They’re elite like that
Hey friends! Happy Friday! Hope your day is going well. 😀
Thank you so much for all of your support with Luon for a Cause. Together, so far we’ve raised $2461 for the Red Cross! Amazing <3 The roon raffle has been extended to midnight tonight (EST) and the winner will be announced tomorrow. If you’d like a chance to participate, please check out the deets *here*.
So, last night, we spent our evening watching the Wildcats CRUSH Duke- they’re now in the ELITE 8. Ballertastic.
We also got to hang out with Vies!
She the entire first half curled up against my leg:
She’d only lift her head up when we would start screaming :)It’s funny because I’m not a sports fan at all, but I’m a huge U of A fan <— my alma mater.
Basketball is one of the very few sports I *get*, so it’s fun to watch the U of A games and cheer with the fam and friends. 😀
We watched our victory from my little sis’ house and I brought over some peanut butter chocolate chip cookie-topped brownies.
(Gluten-free and vegan. Ka pow)
They didn’t look very pretty until they were cut up, but they tasted very, very pretty 🙂
Some other recent eats:
Maple-dijon salmon, steamed asparagus, and beautiful multi-colored potatoes we found at Trader Joe’s:
they were glorious after taking a little butter, rosemary and garlic bath 😉
+ the usual standards, like
Green juices
(I got brave and added some celery into the green apple, cucumber, lemon and romaine mix)
and salad beasts 🙂
(greens, tomatoes, bell pepper, hearts of palm, shrimpies, Garlic Gold, lemon juice and hemp oil)
Today I’m working from the community –running lots of fun errands and planning- and then taking the Pilot to his first acupuncture appointment.
See ya later today!
xoxo
Gina
Something to think:
Yogi tea bag words of wisdom:
“Bliss is a constant state of mind, undisturbed by gain or loss”
Great job on the fundraiser!
awesome fundraiser, very successful!
Viesa is so cute, its nice that you can still visit her, thats so perfect.
chocolate chip cookie and brownie.. oh my god, thats insane.. yum!!!
Salad with shrimp sounds amazing right now. As does salmon with maple and dijon. Chased with those brownies, of course. 😉
Have a great weekend!!
Nice job on raising $! Curious if the Pilot will fall asleep during acupuncture too 😉 Have a great Friday!
Awesome job on the fundraiser! So fabulous!
I am currently obsessed with roasting potatoes with rosemary + olive oil. So so so delicious!
That was a great game last night. I’m excited for Arizona, always nice to have a surprise team make a splash.
Ooh lots of money for the Red Cross! Great job putting that all together Gina!
Anytime someone mentions U of A I think of the movie Speed — dumb I know, but the bad guy calls Sandra Bullock a “wildcat” and then Keanu figures out the camera system…etc. I hope you know what I’m talking about!
Have a great weekend!
Any team that knocks down Duke has my vote!! Go wildcats!!!!!!
Viesa is SO precious. I just want to bury my face in her fluffy furry coat.
Ummm please share the cookie brownie recipie with us! Did you just smush some cookie dough ontop of brownies?? The look beyond amazing.
yep you smoosh the dough on top of half-cooked brownies and then bake for an additional 10-15 minutes — they whole thing is in a reply to carrie’s comment
This is totally my weekend baking project. 🙂 Good thing last weekend’s project was a half marathon. It’s all about the balance. hahaha
I’m like you in that basketball is one of the few sports I understand (even though I’d consider myself fairly athletic!!) My favourite films are football related (Remember the Titans and The Blindside) but I haven’t a clue how the game works! Your brownies look amazing!
Ah, so exciting that you’ve raised nearly $2,500 so far!! Yogi tea bags always have something inspirational to say! 🙂
Wow, that’s great so far with the fundraiser.
I’m totally excited about UofA making it to the Elite 8. Awesome (even if I didn’t go to school there… NAU=not so hot at sports)
pfft, i know you aren’t going to hold out on the cookie topped brownie recipe. 😉
vies looks so happy to see ya’ll!
i responded to carrie’s comment with what i did! it was super easy 🙂
I was pulling for Arizon too, but mostly because I’m a huge Carolina fan (my alma mater) and you know how we ate Duke with a firey passion. 🙂 Now I need a win tonight! I’m always amazed at combine desserts like brownies topped with cookies. Someone at a cookie party I attended once brought huge chocolate chip cookies with brownies inside! It blew my mind! 🙂
Please share the browning recipe. They look good.
just promise not to tell anyone… it’s top secret 😉
buy a package of gluten-free brownie mix
add the necessary water, oil, and a flax egg (1 T flax in 3 T almond milk)
bake for 15 minutes
place the cookie dough on top and bake an additional 10 minutes or so (until a toothpick inserted comes out clean)
Congrats on all the money raised! I love how so many bloggers have stepped up to help.
Love those Yogi tea bags. Sometimes those quotes are just what you needed to hear. 🙂
My Yogi Tea told me this morning that “The trust others place in your is your grace.” I look so look forward to tea-string wisdom with my daily cup!
Vies is such a cutie!
What a yummy lookin salad beast 😀
I am so happy about the amount of money raised!!!! I just got the email that gave me the info of the winner of my lulu donation, and it made my heart so happy : ) I am so glad I could be part of this and help raise money! Thanks again! It’s things like this in life, that mean the most to me!
Happy Weekend Gina! Miss u!
miss you too friend!!
thank you again for all of your help 🙂
congrats on the fundraiser! 🙂 I am going to have to try to make some of those roons! I keep seeing them on your site and they look simply delish!
Well done for raising so much money Gina! You know what maybe would have been a good idea? Auctioning a batch or two of macaroons as well as the raffle! I remember when there was that bake sale, and your macaroons went for crazy money!
i thought about doing that, but figured it would be cool to give someone the opportunity to win them without spending a lot of money
Yeah it was still all awesome!!
I’d love to know the recipe for those hybrid cookies- brownies, as they sure look delicious to me!
I love adding celery to my green juices, just add a lot of apple to make up for it:)
Have a lovely day!
I was wondering, where do you get your hearts of palm? I love it and would really like to have it in my salads, but I can’t find a good brand/place to buy it at a reasonable price.
Thanks & congrats on the fundraiser! 🙂
trader joes! it was very inexpensive and in a jar i keep in the fridge
Thanks!! I’ll head on over to TJ’s!
ooooh I hope he likes his acupuncture today 😉 And those potatoes are soooo cool lookin’ – what a fab find! Nice work with the fundraiser, that is fabulous!!
Goooooooo Gators! Meet you in the Elite 8!!!
what is that recipe for those cookie/brownies? I must know!
The peanut butter chocolate chip cookie-topped brownies looks awesome. Vegan and GF? Are you serious?! WOW…awesome job!
The TJs multi colored taters are always in rotation here. I like to roast them with coconut oil and season with everything from ginger to dill depending on my mood.
The link to your sister’s blog? I didn’t know about that one! Off to check it out..
And good luck at Pilot’s 1st accupunc session. Yay for trying new things!
LOVE your blog, and those brownie cookies look amazing. I just had a call back from Lululemon! Any interview tips for them? Keep up the great work 🙂
I literally just made mustard maple chicken the other night! Too funny! How did you like it w salmon? 🙂
I love the brownies and the bloggers raising funds – and you! – but I’m a UConn alum (Go Huskies!) and we aren’t going to be able to be friends for the next few days 😉
I love your blog, but I am going to have to cheer on my home state team- UConn. Go Huskies.
It’s ok- we’re still friends 🙂
Those peanut butter chocolate brownies/cookies look AMAZEBALLS! 🙂 Good job with all the fundraising efforts, it is truly amazing what you are doing.
Congrats on the fundraiser – very commendable!
As a fellow Wildcat I’ll be cheering along with you (virtually) on Saturday. BEAR DOWN ARIZONA!
Yeah! Go cats 🙂
OMIGAWD those brownies look like heaven! I see you gave the recipe, THANK YOU…however, what is the cookie dough recipe??? So doesn’t look gluten free:=
Thanks girl!
that’s really great that you’ve earned all that money, you should be so proud of yourself!
Those potatoes really are pretty before & after their bath!
I always love your dishes!
Gina, that dessert looks fabulous! Question for ya: What program do you use to make your pictures so cool looking (circa 1950s looking?) ?
HOLY BALLS i must make those vegan brownie cookies. and you are wrong, they look VERY PRETTY!
I so love your blog! Thank you for all the healthy inspirations! I stumbled upon it when googling for protein pancakes =)
I know the feeling about not really being into sports unless it’s your school. My Gators are in the Elite 8 as well 🙂
So glad you got to spend time with Vies! 😀 I’m sure she was happy to see you.
omg! The peanut butter chocolate chip cookie topped brownies (that’s a mouthful) look so so yummy! 🙂
Your yogi words are very applicable to scale watchers..
I am for sure going to have to try the cookie/brownie combo!!
Your green juice makes me jelous, I killed my vintage juice tiger a few months ago and haven’t bought a new juicer yet – I’m dying for some green juice!
Basketball is the only sport I “get” too! I love watching it, I get so into it! Football, not so much:)
LOVE hemp oil. I have been out for way too long! Hope you and the Pilot have a fab weekend!! <3
As an ASU alumni I get crap for cheering U of A since my dad has been a fan since I was little. I rubbed it in nice and good that U of A was at least in the NCAA championship where ASU is a…missing. I love yogi tea, I live off the green tea triple echineacea.
That’s awesome how much money you’ve raised so far!
I love multi-coloured potatoes! For some reason they’re so much more fun to eat than just the plain yellow ones. 😛
My Wildcats made it to the Elite Eight as well – Kentucky Wildcats!!! I love reading your blog and will have to try the brownie recipes soon!!!
I’m going to look for those potatoes next time I’m at TJ’s. I never look at their fresh veggies since its usually so limited
