Hiiii! Happy humpday. Hope you’re having a great week so far! Thank you so much for the wonderful comments on the latest Family page post. I love whenever you share your stories with me, too, so I can get to know ya better. (This is why I always get super excited to get emails or Snaps with your pics.)  🙂

For today, I have a What I Ate Wednesday post.. posted ON a Wednesday. I can’t say this type of punctuality will become a thing.

Yesterday was a little bit weird because I felt like I was driving for a majority of the day.

The day started by waking up with the girls, chugging coffee while I made Liv’s breakfast and fed P, and got us all dressed. I quickly took my supplements before leaving (herbs, collagen, and aloe from my homeopathic doc. My hormone levels are still pretty low, so he’s boosting them back up). We dropped Livi off at school, and then P and I took a nice field trip to El Cajon. The Walmart there is the only place where I can find her Elecare formula when the Children’s Hospital is out, and our Amazon shipment was delayed. We got back to the house just as my friend Melanie was driving up to stay with P while I headed to La Jolla for my two post-op appointments. ( I can work out again! My hand still needs a couple of weeks but I can do cardio, core and legs.)

I made this breakfast before racing out of the house: 2 eggs, sriarcha, and a brown rice tortilla

(Ate it cold, out of the car, in between doc appointments. #glamorous. There’s no way I was going to try to drive with an injured hand and eat at the same time. That’s a great way to be a hazard haha.)

When I got home, P was waking up from her nap, so I quickly ate this almond butter banana,

and after feeding Miss P, I made a quick protein smoothie before we headed out to pick up Liv.

(1 scoop vegan chocolate Shakeology, 1 scoop goat milk whey <— tastes horrible so I camouflage it with Shakeo, chocolate donut seasoning, almond milk, 1 tablespoon chia seeds, ice)

We all played in Livi’s room during the afternoon, reading books and singing silly songs before it was time for P’s last nap. Since I knew the Pilot was working late, and that it would be busy with Liv’s swim lesson, I had two choices for dinner: make something now, or get takeout. I’m kind of takeout-ed out from our Tucson trip and from recovering from surgery last week. I often feel like we can make the same things at home for less $$, and we had a fridge full of food, so no excuses. 

Also, since it was just Liv and myself: soup for the win.

(The Pilot will eat soup for dinner, but I always feel like it’s not enough of a “meal” for him. Especially since he usually has a giant bowl of cereal like 20 seconds later haha.)

It only needed to cook for a couple of hours since we were just headed to swim lessons and back, and it actually worked out wonderfully.

1 diced sweet onion, 4 peeled and chopped carrots, 3 cloves garlic, cherry tomatoes, 1 bell pepper, sliced mushrooms, thyme, oregano, basil, salt and pepper:

Topped with chicken that I completely cooked on the stovetop with salt, pepper, garlic, oregano and balsamic.

I poured in a carton of veggie broth, and set it to high for 2 hours.

While I was putting everything together, I made more of an official “lunch.” 

Greens, guacamole, and a leftover sweet potato black bean burger (this recipe was AWESOME):

When we got back from swim it was so nice to be able to feed P, give Livi her bath, and know that dinner was waiting for us. It ended up being cooked perfectly. I loved that the veggies were still bright and slightly crisp; especially the mushrooms. They tend to shrink and get a bit mushy in the slow cooker.

I served Liv’s on top of brown rice with a side of strawberries and avocado, and for mine, I topped it with feta and a squeeze of lemon juice.

Dessert:

handful of chocolate chips in between putting Liv to bed (unpictured because I had no way to take it without seeing my Frankenthumb medical tape, and you might be eating breakfast or something while reading this)

wine + watching Monday’s episode of The Voice. 🙂

What was good about this day of eats:

-I was pretty happy with the amount of protein and produce in my day despite the fact that it felt like each meal was fast and furious, except for dinner. It was nice to sit at the table with Liv (Miss P had crashed already) and enjoy our meal together.

-I made dinner, even when I could have taken the easy route and ordered some takeout. Liv and I both loved the soup aaaaand I have leftovers for lunch today. 

What could have been better:

-I could have done a little bit better on the breakfast planning, or at least taken a yogurt or some fruit with me on the El Cajon field trip. My first meal didn’t end up happening until about 10:45, and I was hangry by the time I got a chance to eat.

    Good job on making dinner instead of getting takeout..especially with one functioning thumb lol.

    I made your “best pasta salad ever” recipe for dinner last night. I added kalamata olives and lots of garlic to it, and it was delicious 🙂

      that was another excuse i could have used haha. chopping was terrible, but it was so nice to have real homemade food!
      so glad you enjoyed the pasta salad ! one of my all-time faves 🙂

    Great post! although my question is not about your food!…. Can you tell me about your collagen supplements? I have been thinking about starting them for skin and my joints but I’m always a bit leery. Thanks!!

    Best thing I ate yesterday was definitely peanut butter in my oats and peanut butter with an apple and cinnamon for dessert, otherwise my meals were kind of a mish mosh of leftover stuff. Your soup looks delicious – I think I went an entire semester of grad school living off of lentil soup and bananas so whatever gets the job done is a win in my book.

    Yesterday I was feeling funky and didn’t want to eat much other than breakfast foods so I had breakfast for every meal and fried up some plantains for dinner.

    That soup looks amazing! My mini vacation ends today, so I completely understand feeling takeout-ed. Although I did have an amazing turkey pesto panini and chocolate chunk cookie from Kneaders yesterday 🙂
    Also what is your collagen and aloe routine? I’m considering trying out collagen and am interested in what kind you use? Thanks 🙂 hope you have a beautiful day!

      i still haven’t been to kneaders! my nana loves their french toast 🙂
      i can link to it in friday faves (i’m not home right now and don’t know the brand off hand). i have 2 tablespoons of collagen each day and 4 tablespoons aloe concentrate

    It is just the best feeling to walk in the door and dinner is made! Your soup looks fabulous. Soup is such an awesome meal. Best thing I ate yesterday was a big green salad with lots of veggies!

      i found him through a friend years ago. his name is dr flynn (i linked to him above) and he is wonderful. he helped me a lot when we were having difficulty getting pregnant with liv

    The fact that you ate breakfast at all while wrangling two kids is impressive … I often find myself eating “breakfast” at noon after already being up all morning with my 3 month old. Trying to be better by prepping the night before so I can just grab it out of the fridge and eat with one hand while feeding her.

      oh, i didn’t haha. i didn’t get to eat that egg plate until about 10:45. i usually don’t have a chance to make and eat breakfast until liv is dropped off and i’m back home with p, sometimes during her first nap. this is why make ahead breakfasts are so awesome 🙂

    I always love your WIAW posts, Gina!! Fast and furious definitely describes a majority of my meals, too. 😉

    My fave food yesterday was a quick blender pudding of 1/2 an avo, 3/4 of a frozen banana, 1 T cacao powder, stevia, and a spash of almond milk. So, so good!! 🙂

    So curious, what are livs preschool hours and how do you juggle nap schedules for pick up? I find that is one of my biggest struggles with two kiddos. Interested to hear your thoughts!

      i pick liv up at 2:45. sometimes i have to wake p up to pick up liv, which is a bummer but thankfully p doesn’t get super cranky when that happens. once she had just fallen asleep and hadn’t slept all day, so betsy picked her up with her boys for me since she has an extra carseat in her car. it was amazing
      and yes, juggling naps is hard!

    Crockpot meals have for sure become a staple for me! I love how easy they are and the slow cooking of the food I would not complain about!
