Un-beetable Lunch + a Giveaway

Heyyyyy 😀 How are ya? Hope your day is going well <3 I loved reading about which workouts get ya excited. It’s always a good idea to take the “work” out of working out 😀

This morning, I got some work done and snacked on my beloved smoothie whilst typing away:

After a while, I went up to the yoga room to TURBOFIRE it up!

Oh. My. Stars.

What a workout. Today was Fire 45 + Stretch 10 and I loved every schweaty, booty-shaking, jumping second. ‘Twas amazeballs.

For lunch, I really wanted a salad beast but our greens stash is dwindling, so something even better happened.

I peeled a giant beet, chopped it up and seasoned with olive oil, sea salt and pepper.

After roasting for 20 minutes at 400*, I added the chopped beet to an oat bran pita with arugula, goat gouda, Fig vinegar and Garlic Gold.

Mind was blown. I LOVE beet + goat cheese + arugula and in pita form, it was incredible.

Dessert was the last raw cacao-cayenne truffle:

Guess I’ll have to make some more 😉

As you guys have probably figured out, I haven’t been eating as raw as usual lately. Our organic produce has been scant here in Valdizzy, but I’ve enjoyed quite a few raw desserts (like this raw strawberry tart and multiple macaroons!).

    The raw pizza!!!!
    I need some advice…I am having such a hard time sticking with eating healthy. I do really good until about 3 or 4 o’clock and then I just give it up! I am so frustrated and don’t know what to do to kick this! Any advice from all would be really appreciated 🙁

      Make sure you’re eating enough up until that point. A lot of times when we are focused on eating healthy, we tend not to eat enough. Also, you could try healthier sweets (dried cherries do it for me) or a small portion of a less healthy food to curb any cravings.

        Thanks Jennifer! Those are some good tips! I have about 60 pounds to lose so I really need to stick with this! I just feel like there is so much information out there and I don’t know what the best “path” to my weight loss is?

    I love lasagna, so I would love to try theirs! As for dessert, their ice creams look delicious, as do all o their cookies. Hard to pick just one.

    Not gonna lie, I really want the Chocolate Cheesecake or the Chocolate Ganache Raspberry Layer Cake. I have a sweet tooth if you can’t tell.

    I’m getting some golden beets in my CSA box tomorrow, really looking forward to trying a version of your pita with whole wheat flat breat + feta + herb of choice (not sure yet, but my arugula plant is growing fast!)

    The Pizza or Ravioli or I’d love to try their corn chowder or onion soup….can you tell in indecisive. If I picked desert, I’d go for the chocolate cheesecake! and your macaroons, yes please! I’ve never had a macaroon before and I’m dying to try!

    Oh, boy. This is tough – everything looks so yummy. I guess for an entree it would be the pepperoni pizza. For dessert it is hard to choose between the key lime pie and the lemon pie. I guess the lemon pie would be my choice if I can only have one!

    By the way, one idea I had for a post you could do is on hormones and women. Im pretty sure my hormones are way out of wack because I get adult acne all along my jaw and chin…and I think it has a lot to do with your liver? There are ways to cleanse your liver and get your hormones balanced, but theres just so much information. I am going to make an appt with the owner of my local health food store soon, but would be curious if you have any input. Thanks!

    The tostad looks fantastic – and that strawberry shortcake is too pretty to eat – almost!

    Poor puppy – my dog hates firecrackers/fireworks, but thunder doesn’t seem to bother him. I just give him a big hug to keep him from shaking!

    I don’t know about anyone else, but I went straight for the desserts 😉 They all look amazing!! But if I HAVE to choose it’d be the Strawberry shortcake or the Chocolate Raspberry Ganache Layer cake. My entire mouth just filled up with saliva as I typed that. YUUUM!
