundry etc have been put to the back burner – I am a NEAT FREAK, and it is slowly driving me crazy. On top of that I work night shift so I am busy all day taking care of us, cooking healthy meals, trying to get to the gym – which has also cut back a bit :S so I am tired, cranky and need a bit of chocolate brownie in my life. If not , I guess I will have to take 20 mins out of my busy hectic day and make a batch myself 🙂 hahaha

    I’m gluten intolerant and currently in school. I’m living in the dorms and can’t bake my own food, which sucks because I am left eating salads and black beans every night. I’m coming up on finals and I could reallllly use some gluten-free brownies to ease the stress!

    I need a brownie!!! Finals (I’m in vet school) begin immediately after Easter, for two weeks. I’m alone in a foreign country. I’m pretty sure the Easter bunny has no idea where I live. The study fairy only brings more notes. And I’ve been so d@rn good, I haven’t had bread or brownies or cookies since mid-december, when I started hitting the gym 5-6 days a week to combat stress. My pants are falling off, and there’s no place for me to get some that fit. I’m very stressed, and at this rate, I’m going home naked in a month. Lol.

    I could use a gluten-free brownie everyday as I’m on a gluten-free diet right now. I’m also vegan for the most part, which makes gluten-free eating even more difficult (side note I’m on a meat eating challenge for 6 weeks). The last brownie I had was probably like 6 months ago when I gave up eating eggs and dairy. Thanks for sharing the recipe, I will totally be cooking these up for my next brownie fix.

    Those look sooo incredible!! I actually found out two days ago that I am most likely gluten sensitive or intolerant, which was the result of my first integrative medicine doctor appointment ever (I went in to get another opinion about my recently diagnosed hypothyroidism). As it turns out, there is a huge link between gluten sensitivity and hypothyroidism, so my first plan of attack is going gluten-free. My sweet tooth has already began to scream at me, so I would love love love to get some of these brownies! 🙂
