Put It On a Chip

Hey guys! ๐Ÿ™‚ Happy Saturday. So sorry for disappearing on ya yesterday! It ended up being a crazy day with work and we had dinner plans with some friends.

In between appointments, I snacked on some of my beloved millet bread:

And picked up Bella from the groomerโ€™s.

After work, I came back to the casa and made some raw guacamole to take over to Ashleyโ€™s, with some of my favorite brown rice chips

The guac had 6 avocados, juice of 2 lemons, red onion, tomato, cumin, chili powder, cayenne, garlic powder, sea salt and pepper. I wrapped it in Saran Wrap using the Tyler Florence trick—- if you press the plastic wrap directly onto the guacamole and get the air bubbles out, this keeps oxygen from getting in which helps the guac retain its lovely green color.

Dinner at Ashleyโ€™s was glorious ๐Ÿ˜€

Check out their GIANT great dane! His name is Dozer, and heโ€™s the size of a small dinosaur.

(They also have a smaller Great Dane, Daisy, who is a sweetheart, but I didnโ€™t get a pic of her)

For dinner, Ashley made shrimp taco fixings (lettuce, tomato, avocado, salsa, brown rice, black beans and spicy shrimp with tortillas), so I made a shrimp salad with a little bit of everything.

I also ate my weight in brown rice chips and drank a couple glasses of Riesling. It was good to have a little bit of a treat night (even though no sweets were involvedโ€ฆ Iโ€™ve been good so far, but Lent is killing me).

The guys made a bonfire outside and chilled by the fire, while the girls and I stayed inside, drank wine, and planned a girlsโ€™ vacay ๐Ÿ™‚

So we went back in, chilled for a while longer and then came home. It was quite a blasty ๐Ÿ˜€

After sleeping in, Iโ€™m ready to make some bfast and start the day. I have a nutrition consultation at the gym, and then am making some vegan cornbread for Tinkerbell (one of my clients). Thereโ€™s word that the pilot wants to grill tonight ๐Ÿ˜‰

      on saturdays, i sleep until i wake up.. no alarm ๐Ÿ™‚ today it was 10:30.

    Another great trick for guac is to leave the pit in the bowl with the guac. Take it out when you’re ready to serve, but during transport/chilling it will help it stay nice & green!

    I wish i had your “freezing” weather haha, theres not a foot of snow on the ground! Jealous!
    Sleepin in is so nice sometimes.(i dont get to enjoy it much with a 4am wake up) I enjoyed it today, got a Zumba workshop right away! Weee, i’m excited.

    yum! love guac ๐Ÿ™‚ I hear ya on the freezin’ weather – I’m in Tampa and we’ve been hit with it too. My soon-to-be hubby (next Saturday is the big day!!!) made me raw pancakes for breakfast this morning and we’re just chilling inside with our new puppy avoiding the big chill outside. Love Saturdays!

    Your dinner looks great!! Is there a difference between raw and regular guac? I want to start including more raw foods in my diet but I keep finding that certain things I think are raw actually aren’t. Your blog helps with that alot!! Thank you!!

    Mmm guac and wine. Can’t go wrong! That is a great keep-the-guac-green trick. Another way to keep avocados from browning is to leave the pit in there. After I make guac, I throw a few pits in to keep it green!

    Just wondering.. but isn’t guacamole always raw? You specified ‘raw’, is there a difference?

      yeah, guacamole can often have dairy in it, which would rob it of the rawness ๐Ÿ™‚

    I need to try those chips. I love chips and dip. (It used to be salsa, but over the past month I’ve come to love guac as long as it’s homemade.) That saran wrap trick is great!

    I LOOOOOOVE guac!!! Bethenny Frankel has a recipe for “Mock-a-mole” that mixes in green peas into the guac. I’m gonna try that for our next taco/margarita night!

    Ah! Bella is absolutely adorable! <3 And I'm loving your friend's Great Dane. Love the breed and think it would be so neat to have one.. although I heard it takes a lot of food to fill them.. haha.

    I've actually never tried guacamole. Mainly because I use to really dislike avocados. However, since I now love those beautiful things, I'm thinking it's about time I try guacamole.

    Just came across your blog and it is AWESOME! I have so many ideas now for wonderful recipes! A few questions:

    1) How do you make your egg puffs? I can’t seem to find the recipes anywhere!
    2) I see that you use kelp noodles sometimes. I use shirataki noodles which are also a good substitute for pasta. I have never tried kelp noodles though. What are your thoughts about the differences between them? Do you think one is more nutritionally whole than the other?
    3) What are your thoughts on powdered peanut butter like Fitz Nuts (significantly lower in calories)–do you think its best to just go with the real deal?
    4) As someone who is so healthy and health conscious, what are your thoughts on birth control? I too am a bit of a health nut and worry about the concept of putting “artificial hormones” into my system. Obviously though, if you have a significant other, protection is crucial. Do you think some birth controls are more “healthy” than others, just as certain food are healthier than others?

    Sorry for a strange mix of questions, but anything you’d be willing to answer/consider would be much appreciated! Thank you!

      hey samantha! welcome to the little bloggy ๐Ÿ™‚
      1) just spray a glass bowl with nonstick spray, add the eggs and whisk, microwave 1-2 minutes
      2) i’ve actually never used shirataki noodles– are they made of rice?? if so, then yes, kelp is a better substitute but they’re both a great choice ๐Ÿ™‚ kelp noodles only contain kelp! that’s it
      3) i’ve also never tried powdered peanut butter, but i don’t see any prob with using it ๐Ÿ™‚
      4) i actually stopped taking birth control about 6 months ago. you can read why, and what everyone had to say about it on this post: http://fitnessista.com/?p=3351#comments

    aw, baby Bella!!! what a sweet baby…although, i gotta say I love huge dogs (my baby boy is 100 lbs…more than the average elementary aged kiddo!) and Dozer looks like my kinda guy ๐Ÿ™‚ that shrimp salad does look awesome, i was just thinking Mexican food sounds face-rockin’ this week!

    p.s. i gave up meat for Lent, and it’s just getting harder and harder every day!

    Hey Gina…

    You are such an inspiration! I have been reading your blog for jut a couple of months, and while I have always gravitated towards healthier foods, since reading your blog, I have been inspired to go raw for at least one meal a day, and mostly all raw one day a week or so. It feels so good!
    Also, your energy level is seriously awe inspiring!
    I know that putting yourself out on the internet can make you vulnerable to meanies out there (you have shared some of the rude comments) but I want to thank you for putting so much of yourself out there to share with us.     Thank goodness – I’m not the only one who ate my weight in healthy chips on Saturday! LOL! Although the husband and I went out for a very indulgent lunch/dinner, too, so it was definitely back to healthy foods pronto on Sunday morning!

    I was even inspired to dig out my juicer after such a night!
