A scaly friend

We have a few.. creaturesโ€ฆ in the backyardโ€ฆ.

Check out this guy!

lizard

Heโ€™s been chilling under one of our patio tables all day.

Itโ€™s funny because when we first moved in, the Pilot saw that we had quite a few HUGE lizards in our backyard and texted my brother saying โ€œweโ€™ve been infested with Gila Monsters.โ€

Not a Gila Monster โ€“heโ€™s still learning Arizona, haha- but still majorly creepyโ€ฆ mostly because itโ€™s a dinosaur cousin.

I was a mover and a shaker today. Got quite a few things ninja-kicked off the list, ran all over Tucson for errands, and munched some a la purse snacks along the way:

larabar and dulse

Iโ€™ve always loveloved dulse, and actually looked at the nutrition stats today. 1 serving has 38 calories and 3g of protein- baller ๐Ÿ˜€

For lunch I wanted something cold and refreshing, so I made a salad based off one my cheffer brother made at work yesterday.

salad

In the mix:

-greens (a combo of kale, swiss chard, arugula and spinach)

-organic strawberries

-goat cheese

-lemon vinaigrette (lemon juice, olive oil, garlic, sea salt, pepper, a little honey)

-fresh mint

WOW.

salad (2)

A super summery salad beast ๐Ÿ™‚

Dinner is slow-cooking away for tonightโ€ฆ our house smells like a giant foodgasm. Any guesses as to whatโ€™s in there? Itโ€™s a standard slow cooker meal over here ๐Ÿ™‚

slow cooker

I also may have embraced the slow cooker when we unpacked it yesterday- scarily stoked for someone else to cook dinner ๐Ÿ˜‰

Off to pump some iron!

See ya in the morning <3

xoxo

Something to talk about: Now that Iโ€™ve been reunited with my slow cooker, do you have any fave slow cooker recipes to share? Feel free to link away! It will be an awesome dinner option when weโ€™re both at work all day- we can come home and dinner will be served ๐Ÿ™‚

Something to think:

โ€œWe tend to forget that happiness doesn’t come as a result of getting something we don’t have, but rather of recognizing and appreciating what we do have.โ€

I can’t believe those lizards are just a normal sight in your backyard! All we have here are boring old squirrels. ๐Ÿ˜›

Love that salad. Strawberries and goat cheese are amazing together!

What a large lizard to have under your table! Did he want some tasty salad?

Love slow cookers! I was wondering if you had any vegan slow cooker recipes. I only have one fall back, a vegan chili, but I am hoping to find more for the cold New England winter that will be here in a few months.

Holy crap that lizard is huge. Do those seriously just walk around Arizona backyards? That sorta makes me second guess my decision to move to Arizona in January!

If I lived there, I’d never accomplish anything except chasing lizards. I’m 100% serious too.
